Tomatoes are baked with torn bread to make a savory tomato pudding. So simple, we love it with meatloaf and baked potatoes. I serve it at dinner parties, and I am always asked for the recipe. Add it to any oven cooked meal.

2 (14.5 ounce) cans peeled and diced tomatoes with juice
3 slices white bread, torn into pieces
2 tablespoons butter
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pour the tomatoes into a 1 1/2 quart baking dish. Place the torn pieces of bread in a layer over the tomatoes, and dot with pieces of butter. Season with salt and freshly ground black pepper to taste.
  • Bake for 35 to 40 minutes in the preheated oven, or until golden brown.

OLD FASHIONED TOMATO PUDDING

This is excellent side dish for Prime Rib. As it is very rich, it has become part of my traditional Christmas Dinner. The first time I made this for family, my father said it tasted exactly like what his grandmother used to make and he hadn't had it in years.

1 12oz can(s) tomato paste (puree)
1 1/2 c light brown sugar
1/3 c water
1/8 tsp salt
3/4 c melted butter
4 c bread cubes, dry

Steps:

  • 1. Preheat oven to 375F. Use a 1 1/2 qt. casserole dish sprayed with non stick spray.
  • 2. In a sauce pan combine the tomato paste (puree), sugar, water and salt. Cook together 5 minutes.
  • 3. Place bread cubes in casserole dish. Pour melted butter over bread cubes.
  • 4. Pour tomato mixture over top of previous mixture and toss to make sure it covers the bread.
  • 5. Set casserole dish in a pan of hot water in oven. Bake for 45 to 55 minutes.

TOMATO-BASIL BREAD PUDDING

Butter, for greasing the baking dish
1/2 (8 ounces) multi-grain loaf, cut into 3/4-inch cubes
3 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
2 cloves garlic, minced
12 ounces cherry or grape tomatoes, halved
Kosher salt and freshly ground black pepper
1 packed cup chopped fresh basil leaves
1 1/2 cups (6 ounces) shredded Parmesan
6 large eggs, at room temperature
1 cup whole milk
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Filling: Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9 by 13 by 2-inch glass baking dish. Add the bread cubes and set aside.
  • In a large skillet, heat the oil over medium-high heat. Add the shallots and garlic. Cook, stirring constantly until fragrant, about 1 minute. Add the tomatoes and season with salt and pepper, to taste. Cook until slightly soft, about 2 minutes. Remove the pan from the heat and stir in the basil. Pour the tomato mixture and Parmesan cheese over the bread cubes and combine well.
  • Custard: In a large bowl, beat the eggs, milk, salt, and pepper together until smooth. Pour the custard over the bread mixture and gently toss to coat. Bake until slightly puffed and golden, about 25 to 30 minutes. Remove the pudding from the oven and let cool for 5 minutes. Cut into wedges and serve.

TOMATO SUMMER PUDDING

Fresh plum or vine tomatoes
Sea salt
Black pepper, freshly ground
Sugar
Tomato passata (whole tomatoes passed through a food mill)
Lemon juice
Worchestershire and hot pepper sauces
Good stale Italian bread, decrusted and sliced
Garlic cloves
Virgin olive oil
Large bunch fresh basil
Cooked quail eggs, olives, peppers, capers, for serving
Mayonnaise or sour cream, for passing

Steps:

  • Have enough tomatoes to overfill the pudding basin you will use. Dip into boiling water and peel them. Chop roughly and sprinkle with good sea salt and pepper and a tiny bit of sugar. Pour some passata into a large soup plate and season with lemon juice and Worstershire sauce, and maybe a touch of pepper sauce. Soak the bread slices briefly in this mixture and line your bowl with them, leaving no cracks or crannies. To the tomatoes add as much crushed garlic as you fancy, a good measure of olive oil and lots of torn up basil leaves. Adjust the seasoning and pour the whole lot into the bread lined bowl. Seal the top with more soaked bread. Place the receptacle on top with weights and leave overnight in the refrigerator. Turn out onto a fine dish and surround with goodies--quail eggs, olives, peppers, capers or what you will. A bowl of sour cream might be passed round with it, or good home-made mayonnaise.

SAVORY TOMATO PUDDING

2 pounds ripe tomatoes, cored
1 large clove garlic, chopped fine
1 1/2 tablespoons richly flavored extra-virgin olive oil
2 tablespoons finely chopped basil, plus sprigs for garnish
Salt and freshly ground pepper
1 12-inch length of baguette, 2 1/2 to 3 inches diameter

Steps:

