We've all been there. You let your bananas get a little too ripe, and now it's time to figure out what to do with them. Our favorite way to use them is in Banana Bars! With a tender, cake-like base and mouthwatering cream cheese frosting, our Banana Bars recipe is a must-make. You didn't hear it from us, but Banana Bars with cream cheese frosting will fly off the plate, so make sure to save yourself a few before serving them.

1 cup granulated sugar
1 cup mashed very ripe bananas (2 medium)
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 package (3 ounces) cream cheese, softened
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
  • Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
  • Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

Those who know, know that bananas and chocolate are a match made in dessert heaven. This recipe has both, and so much more. The decadent brownie base is the perfect stage for the smooth banana cream to really shine-with cherries on top, of course. Go on, make the family's day with this delicious dessert.

1 box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box for cakelike brownies
1/3 cup coarsely chopped walnuts
2 boxes (4-serving size each) Jell-O™ banana cream instant pudding and pie filling mix
2 1/2 cups cold milk
1 container (8 oz) Cool Whip frozen whipped topping, thawed
4 medium bananas, peeled and sliced (about 3 1/2 cups)
1 cup chopped fresh strawberries
1/2 cup pineapple tidbits in juice, drained, patted dry (from 8-oz can)
2 tablespoons chocolate fudge sauce
18 maraschino cherries with stems, patted dry

Steps:

  • Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in walnuts. Spread in pan. Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 hour.
  • In large bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in 1 cup of the whipped topping. Spread over brownie. Spread remaining whipped topping over pudding layer. Cover and refrigerate 4 hours.
  • When ready to serve, top with bananas, strawberries and pineapple. In small microwavable bowl, microwave chocolate fudge sauce uncovered on High 10 to 20 seconds or until thin enough to drizzle. Drizzle warmed sauce over brownie with fork. Cut into 6 rows by 3 rows. Top each bar with a cherry. Cover and refrigerate any remaining bars.

1/4 teaspoon vanilla
1 cup Gold Medal™ all-purpose flour
1/4 cup granulated sugar
1 cup boiling water
1 bag (9 oz) dried Mission figs, chopped (1 cup)
1/4 cup Gold Medal™ all-purpose flour
1/4 cup packed brown sugar
3 tablespoons cold butter (do not use margarine)
1/4 cup quick-cooking oats
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In small bowl, beat 1/2 cup butter, 1/4 cup granulated sugar and the vanilla with electric mixer on medium speed until well blended. On low speed, beat in 1 cup flour until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until center is set.
  • Meanwhile, in 2-quart saucepan, cook filling ingredients over medium-high heat 5 to 10 minutes, stirring frequently, until figs are tender and most of liquid is absorbed. Spread over crust.
  • In small bowl, mix 1/4 cup flour, the brown sugar and 3 tablespoons butter, using pastry blender or fork, until crumbly. Stir in oats and walnuts. Sprinkle over filling.
  • Bake 15 to 20 minutes longer or until edges are bubbly and topping is light golden brown. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

6 cups Rice Chex™ or Corn Chex™ cereal
2 cups miniature marshmallows (from 10.5-oz bag)
1 cup mini pretzel twists (from 16-oz bag)
15 oz vanilla candy coating (almond bark) (about 9 cubes from 20-oz package)
3 tablespoons holiday-colored sprinkles or nonpareils
1/4 cup powdered sugar
1 cup holiday-colored candy-coated chocolate candies

Steps:

  • Line large rimmed cookie sheet with waxed paper. In large bowl, mix cereal, marshmallows and pretzels.
  • In medium microwavable bowl, microwave candy coating uncovered on High 60 to 90 seconds, stirring after 1 minute, until almost melted. Stir until smooth. Pour onto cereal mixture; mix well.
  • Spread on cookie sheet; sprinkle with holiday sprinkles, and cool completely, about 15 minutes. Break into bite-size pieces.
  • In 2-quart resealable food-storage plastic bag, add coated cereal pieces and powdered sugar. Seal bag; shake to coat. Remove from bag; discard any remaining powdered sugar.
  • In large serving bowl, mix coated cereal mixture and chocolate candies.

A recipe I haven't made in a while but whenever I do it gets rave reviews. I got it out of our local newspaper.

