HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

BEST GRANOLA FORMULA

Best Granola Formula image

Provided by Food Network

Time 40m

Yield 10 to 12 servings

Number Of Ingredients 5

1/4 cup honey
1/4 cup barley malt syrup (may substitute maple syrup)
1/4 cup mixed fruit juice concentrate (available at health food stores; may substitute orange juice or apple juice concentrate)
5 cups rolled oats
1 cup raisins

Steps:

  • Heat the oven to 350 degrees. In a large saucepan, combine the honey, barley malt syrup and fruit juice concetrate. Heat over medium heat until you can stir the mixture easily, but before it starts to boil, about 5 minutes.
  • Place the oats in a large mixing bowl. Add the honey mixture and stir rapidly and thoroughly to coat the oats. Spread them in a thin, even layer on a large nonstick baking sheet (you may need two). Place it in the oven and bake until the granola is crisp, no more than 15 minutes. Watch carefully, or the granola may burn.
  • Remove the baking sheet to a cooling rack. Let the granola cool thorougly on the baking sheet. Place the granola in a large bowl, break up any large chunks, stir in the raisins and transfer to a tightly covered container.

THE BEST GRANOLA

The Best Granola image

For our best granola, we wanted a crunchy, clustery version that wasn't too sweet. We created this simple but universally likeable recipe that's flavored with vanilla and a blend of brown sugar and maple syrup. We love its pure flavors and balance of salty and sweet. It is the perfect canvas for personalization, so we've included some ideas for mix-ins at the end of the recipe.

Provided by Food Network Kitchen

Categories     appetizer

Time 2h

Yield 5 cups

Number Of Ingredients 9

Nonstick cooking spray
3 cups regular rolled oats (not quick-cooking)
1 cup slivered almonds
1 cup large unsweetened coconut flakes
1 tablespoon kosher salt
1/2 cup packed light brown sugar
1/3 cup pure maple syrup
1/3 cup vegetable oil
2 teaspoons pure vanilla extract

Steps:

  • Preheat the oven to 300 degrees F. Lightly spray a rimmed baking sheet with nonstick cooking spray.
  • Combine the oats, almonds, coconut chips and salt in a large bowl and stir to combine.
  • Combine the brown sugar, syrup and oil in a medium saucepan over medium-high heat and cook, stirring often, until the sugar is dissolved, about 2 minutes. Remove from the heat and stir in the vanilla extract.
  • Pour the sugar mixture over the oats and stir until well combined, then spread the granola mixture in an even layer on the prepared baking sheet. Bake, stirring occasionally (see Cook's Note) until toasted and golden brown, 60 to 70 minutes. Remove to a wire rack to cool completely and store in an airtight container for up to 1 week.
