LAYERED HAM AND CHEESE BISCUITS



Layered Ham and Cheese Biscuits image

These fluffy buttermilk biscuits have melty Cheddar pulsed into the dough, and then more cheese as well as black forest ham are layered inside, so the flavors and textures run through and through. Serve them warm on their own, or add a shmear of honey butter and jam for a delightful brunch dish.

Yield 12 biscuits

Number Of Ingredients 8

2 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
2 tablespoons baking powder
1 tablespoon sugar
1 1/2 teaspoons kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into cubes
1 cup shredded mild Cheddar
1 cup buttermilk, plus more for brushing
2 thin slices black forest ham, roughly chopped (about 2 ounces)

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment.
  • Pulse the flour, baking powder, sugar and salt in a food processor until combined. Add the butter and 1/2 cup of the Cheddar and pulse until the mixture looks like coarse meal with pea-size bits of butter remaining. Add the buttermilk and pulse a few times, until the dough just comes together.
  • Turn the dough out onto a work surface that's lightly dusted with flour, then pat into a 7-by-7-inch square that's about 1 inch thick. Scatter half of the ham and 1/4 cup of the Cheddar on half of the dough, then fold the other half of dough over like a book; gently pinch the edges to seal. Pat the dough out again into a 7-by-7-inch square, scatter the remaining ham and 1/4 cup of cheese on top and fold the dough over like a book. Press once more into a 7-by-7-inch square.
  • Use a sharp chef's knife to cut the dough into 12 even rectangular pieces. Transfer to the prepared baking sheet and brush the tops of each piece with additional buttermilk. Bake until the biscuits are puffed and well browned, 18 to 20 minutes.

Easy Cream Biscuits with Ham and Egg Sauce image

1 cup(s) bisquick baking mix
1/3 cup(s) heavy cream (may need a bit more)
3 tablespoon(s) butter, unsalted
1 tablespoon(s) minced yellow onion
1 clove(s) garlic, minced
3 tablespoon(s) all purpose flour
1/2 cup(s) chicken broth
1 cup(s) heavy cream
1 tablespoon(s) minced chives
2 - hard boiled eggs, peeled and chopped
1 cup(s) diced cooked ham
- salt and pepper, to taste
8 stalk(s) asparagus
- water

Steps:

  • Preheat oven to 450F.
  • Mix Bisquick and 1/3 cup cream in a bowl with a fork, until you get a sticky dough (you may need a bit more cream).
  • Place dough on a floured bowl and roll out a large enough circle to get four 3-inch biscuits. (about 1/2" thick).
  • Bake 10 minutes; remove from oven and set aside on wire rack.
  • In a large saucepan, melt butter over medium heat and saute onion and garlic until soft, about 10 minutes. Do not let onion brown.
  • Whisk in flour until bubbly. Whisk in broth and cream, and cook until it begins to thicken. (If you want a thinner sauce, add more cream).
  • Stir in chives, ham and eggs and cook until hot. Season with salt and pepper, to taste.
  • Bring enough water to a boil in a skillet to cover asparagus. Add asparagus and cook until just tender; about 3-5 minutes. Drain.
  • Put 2 biscuits on each plate. Lay 4 stalks of asparagus over biscuits and top with ham and egg sauce. Serve with fresh fruit slices on side, if desired.

¼ cup chopped green pepper
3 tablespoons chopped onion
2 tablespoons butter or margarine
3 tablespoons all-purpose flour
1 ¾ cups milk
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
2 cups cubed fully cooked ham
1 tablespoon lemon juice
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
2 tablespoons shortening
¾ cup shredded Cheddar cheese
⅓ cup milk
1 teaspoon diced pimientos

Steps:

  • In a large skillet, saute green pepper and onion in butter until tender. Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Whisk in soup until blended. Stir in the ham and lemon juice; heat through. Pour into a greased 9-in. square baking dish. Bake, uncovered, at 375 degrees F for 10 minutes.
  • Meanwhile, in a large bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Stir in cheese, milk and pimientos just until moistened. Turn onto a lightly floured surface; knead gently 4-5 times. Roll to about 1/2-in. thickness; cut out six biscuits with a 2-1/2-in. biscuit cutter. Arrange biscuits over ham mixture. Bake 18-22 minutes longer or until biscuits are golden brown. Serve in individual dishes.

2 green onions, chopped

Steps:

  • Preheat oven to 450°. In a large bowl, whisk the first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in ham and green onions. Add milk; stir just until moistened., Turn dough onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. 1 cup all-purpose flour
2 teaspoons sugar
1-1/8 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt

1/2 cup 4% cottage cheese
1 egg
3 tablespoons milk
8 teaspoons butter, softened
1/2 pound sliced deli ham

Steps:

  • Preheat oven to 450°. In a small bowl, combine flour, sugar, baking powder, baking soda and salt; cut in cold butter until mixture resembles coarse crumbs. In a small bowl, beat cottage cheese 2 minutes. Beat in egg and milk until blended. Stir into crumb mixture just until moistened. , Turn onto a lightly floured surface; knead 8-10 times. Pat or roll out to 1/2-in. thickness; cut out eight biscuits with a floured 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake 8-12 minutes or until golden brown. Split biscuits in half; spread with softened butter. Place ham on biscuit bottoms; replace tops.
