CLASSIC EGG SALAD SANDWICH



Classic Egg Salad Sandwich image

Whether you're a fan of Mayonnaise or Miracle Whip, this egg salad recipe suits both cravings.

Number Of Ingredients 5

4 eggs
4 pieces white potato bread butter
2 scant tablespoons mayonnaise
1 teaspoon yellow mustard
kosher salt

Steps:

  • Place eggs in a medium saucepan, cover by with cold water by 1 inch or from your fingertip to first knuckle. Bring to a boil over high heat. Remove from heat, cover with id and let sit for 10 minutes. Cool with cold water and ice cubes for 5 minutes. Crack and peel eggs under cold running water. Set aside.
  • In a bowl mash eggs finely. Add mayonnaise, mustard and salt and stir to combine.
  • Toast bread, butter and top two slices with half of egg mixture. Top with remaining bread slices and serve.

It's absolutely wonderful - far, FAR better than the stuff in the jar from Kraft. Tangy, with just a hint of sweetness - it's making my mouth water just thinking about it.

3 large egg yolks, at room temp
2 Tbsp white wine vinegar
2 Tbsp raw honey
1 tsp salt
1 Tbsp dijon mustard
1 3/4 c light olive oil

Steps:

  • 1. Place the egg yolks in the bowl of a stand mixer and attach the paddle. Beat for 1 or 2 minutes until they are thick and sticky.
  • 2. Add the vinegar, honey, salt and mustard. Beat for 30 seconds more. Begin adding the oil a tablespoon or two at a time while the mixer is running. Continue beating for 10 seconds or so after each addition, to be sure the egg yolks are absorbing the oil.
  • 3. After 1/3 to 1/2 cup of oil has been incorporated, the mayonnaise will thicken to the consistency of heavy cream and it will no longer be in danger of separating or curdling. Beat in the remaining oil in a thin, steady stream - it helps to rest the lip of the measuring cup on the edge of the mixing bowl. If the mayo becomes too thick and stiff, beat in drops of vinegar or lemon juice to thin it out, then continue with the oil.
  • 4. Season to taste, if necessary. If not using immediately, scrape it into a clean, dry container with a tight lid and refrigerate. It will keep for 5 to 7 days

I found this recipe for homemade Miracle Whip in the local paper. Miracle Whip is not available where I live, so it's nice to have a jar of this in the fridge.

2 egg yolks
1/2 teaspoon salt
1 tablespoon powdered sugar
3 tablespoons lemon juice or 3 tablespoons vinegar
1 1/2 cups oil
1 1/2 tablespoons flour or 1 1/2 tablespoons cornstarch
1 teaspoon dry mustard
1/2 cup boiling water
2 tablespoons vinegar
salt

Steps:

  • Using a blender or electric mixer, blend egg yolks, salt, sugar and 1 tablespoons of the lemon juice.
  • Slowly pour in 1 cup oil, a few drops at a time, mixing thoroughly.
  • Add remaining 1/2 cup oil a little faster, carefully blending in each bit before adding the remaining 2 tablespoons lemon juice.
  • Mix the flour, mustard, boiling water and vinegar together until smooth.
  • Pour into a small saucepan and cook until smooth and paste-like (but not too thick).
  • Slowly add this hot mixture to the mayonnaise and blend well.
  • Pour in a container and cool in the refrigerator.
