MANGO CHICKEN KABOBS



Mango Chicken Kabobs image

Marinated chicken is grilled on skewers with pieces of juicy mango. Serve with a mango chutney or plain. Great for summery appetizers. Enjoy!

¼ cup olive oil
2 teaspoons minced fresh ginger root
1 teaspoon lemon juice
1 teaspoon orange juice
1 teaspoon brown sugar
1 pinch white sugar
4 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
3 mangos - peeled, seeded, and diced
skewers

Steps:

  • In a shallow container, mix the olive oil, ginger root, lemon juice, orange juice, brown sugar, and white sugar. Place the chicken breasts in the mixture, and marinate at least 30 minutes in the refrigerator.
  • Preheat the grill for high heat. Season chicken with salt, and alternately thread chicken and mango onto skewers. Discard marinade.
  • Lightly oil the grill grate. Place skewers on the grill, and cook 15 minutes, turning to cook on all sides, until chicken juices run clear.

1/4 cup mango chutney
1 tablespoon water
1 tablespoon cider vinegar
1 teaspoon curry powder
1/4 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 1/4-inch strips
CHUTNEY SAUCE:
1/2 cup plain yogurt
3 tablespoons mango chutney
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper

Steps:

  • In a large shallow dish, combine the first 5 ingredients. Add the beef; turn to coat. Refrigerate, covered, overnight., In a small bowl, combine the sauce ingredients. Cover and refrigerate until serving., Drain beef, discarding marinade. Thread beef onto 8 metal or soaked wooden skewers., On a lightly oiled grill rack, grill kabobs, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes or until meat reaches desired doneness, turning occasionally. Serve with sauce.

MANGO CHUTNEY
1 1/2 cups chopped mangos
1 clove garlic
1/4 cup chopped red onion
1/4 cup chopped green bell pepper
1/4 cup chopped sweet red bell pepper
1/4 cup lime juice
2 teaspoons chopped fresh cilantro
1/4 cup sugar
1/4 teaspoon salt
KABOBS
1 (20-ounce) can Worthington® Loma Linda® low fat, big veggie frank
1 cup pineapple chunks
1 green bell pepper cut into 3/4-inch chunks
1 sweet red bell pepper cut into 3/4-inch chunks
1 tablespoon soy sauce
4 cups cooked brown rice
8 wooden or metal skewers

Steps:

  • MANGO CHUTNEY: Combine all ingredients in food processor or blender. Blend until slightly chopped. Do not puree. Refrigerate until ready to serve.KABOBS: Cut Big Franks into bite-size pieces. On each skewer, thread Big Frank piece, pineapple and peppers. Sprinkle soy sauce evenly over Kabobs. Grill or broil until lightly browned and heated through. Serve over cooked rice with Mango Chutney.