Number Of Ingredients 9

1 (10 1/2 ounce) package mini marshmallows
1/2 cup butter
1 cup peanut butter, divided
2 tablespoons peanut butter, divided
2 cups semi-sweet chocolate chips, divided
1 cup blanched peanuts
1 cup quick-cooking oats
2 cups Rice Krispies
1 cup butterscotch chips

Steps:

  • Place marshmallows, butter, 1 cup peanut butter and 1 cup chocolate chips in a 2 quart glass bowl.
  • Microwave on high for 2 to 2-1/2 minutes.
  • Stir until smooth.
  • Stir in the peanuts, oats, and Rice Krispies cereal until well coated.
  • Spread into a buttered 9x13 baking pan.
  • Scrape bowl clean.
  • In the same bowl, place remaining 1 cup chocolate chips, 2 Tablespoons peanut butter and 1 cup butterscotch chips.
  • Microwave on high for 1-1/2 minutes.
  • Stir until smooth.
  • Spread on top of mixture in baking pan.
  • Let stand until firm before cutting into bars.

CHOCOLATE-CARAMEL REVEL BARS

Butter and egg called for on cookie mix pouch
1/2 cup old-fashioned oats
1/2 cup Kraft™ caramel bits
1 cup semisweet chocolate chips
3/4 cup canned sweetened condensed milk (not evaporated)

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, mix cookie mix, butter and egg until soft dough forms. Stir in oats and caramel bits until blended. Remove 3/4 cup of the cookie dough; set aside. Press remaining dough evenly in bottom of pan.
  • In 1-quart saucepan, heat chocolate chips and condensed milk over low heat 2 minutes, stirring frequently, until chocolate is melted and mixture is smooth. Spread mixture on top of cookie base. Break remaining cookie dough into small pieces, and sprinkle over top.
  • Bake 34 to 38 minutes or until golden brown. Cool completely, about 2 1/2 hours.
  • Cut into 4 rows by 4 rows. Store covered in airtight container at room temperature.

3 cups powdered sugar
3 cups ground walnuts
1 1/2 cups butter or margarine, softened

2 cups raspberry or strawberry preserves
Additional powdered sugar, if desired

Steps:

  • Heat oven to 375°F. In large bowl, stir together all ingredients except preserves and additional powdered sugar with spoon until crumbly. Reserve 2 cups of the mixture for topping; press remaining mixture in bottom of ungreased 15x10x1-inch pan.
  • Bake 15 to 20 minutes or until crust is golden brown. Spread with preserves. Sprinkle with reserved crumb mixture; press gently into preserves.
  • Bake 20 to 25 minutes longer or until light golden brown. Cool completely, about 1 hour. Sprinkle with additional powdered sugar. For bars, cut into 12 rows by 6 rows.

Betty's Crunchy Brownie Bars image

A goodie Betty shared with the group at our annual rughooking retreat. Recipe originally came from the back of a Duncan Hines brownie box, but she decided she liked a Betty Crocker boxed brownie mix better. Cook time does not include time to cool. I thought the oatmeal layer might detract from the brownie, but it was a wonderful compliment.

3/4 cup flour, sifted
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick-cooking rolled oats
3/4 cup brown sugar
3/4 cup butter, melted
1 (21 1/4 ounce) package brownie mix (Betty Crocker Hershey's Triple Chunk Supreme)
3 tablespoons water
1/2 cup vegetable oil
2 eggs
1 1/2 unsweetened chocolate squares (1 1/2 ounces)
3 tablespoons butter or 3 tablespoons margarine
2 1/4 cups confectioners' sugar, sift if lumpy
1 1/2 teaspoons vanilla
3 tablespoons hot water

Steps:

  • For crunchy layer, combine flour, soda and salt; stir in oats and brown sugar.
  • Add the 3/4 cups melted butter and pat mixture in bottom of an ungreased 13 x 9-inch baking pan.
  • Bake at 350°F for 5 minutes; at this time it will not be completely baked.
  • While bottom layer is in the oven, prepare brownies as directed on package.
  • Spread batter in pan over crunchy layer.
  • Return to oven and bake for approximately 25-30 minutes until done (do not over bake).
  • Prepare frosting when brownies are cool.
  • In a small saucepan melt together chocolate and the 3 tablespoons butter.
  • Remove from heat; immediately add confectioners' sugar, vanilla and 2 tablespoons hot water.
  • Stir until smooth; add remaining tablespoon hot water to make a soft, pourable consistency.
  • Spread over brownies while frosting is still hot; let set until firm.
  • Cut into bars.
