GERMAN SAUSAGE AND CABBAGE SOUP

Make a hearty sausage soup in about 30 minutes, just right for mopping up with crusty dark bread.

1 tablespoon butter or margarine
3 cups coleslaw mix (from 16-oz bag)
1 medium onion, coarsely chopped (1/2 cup)
1 stalk celery, sliced (1/2 cup)
1/2 teaspoon caraway seed
3/4 lb cooked kielbasa, quartered lengthwise, then cut into 1/2-inch slices
3 cups frozen southern-style diced hash brown potatoes (from 32-oz bag)
3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
1/4 teaspoon coarse ground black pepper

Steps:

  • In large saucepan or Dutch oven, melt butter over medium heat. Cook coleslaw mix, onion, celery and caraway seed in butter 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender.
  • Stir in remaining ingredients. Heat to boiling; reduce heat. Cover; simmer 5 to 10 minutes, stirring occasionally, until potatoes are tender and soup is thoroughly heated.

A thick, creamy and fragrant German soup filled with bacon, sausages and vegetables. This is a meal in a bowl! Don't add the sausages too early as they'll become leathery. This soup has been a favourite of my children's for years and is my version of the soup from my favourite German restaurant on the sunshine coast of Queensland.

1 tablespoon(s) butter
1 large onion, diced
2 large carrots, diced small
3 celery stalks, diced small
1/2 pound(s) bacon, diced
5 - 6 potatoes, peeled and diced medium-sized
1 teaspoon(s) fennel seed
1 teaspoon dried marjoram
8 - 10 juniper berries
12 cups water
2 teaspoon(s) beef bouillon
4 dried bay leaves
1 pound continental frankfurts, sliced into thin coins
Salt to taste
1/2 teaspoon(s) cracked pepper
1 cup(s) cream

Steps:

  • In a large heavy based saucepan, heat the butter until melted over a medium high heat. Fry the onions until translucent. Add the carrots, celery and bacon. Fry for 3 - 5 minutes, stirring constantly. Add the fennel seeds and marjoram, fry until fragrant - about 30 to 60 seconds.
  • Add the water, potatoes, bay leaves, juniper berries, bullion, salt, and pepper. Reduce heat to low and simmer for 30 minutes. Stir every now and then.
  • Add the sliced sausages and simmer for another 5 - 10 minutes. Turn off the heat and add the cream. Stir through and serve.
  • Try to remove the juniper berries and bay leaves when fishing into bowls.

Packed with vegetables and sausages, this classic Bavarian-style potato soup is more of a main dish than a starter. In Germany the sausage of choice would be Regensburg sausage, a short and stubby parboiled pork sausage. It can be substituted with other boiling sausages made of pork.

2 links pork sausage
3 tablespoons vegetable oil, or to taste
4 pounds potatoes, peeled and cubed
4 carrots, cubed
2 onions, finely chopped
1 leek, trimmed and cubed
3 scallions, chopped
3 cloves garlic, chopped
1 cube vegetable bouillon
6 cups hot water
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
1 pinch dried marjoram, or to taste
1 pinch sweet paprika, or to taste
1 pinch ground nutmeg, or to taste
1 bunch fresh parsley, chopped
1 bunch fresh chives, chopped
¼ cup sour cream

Steps:

  • Place sausages in a small pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until no longer pink in the center, 10 to 15 minutes. Drain. Cut into slices.
  • Heat oil in a large pot over medium heat. Cook potatoes in the hot oil, stirring often, until they start to crisp on the edges, about 8 minutes. Stir in carrots, onions, leek, scallions, and garlic.
  • Dissolve vegetable bouillon in hot water; pour into the pot. Season soup with salt, black pepper, marjoram, paprika, and nutmeg. Bring to a boil; reduce the heat and cook, covered, until carrots are tender, about 30 minutes.
  • Stir sausage slices, parsley, and chives into the soup. Simmer until flavors combine, about 5 minutes. Stir in sour cream just before serving.

1 bag (28 oz) frozen potatoes O'Brien with onions and peppers, thawed
1 can (14 oz) sauerkraut, drained, rinsed
1 can (10 3/4 oz) condensed cream of potato soup
1 1/3 cups half-and-half
Paprika
1 lb cooked kielbasa or Polish sausage, cut into 6 pieces

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, mix potatoes and sauerkraut.
  • In medium bowl, mix soup and half-and-half. Stir soup mixture into potato mixture; mix well. Sprinkle with paprika.
  • Bake 20 minutes. Arrange sausage pieces over potato mixture, pressing lightly into mixture. Bake 25 to 30 minutes longer.

1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth
1 cup heavy whipping cream
1 stalk celery, diced, or more to taste
2 cubes chicken bouillon
1 tablespoon minced garlic

It has a brothy tomato base that's loaded with rich Italian sausage, sweet carrots, caramely onions, tender cannellini beans, silky spinach and just the right amount of pasta. Top it off with a handful of garlicky butter-toasted Progresso™ bread crumbs and a handful of Parmesan, and you've got dinner. Extra credit if you serve it alongside a green salad and loaf of crusty bread.

1 cup chopped onions
1 large carrot, peeled, cut into quarters lengthwise and into 1/4-inch slices (about 1 cup)

Steps:

  • Heat 5-quart Dutch oven over medium-high heat. Add sausage, onions and carrot; cook 8 to 10 minutes, stirring occasionally to break up sausage, until sausage is no longer pink. Stir in garlic and pepper flakes; cook 1 to 2 minutes or until garlic is fragrant.
  • Stir in broth, beans, tomatoes, oregano and bay leaf. Heat to boiling; reduce heat to medium-low, and simmer uncovered 10 minutes. Add pasta; simmer 8 to 9 minutes or until pasta is tender. Remove bay leaf, and discard.

  • Divide soup among serving bowls; garnish each with cheese and toasted bread crumbs.

My husband and I first enjoyed this soup on a tour of Bavaria. When I asked for the recipe, it was delivered to our table, written in English-but with no amounts for any of the ingredients! After a few trials, I got it "right" and forwarded the recipe to several of the people that were in our tour group.

1/2 pound bacon, diced
2-1/2 pounds potatoes, peeled and cut into 1/2-inch cubes
2 large carrots, finely chopped

1/4 teaspoon pepper
Chopped fresh parsley, optional

Steps:

6 slices bacon, cut into 1-inch pieces
1 medium stalk celery, finely chopped (1/2 cup)
1/4 cup chopped onion
3 medium potatoes, peeled, chopped (3 cups)

1/2 cup water
1/2 teaspoon caraway seed
4 (1/2-inch-thick) slices pumpernickel bread
4 oz. (1 cup) shredded Swiss cheese

Steps:

  • Cook bacon in Dutch oven over medium heat until crisp. Remove bacon from Dutch oven, reserving drippings; drain bacon on paper towels. Set aside.
  • To bacon drippings in Dutch oven, add celery and onion. Cook over medium-high heat for 3 to 4 minutes or until tender, stirring frequently. Drain.
  • Add potatoes, broth, water, caraway seed and cooked bacon. Bring to a boil. Reduce heat; cover and simmer 6 to 8 minutes or until potatoes are tender, stirring occasionally.
  • Meanwhile, place bread slices on ungreased cookie sheet. Broil 3 to 5 inches from heat for 2 to 4 minutes or until toasted, turning once. Sprinkle each slice with about 1/4 cup cheese. Broil an additional 1 to 3 minutes or until cheese is bubbly.
  • To serve, ladle soup into individual soup bowls. Top each with 1 cheese-topped bread slice.
