BEST BARBECUE CHICKEN

Best Barbecue Chicken image

A blend of spices that includes paprika and chili powder is a great base for a quick chicken rub.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 35m

Number Of Ingredients 6

Vegetable oil, for grates
2 tablespoons paprika
2 tablespoons chili powder
1 chicken (about 3 pounds), cut into 10 pieces
2 cups Simple Barbecue Sauce
Coarse salt and ground pepper

Steps:

  • Heat grill to medium; lightly oil grates. In a small bowl, combine paprika, chili powder, 2 teaspoons salt, and 1/2 teaspoon pepper; sprinkle spice rub all over chicken. Reserve 1 cup barbecue sauce in a bowl for serving. Keep remaining sauce in another bowl for basting.
  • Grill chicken, turning often, until cooked through, 15 to 20 minutes (if browning too quickly, move to cooler part of grill). During final 5 minutes of cooking, baste chicken with barbecue sauce. Serve chicken with reserved sauce.

BEST EVER BBQ CHICKEN

Best Ever BBQ Chicken image

The BBQ sauce on this juicy grilled chicken is out-of-this world! We "wow" people with this recipe every summer during outdoor entertaining. I always double the sauce recipe to have extra on the side for dipping. The original recipe calls for 2 small boiler chickens quartered but we prefer using bone-in, skin on chicken breasts. Slow cooking on the grill gives it the best flavor. I hope you enjoy this as much as we do - it's a favorite at this house.

Categories     Chicken Breast

Time 1h

Yield 8 serving(s)

Number Of Ingredients 11

3 garlic cloves, minced
2 teaspoons butter
1 cup Heinz ketchup (a must for us)
1/4 cup packed brown sugar
1/4 cup chili sauce (Heinz is a good one)
2 tablespoons Worcestershire sauce
1/2-3/4 tablespoon celery seed
1 tablespoon prepared yellow mustard
1/2 teaspoon salt
2 dashes hot pepper sauce
8 large chicken breast halves, bone-in with skin (a large family pack will usually have about 7-8 breasts.)

Steps:

  • In a saucepan, saute the garlic in butter until tender.
  • Add the next 8 ingredients.
  • Bring to a boil, stirring constantly.
  • Remove from the heat and set aside.
  • Grill the chicken, covered over medium heat for 30 minutes, turning occasionally.
  • Baste with sauce.
  • Grill 15 minutes longer or until juices run clear.
  • Continue basting and turning during the last 15 minutes of cooking.
  • Serve with any extra sauce you set aside for dipping.
  • (The sauce is just that delicious!).

THE ULTIMATE BARBECUED CHICKEN

The Ultimate Barbecued Chicken image

For the Ultimate Barbecued Chicken, Tyler Florence first grills the bird, then bastes it in his homemade sauce from Food Network.

Provided by Tyler Florence

Categories     main-dish

Time 3h20m

Yield 6 servings

Number Of Ingredients 19

2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper

Steps:

  • For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
  • Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
  • Preheat oven 375 degrees F.
  • Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

BARBECUED CHICKEN

Categories     main-dish

Time 3h50m

Yield 6 servings

Number Of Ingredients 15

2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
  • Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
  • Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
  • Yield: 1 1/2 quarts

THE BEST BARBECUE CHICKEN RECIPE

The Best Barbecue Chicken Recipe image

This technique for barbecue chicken makes it juicy with a thick glaze of barbecue sauce and no burnt skin. Yum! Serving size is estimated. Recipe courtesy of allrecipes.com.

Provided by AmyZoe

Categories     Whole Chicken

Time 1h45m

Yield 8 serving(s)

Number Of Ingredients 8

1 whole chicken, split in half and wing tips removed
2 tablespoons rice vinegar
2 garlic cloves, mashed
3/4 cup barbecue sauce, divided
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon paprika
1 teaspoon brown sugar

Steps:

  • With a sharp knife make several deep slashes through the skin and flesh of the chicken (two across the breast, two across the thigh, one across the leg).
  • In a mixing bowl combine the vinegar, garlic, and 1/4 cup of the barbecue sauce.
  • Add the chicken halves and toss to coat in the marinade.
  • Once coated turn the chicken skin-side down in the bowl and cover and refrigerate for 1 to 3 hours.
  • Remove the chicken from the marinade and pat dry with paper towels.
  • Mix together the dry rub ingredients and sprinkle over both sides of the chicken.
  • Build a medium fire in your charcoal grill (may use gas grill, but charcoal is recommended).
  • Brush the grates lightly with oil, and place the chicken skin side down on the grill.
  • Cook for just 3 to 4 minutes to lightly char the skin and create some grill marks.
  • Turn over so the skin side is up.
  • Brush the top of the chicken generously with barbecue sauce.
  • Cover the grill and cook, without turning the chicken again, for 35 to 40 minutes, or until the internal temperature is 165 to 170 degrees.
  • While the chicken is grilling, lift the cover every 5 minutes to add more barbecue sauce to the last layer.
  • By cooking the chicken skin-side up, the sauce will not burn and will build up a nice thick coating of sauce as the chicken cooks all the way from the bottom up.
  • This is a great way to get juicy meat and beautifully glazed skin without worrying about the chicken turning black.
