CHICKPEA "COOKIE DOUGH"
No one will ever guess that this "cookie dough" is made with a can of chickpeas! Eat as-is or roll into balls and freeze. You can add raisins, M&M's®, peanut butter chips, then roll them in coconut, powdered sugar, or cocoa. I added chocolate chips and chopped peanuts but the choices are endless.

- Open a can of chickpea, drain and measure 1 1/8 cup (or weight 200g/7 oz), which is usually what you get for a regular 400g/14 oz can of chickpea.
- Place the chickpea on a clean towel and place another towel on top. Massage to dry the chickpea and loosen the chickpea skin.
- Peel off the skin of each chickpea, it is time-consuming but believe me, it makes the cookie dough way better. Simply squeeze each chickpea between your thumb and index to easily peel off the skin. Discard all skin.

- Drain and rinse the chickpeas. Place them on a clean dish towel and use another clean dish towel to rub gently on top to remove some of the skins. Remove them with your fingers and discard (this should only take about 1 minute; don’t feel the need to remove them all).
- Add the chickpeas to a food processor with the butter or coconut oil. Process until combined. Add the kosher salt, vanilla, maple syrup, brown sugar and almond flour. Process a few seconds until a dough forms.
- Stir in the chocolate chips. Store refrigerated for 3 to 4 days for best flavor (it doesn’t freeze well).
