BANANA BARS
We've all been there. You let your bananas get a little too ripe, and now it's time to figure out what to do with them. Our favorite way to use them is in Banana Bars! With a tender, cake-like base and mouthwatering cream cheese frosting, our Banana Bars recipe is a must-make. You didn't hear it from us, but Banana Bars with cream cheese frosting will fly off the plate, so make sure to save yourself a few before serving them.

Steps:
- Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
- Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
- Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

BANANA SPLIT BROWNIE BARS
Those who know, know that bananas and chocolate are a match made in dessert heaven. This recipe has both, and so much more. The decadent brownie base is the perfect stage for the smooth banana cream to really shine-with cherries on top, of course. Go on, make the family's day with this delicious dessert.

- Heat oven to 350°F. Grease bottom of 13x9-inch pan with shortening or cooking spray. Make brownie batter as directed on box for cakelike brownies. Stir in walnuts. Spread in pan. Bake 22 to 25 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely on cooling rack, about 1 hour.
- In large bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in 1 cup of the whipped topping. Spread over brownie. Spread remaining whipped topping over pudding layer. Cover and refrigerate 4 hours.
- When ready to serve, top with bananas, strawberries and pineapple. In small microwavable bowl, microwave chocolate fudge sauce uncovered on High 10 to 20 seconds or until thin enough to drizzle. Drizzle warmed sauce over brownie with fork. Cut into 6 rows by 3 rows. Top each bar with a cherry. Cover and refrigerate any remaining bars.

- Heat oven to 350°F. Spray 9-inch square pan with cooking spray. In small bowl, beat 1/2 cup butter, 1/4 cup granulated sugar and the vanilla with electric mixer on medium speed until well blended. On low speed, beat in 1 cup flour until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until center is set.
- Meanwhile, in 2-quart saucepan, cook filling ingredients over medium-high heat 5 to 10 minutes, stirring frequently, until figs are tender and most of liquid is absorbed. Spread over crust.
- In small bowl, mix 1/4 cup flour, the brown sugar and 3 tablespoons butter, using pastry blender or fork, until crumbly. Stir in oats and walnuts. Sprinkle over filling.
- Bake 15 to 20 minutes longer or until edges are bubbly and topping is light golden brown. Cool completely, about 1 hour. For bars, cut into 4 rows by 4 rows.

- Line large rimmed cookie sheet with waxed paper. In large bowl, mix cereal, marshmallows and pretzels.

Steps:
- Place marshmallows, butter, 1 cup peanut butter and 1 cup chocolate chips in a 2 quart glass bowl.
- Microwave on high for 2 to 2-1/2 minutes.
- Stir until smooth.
- Stir in the peanuts, oats, and Rice Krispies cereal until well coated.
- Spread into a buttered 9x13 baking pan.
- Scrape bowl clean.
- In the same bowl, place remaining 1 cup chocolate chips, 2 Tablespoons peanut butter and 1 cup butterscotch chips.
- Microwave on high for 1-1/2 minutes.
- Stir until smooth.
- Spread on top of mixture in baking pan.
- Let stand until firm before cutting into bars.

BETTY'S CRUNCHY BROWNIE BARS
A goodie Betty shared with the group at our annual rughooking retreat. Recipe originally came from the back of a Duncan Hines brownie box, but she decided she liked a Betty Crocker boxed brownie mix better. Cook time does not include time to cool. I thought the oatmeal layer might detract from the brownie, but it was a wonderful compliment.

Steps:
- For crunchy layer, combine flour, soda and salt; stir in oats and brown sugar.
- Add the 3/4 cups melted butter and pat mixture in bottom of an ungreased 13 x 9-inch baking pan.
- Bake at 350°F for 5 minutes; at this time it will not be completely baked.
- While bottom layer is in the oven, prepare brownies as directed on package.
- Spread batter in pan over crunchy layer.
- Return to oven and bake for approximately 25-30 minutes until done (do not over bake).
- Prepare frosting when brownies are cool.
- In a small saucepan melt together chocolate and the 3 tablespoons butter.
- Remove from heat; immediately add confectioners' sugar, vanilla and 2 tablespoons hot water.
- Stir until smooth; add remaining tablespoon hot water to make a soft, pourable consistency.
- Spread over brownies while frosting is still hot; let set until firm.
- Cut into bars.
