This is an old Southern biscuits and gravy recipe that I've adapted. Homemade sausage gravy is a classic, hearty breakfast that takes you on a trip to the South every time it's served. -Sue Baker, Jonesboro, Arkansas

Number Of Ingredients 7

1/4 pound bulk pork sausage
2 tablespoons butter
2 to 3 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/4 to 1-1/3 cups whole milk
Warm biscuits

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink, 3-5 minutes, breaking into crumbles; drain. Add butter and heat until melted. Add the flour, salt and pepper; cook and stir until blended. Gradually add the milk, stirring constantly. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with biscuits.

Number Of Ingredients 7

2 c carbquick baking mix
2/3 c water
1 lb breakfast sausage
4-6 Tbsp carbquick baking mix
1 1/2 c half and half
salt and pepper, to taste
baking spray

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a bowl, add the dry ingredients and then start adding the water mixing as you go. Now keep mixing to bring the dough together. It should be a little sticky, but smooth and all the water is absorbed.
  • 3. With a pair of spoons, drop chunks of dough on to a sheet pan sprayed with baking spray and place in oven for 10-12 minutes
  • 4. In large skillet, over medium-high heat, cook and crumble sausage to lightly brown, removing fat from pan as it accumulates.
  • 5. Sprinkle Carbquik over sausage in skillet, stir to blend, add half & half to pan all at once. Cook, stirring constantly over medium-high heat until thickened and bubbly.
  • 6. Season to taste with salt and pepper.
  • 7. Serve over hot baked Carbquik® biscuits.

4 ounces uncooked bulk turkey breakfast sausage
1 tablespoon butter
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
1/8 teaspoon salt
1 1/2 cups nonfat milk
4 cheddar biscuits (Cheddar Biscuits from Diabetic Living)
fresh sage leaf (optional)

Steps:

  • In a medium saucepan cook sausage over medium heat until browned, using a wooden spoon to break up meat as it cooks. Add butter to saucepan. Stir until butter is melted. Stir in flour, 1/4 teaspoon black pepper and 1/8 teaspoon salt. Cook and stir 1 minute. Whisk in milk. cook and stir until thickened. Cook and stir 1 minute more.
  • Split each Cheddar Biscuit. Serve sausage mixture over split biscuits. If desired, garnish with fresh sage.
  • 4 Servings: 1/2 cup gravy and 1 biscuit each.

Always looking for foods that are kid friendly and add variety to breakfast meals. This is great with pancakes, (yep- pancakes), Spelt Biscuits, Rice, Potatoes, and even Tofu.

Number Of Ingredients 10

1 lb ground sausage
1/3 cup flour
2 tablespoons butter
1 teaspoon salt
1 teaspoon garlic
1 teaspoon parsley
1 teaspoon onion flakes or 1 teaspoon onion powder
1 cup milk
1 cup heavy cream
pepper, to taste if there is no kids*

Steps:

  • In large skillet or fry pan on medium heat, cook sausage until brown. Do not strain.
  • Sprinkle flour evenly over cooked sausage.
  • Add butter and stir until melted.
  • Flour should be incorporated into all the meat.
  • Sprinkle garlic, parsley, onion over meat and stir well.(*pepper at this point).
  • Turn up to medium high
  • Pour in milk and cream and slowly stir until it starts boiling.
  • Cook for 5 minutes. Remove from heat.
  • Gravy will be somewhat thick and will thicken up a little more once removed from heat.

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons cold butter, cut into pieces
2 tablespoons plain fat-free Greek yogurt
1 tablespoon canola oil
1/4 cup reduced-fat shredded cheddar cheese
2/3 cup nonfat milk

Steps:

  • Preheat oven to 425°F In a large bowl stir together flour, baking powder and 1/4 teaspoon salt. Using a pastry blender or two knives, cut in butter pieces, yogurt and oil until mixture resembles coarse crumbs. Stir in cheese, Make a well in the center of the flour mixture. Add milk all at once. Using a fork, stir just until moistened.
  • Turn out dough onto a lightly floured surface. Knead dough by folding and gently pressing it just until dough holds together. Pat dough into an 8-1/2 x 4-1/2 inch rectangle. Cut dough lengthwise in half. Cut each half crosswise into four biscuits to make eight biscuits total. Place biscuits 1 inch apart on an ungreased baking sheet.
  • Bake about 14 minutes or until golden brown. Serve warm.
  • To Store: Place any remaining biscuits in an airtight container. Cover and store up to 2 days or freeze up to 2 months.
