Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

This fruit salsa is a tasty condiment to be served with cakes or dinner.

4 red grapefruit (4 lb)
4 navel oranges (3 lb)
1 cup pomegranate seeds
1/2 cup flaked coconut, toasted
2 tablespoons chopped crystallized ginger
2 tablespoons fresh lime juice
2 tablespoons light agave nectar or honey

Steps:

  • Peel grapefruit and oranges down to flesh, leaving no white pith. With sharp knife and between walls of membrane, cut segments straight down. Gently remove sections, reserving 1/4 cup grapefruit and orange juice combined. Chop sectioned fruit.
  • In large bowl, mix chopped orange and grapefruit, reserved juices, pomegranate seeds, coconut, ginger, lime juice and agave nectar. Serve immediately or refrigerate until serving time.

2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter or margarine, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups quick-cooking oats
1 teaspoon grated orange peel
1 cup chopped dates
1 cup golden raisins
1 cup flaked coconut
1 cup chopped pecans

Steps:

  • Heat oven to 375°F. Spray cookie sheets with cooking spray.
  • In medium bowl, mix flour, baking powder, baking soda and salt; set aside. In large bowl, beat butter with electric mixer on medium speed until creamy. Gradually add granulated sugar and brown sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in vanilla. On low speed, gradually beat in flour mixture just until blended.
  • Stir in oats, orange peel, dates, raisins, coconut and pecans. Onto cookie sheets, drop dough by teaspoonfuls 2 inches apart.
  • Bake 8 to 10 minutes. Remove from cookie sheets to cooling racks.

1 cup fresh strawberries, sliced

Steps:

  • In medium bowl, mix pudding and whipped topping.
  • Gently stir in grapes, marshmallows, oranges and pineapple. Add strawberries; toss gently to coat. Serve immediately or store in refrigerator up to 8 hours.

1 box Betty Crocker™ Super Moist™ white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1 container Betty Crocker™ Whipped fluffy white frosting
1/2 cup flaked coconut
1/4 cup sugar
2 teaspoons cornstarch
1/3 cup water
1 teaspoon grated orange peel
2 teaspoons orange juice
2 tablespoons flaked coconut

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch round pans.
  • To make orange-coconut filling, in small microwavable bowl, mix sugar and cornstarch. Gradually stir in 1/3 cup water. Stir in orange peel and orange juice. Microwave uncovered on High about 1 minute or until mixture thickens and boils; stir. Microwave 30 seconds longer, stirring every 15 seconds. Stir in 2 tablespoons coconut; cool.
  • Fill cake layers with orange-coconut filling. Frost side and top of cake with frosting. Sprinkle 1/2 cup coconut over top. Store loosely covered.

From Betty's Soul Food Collection... What a sweet deal! A parfait that's ready in 10 minutes and delivers healthy ingredients-like fat-free yogurt, pineapple, banana, oranges and strawberries.

3 containers (6 oz each) Yoplait® Original yogurt French vanilla
1 can (8 oz) crushed pineapple in juice, drained
2 cups Honey Nut Cheerios™ cereal
1 medium banana, sliced (1 cup)
1 can (11 oz) mandarin orange segments in light syrup, drained
1/4 cup flaked coconut, toasted
4 fresh strawberries, sliced

Steps:

  • In medium bowl, mix yogurt and pineapple. Into each of 4 parfait glasses, place 1/4 cup of the cereal.
  • Spoon 2 tablespoons yogurt mixture on top of cereal in each glass. Top each with 1/4 cup cereal, then with 1/4 of the banana slices.
  • Spoon 2 tablespoons yogurt mixture onto banana in each; top each with orange segments. Spoon remaining yogurt mixture over orange segments. Sprinkle with coconut. Garnish with strawberries.

This recipe is from the "Betty Crocker New Picture Cook Book" that I received as a wedding present in 1964. This book is so used the front cover is now missing and pages have many happy stains. This is our favorite Ambrosia Salad served at our Holiday meals.

1 (13 ounce) can pineapple chunks, drained
1 cup flaked coconut
1 cup marshmallows or 1 cup miniature marshmallow
1 cup sour cream or 1/2 cup whipping cream

Steps:

  • If using whole marshmallows - cut in quarters.
  • If using Whipping Cream -the 1/2 cup must be whipped before mixing with other ingredients.
  • Mix all ingredietns. Chill several hours or overnight.
