1/2 cup Italian seasoned dry bread crumbs
2 Tbsp. grated Parmesan cheese
1 tsp. garlic powder
1/4 tsp. salt
1 lb. uncooked large shrimp, peeled and deveined
2 eggs, slightly beaten
2 Tbsp. olive oil
1 jar Bertolli® Vodka Sauce made with Fresh Cream
4 ounces mozzarella cheese rolled with prosciutto, sliced

Steps:

  • Preheat oven to 400 degrees. Mix bread crumbs, Parmesan cheese, garlic powder and salt in shallow dish. Dip shrimp in eggs, then bread crumb mixture until evenly coated.
  • Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook 1/2 of the shrimp, turning once, 6 minutes or until shrimp turn pink. With paper towel, wipe pan clean and repeat with remaining 1 tablespoon olive oil and shrimp.
  • Evenly spread 1-1/2 cups Sauce in 13 x 9-inch baking dish; top with shrimp. Pour remaining sauce over shrimp, then top with mozzarella. Bake 7 minutes or until cheese is melted and sauce is bubbling.

These will be some of the best shrimp you ever sank your teeth into, if not the best...they are mighty tasty and you better double the batch, as they definitely won't last long...I can never make enough...I truly hope you try them sometime, if nothing else for a special occasion...you won't be sorry! 1 1/2 lb large raw shrimp
4 oz ( 1 cup) shredded parmesan cheese
1/3 c italian bread crumbs
3 Tbsp butter
3/4 c chopped red bell pepper
2 green onions minced
2 clove garlic minced
1/4 tsp crushed red pepper, or to taste
1/4 c minced fresh parsley
3 1/2 Tbsp each - milk & heavy cream

Steps:

  • 1. First, peel shrimp and rinse, leaving on the tails. Pat dry with paper towels.
  • 2. Cut each shrimp on the underside, but not completely through. Open the shrimp and remove vein, if not already de veined. Set aside.
  • 3. In a small bowl, mix the cheese and bread crumbs and set aside.
  • 4. In a large skillet - over medium high heat, melt the butter. Add bell pepper, onion, garlic and red pepper flakes & cook for about 5 minutes or until vegetables are tender.
  • 5. Now, add the shrimp and saute until shrimp turn pink ( do not overcook ) should look opaque. Stir in parsley.
  • 6. Add the milk and cream.
  • 7. Now, stir in the cheese /crumb mixture cook, just until cheese is melted...
  • 8. Serve immediately...deliciosoooooo!

Lightly breaded and fried shrimp are tossed in marinara sauce and baked with a cheese crust. Surprisingly, this does not taste oily at all. Very good flavor, nice and light. Serve over angel hair pasta with a tossed salad on the side. The red pepper sauce pairs well with the shrimp, but you can use your favorite marinara.

2 cups canola oil
1 tablespoon paprika
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon ground thyme
1 teaspoon dried marjoram
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne pepper
1 cup Italian-style bread crumbs
2 tablespoons grated Parmesan cheese
1 cup all-purpose flour
2 eggs
1 tablespoon water
1 ½ pounds shrimp, peeled and deveined
1 (32 ounce) jar roasted red pepper and garlic tomato sauce
1 cup shredded mozzarella cheese

Steps:

  • Pour oil into a pot and heat to 350 degrees F (175 degrees C).
  • Combine paprika, salt, black pepper, oregano, thyme, marjoram, garlic powder, onion powder, and cayenne powder in a bowl. Mix 1 tablespoon of spice mixture with bread crumbs and Parmesan cheese in a separate bowl. Mix remaining spices with flour in a third bowl.
  • Beat eggs and water together in a bowl.
  • Dip each shrimp in flour mixture, then in egg mixture, and then in bread crumbs and place on a plate.
  • Fry shrimp in hot oil until they float and turn golden brown, about 1 minute. Drain on a paper towel-lined plate.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Pour tomato sauce into an 8-inch square casserole dish and top with fried shrimp, dipping them to coat with sauce. Top with mozzarella cheese.
  • Broil in the preheated oven until cheese starts to brown, 3 to 4 minutes.

Basil, crushed red pepper, and more Parmesan finish this outstanding Italian-American dish. To bulk up the meal, serve it with a refreshing Caesar salad and lots of crusty warm bread.

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 large eggs
1 1/2 cups panko, crushed by hand
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried parsley
1 pound shelled and deveined large shrimp, tails removed
Canola oil, for frying
One 24-ounce jar marinara sauce
1 cup shredded low-moisture mozzarella cheese
1/4 cup finely grated Parmesan cheese, plus more for serving
Basil leaves, for garnish
Crushed red pepper, for serving

Steps:

  • In a large resealable plastic bag, combine the flour and a pinch each of salt and black pepper; shake to mix. In a medium bowl, beat the eggs. In another large resealable plastic bag, combine the panko, oregano, parsley, 1 teaspoon salt and 1/2 teaspoon black pepper; shake to mix.
  • Working in batches, add the shrimp to the bag of flour and shake to coat. Transfer the floured shrimp to the beaten eggs and turn to coat. Lift the shrimp from the egg, letting the excess drip back into the bowl, then add to the bag of panko and shake to coat. Transfer the breaded shrimp to a baking sheet or plate.
  • In a large oven-proof skillet, heat 1/4 inch of oil over medium-high heat until little bubbles appear when you insert a wooden chopstick or the end of a wooden spoon. Carefully add half the breaded shrimp and fry, flipping once, until well browned, about 3 minutes total; reduce the heat if the shrimp browns too quickly. Transfer the shrimp to a paper towel-lined plate or baking sheet to drain. Repeat with the remaining shrimp.
  • Position the oven rack 6 to 8 inches from the heat source and preheat the broiler to high. Carefully pour the oil into a heatproof container and let the skillet cool slightly.
  • Add the marinara to the skillet and cook over medium heat until bubbling. Arrange the fried shrimp in the skillet in an even layer, then sprinkle the mozzarella and 1/4 cup of the Parmesan on top. Broil for 1 to 3 minutes, until the cheese is melted and browned in spots. Garnish the shrimp Parmesan with basil leaves and serve with crushed red pepper and additional Parmesan, for sprinkling.