  • Coarsely chop the tomatoes. Place them in a food processor and pulse until they are chopped fine. Or chop them fine by hand.
  • Stir in the garlic, olive oil and basil. Season with salt and pepper.
  • Cut the bread into slices about 1/2-inch thick. You should have about 18 slices.
  • Place 3 to 4 of the bread slices in the bottom of a 6-cup mixing bowl, trimming them if necessary so they completely cover the bottom of the bowl. Spoon about a quarter of the tomato mixture over the bread, enough to cover it. Make another layer of the bread, another of tomato, another bread, another of tomato and finish with a layer of the bread. Except for the bread in the bottom of the bowl, the other layers do not have to fit tightly.
  • Cover the bowl with plastic wrap, then set a dish that will fit inside the rim of the bowl directly on the wrap. Weight this dish with a heavy can of food, a rock or other heavy object and place this assembly in the refrigerator for at least 12 hours. Put the bowl on a plate to catch any liquid that may spill over.
  • To serve, remove the weight, the plate and wrap. Run a flexible knife or spatula around the pudding inside the bowl to loosen it. Unmold the pudding onto a serving dish that has enough of a rim to catch any juices. Garnish the pudding with sprigs of basil and serve in wedges.

This savory tomato bread pudding recipe was taught to my mother by her Italian mother-in-law who spoke very broken English. My mother taught it to me. It is a peasant dish that used up stale bread and bits of cheese... and helped to fill up the bellies of hungry children...nothing went to waste... Usually meats are not added to this dish, as it stands on it's own merit, but if you want to add meat.. go ahead.. This kind of tastes like pizza. It is a great side dish for meatloaf, chicken, steak, etc. Barbara (a member of JAP) asked me to post this recipe... so this is for you Barbara!

SAUCE
2 can(s) (15 ounces each) stewed tomatoes
- including juice (chopped large)
1 cup(s) tomato juice
1 teaspoon(s) anise seed (optional)
1 teaspoon(s) garlic powder
2 clove(s) fresh garlic (minced/crushed)
1 teaspoon(s) dry basil (or 3 tbs fresh chopped)
1/2 teaspoon(s) each: ground black pepper, salt, red ground red pepper
1 tablespoon(s) sugar
BREAD
- favorite bread (torn appart in 2 -3 - inch pieces)
- (about a loaf of old bread)
- (more or less depending on how thick you
- like it, how big a loaf, etc)
CHEESES
1 - 2 tablespoon(s) grated parmesan cheese (shaker kind)
1/2 cup(s) (8 - ounces) cubed mozzarella cheese

Steps:

  • Put stewed tomatoes, tomato juice, anise seed, garlic, sugar and all spices in a large sauce pan. Simmer for 10 minutes.
  • Add the parmesan cheese. Stir to mix in.. Add the bread pieces and stir well. (If to mushy.. add more bread... if too dry...add a little tomato juice).
  • Push the cheese cubes down into the pudding mixture to melt. Remove from heat and let sit a few minutes before serving.
  • ***Serve family style, put in pudding dishes or plate with the other parts of your meal. *** Garnish with sprig of fresh basil or parsley or sprinkle of shredded cheese. *** This is meant to be served hot, but some people like it cold. *** Always taste the sauce to determine if you need to add more spices to your liking... but remember that there is salt in breads and that as foods cool down... the salt flavor sometimes gets stronger.. Easy on the salt!
  • *** We make this as directed, but some people bake it as they would a sweet bread pudding... both ways are good... our family prefers this creamier and faster version.

TOMATO BREAD PUDDING

3 pounds plum tomatoes such as Roma, halved lengthwise
1 1/2 teaspoon Herbes de Provence
1/2 cup extra-virgin olive oil, divided
1 head garlic, left whole
10 cups cubed (1-inch) country-style Italian bread (1 pound)
2 cups whole milk
1 cup heavy cream
8 large eggs
2 cups coarsely grated chilled Italian Fontina (9 ounces)
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Preheat oven to 400°F with rack in middle. Butter a 3-quart shallow baking dish (about 13 by 9 inches).
  • Toss tomatoes in a bowl with herbes de Provence, 1 tablespoon oil, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Arrange tomatoes, cut sides up, in a large heavy 4-sided sheet pan.
  • Cut off and discard 1/4 inch from top of garlic head to expose cloves, then put on a sheet of foil and drizzle with 1 teaspoon oil. Wrap garlic in foil and roast in pan with tomatoes until tomatoes are browned but still juicy and garlic is soft, 50 to 60 minutes. (Leave oven on.) Cool garlic to warm, then force through a medium-mesh sieve with a rubber spatula, discarding skins. Reserve purée
  • While garlic cooks, toss bread cubes in a large bowl with remaining oil until coated, then spread out in a large 4-sided sheet pan and bake until golden brown, 20 to 25 minutes. Cool in pan.
  • Reduce oven temperature to 350°F.
  • Whisk together milk, cream, eggs, garlic purée, 2 teaspoons salt, and 1 1/2 teaspoon pepper. Stir in cheeses. Transfer bread to baking dish, then pour egg mixture over bread and add tomatoes, pushing some down between bread cubes. Bake until firm to the touch and golden brown in spots, 50 to 60 minutes.
