These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

Number Of Ingredients 8

1 cup blueberries
3 teaspoons baking powder
2 eggs, separated
1 tablespoon sugar
2 cups sifted flour
1 1/2 cups milk
1/2 teaspoon salt
1/4 cup melted butter

Steps:

  • Preheat the waffle iron.
  • Beat egg whites til stiff and set aside.
  • Sift together dry ingredients.
  • Slowly stir in milk, beaten egg yolks and melted butter.
  • Fold in blueberries.
  • Fold in egg whites which were stiffly beaten.
  • Bake in hot waffle iron.

1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg yolk
1/4 cup fat-free milk
1/4 cup orange juice
1 tablespoon butter, melted
1 teaspoon grated orange zest
1/8 teaspoon orange extract
4 large egg whites
1 cup fresh blueberries
1 tablespoon confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg yolk, milk, orange juice, butter, orange zest and extract; stir into dry ingredients just until combined. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Fold in blueberries. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Sprinkle with confectioners' sugar.

LOADED BERRY WAFFLES

Fun and flavorful, these buttermilk waffles can be loaded with your favourite ED SMITH® berry pie filling!

2 ¼ (560 mL) cup All-Purpose Flour
1 (5 mL) tsp Baking Powder
1 (5 mL) tsp Baking Soda
½ (2 mL) tsp Salt
2 Eggs, room temperature
1 ½ (375 mL) cup 1% Buttermilk, room temperature
2 (10 mL) tsp Vanilla Extract
⅓ (75 mL) cup Butter, melted
1 (540 mL) can E.D. SMITH® pie filling (strawberry, raspberry or blueberry), divided

Steps:

  • In large bowl, whisk together flour, baking powder, baking soda and salt.
  • In medium bowl, whisk together eggs, buttermilk and vanilla until blended. Stir egg mixture into flour mixture until just combined. Whisk in butter. Let batter rest for 10-15 minutes.
  • Preheat waffle iron according to manufacturer's instructions.
  • Ladle 1 cup (250 mL) batter into waffle iron to cover about two-thirds of grid surface. Drizzle 2 tbsp (30 mL) pie filling onto batter; using tooth pick, swirl mixture to create marbling.
  • Close the lid. Cook for 4 to 5 minutes or until steamstops emerging from waffle iron and waffle is golden brown and crisp. Alternatively, cook according to manufacturer's instructions. Repeat with remaining waffle batter and more pie filling.
  • Serve waffles topped with remaining pie filling.

I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

3 egg yolks, beaten
1 ⅔ cups milk
2 cups all-purpose flour
2 ¼ teaspoons baking powder
½ teaspoon salt
¼ cup melted butter
3 egg whites, stiffly beaten
⅔ cup blueberries
1 ½ cups blueberries
3 tablespoons honey
½ cup orange juice
1 tablespoon cornstarch

Steps:

  • In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
  • Preheat a lightly greased waffle iron.
  • Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
  • To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.

These waffles are a weekend favorite with Gavin Kaysen's family-the recipe comes from his wife Linda's family in Sweden-and we're sure yours will love them, too. Topped with a fresh berry compote, they're a great way to start a day of lounging in your PJs.

Number Of Ingredients 9

1 pint blueberries, blackberries, or raspberries, or use a combination, if you prefer
3 tablespoons sugar
Juice of half a lemon
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1 pinch kosher salt
1/8 teaspoon pure vanilla extract
1 3/4 cups whole milk
7 tablespoons unsalted butter, melted, plus more for brushing the waffle iron

Steps:

  • Berry compote: In a small saucepan, combine berries, sugar, and lemon juice. Gently heat until sugar is dissolved. Crush about half of the berries with a wooden spoon; allow the rest to soften but maintain their shape, 10 minutes. Set aside.
  • Waffles: In a bowl, whisk together the flour, baking powder, and salt. Make a well in the ingredients and pour in the milk and vanilla; whisk thoroughly. Then whisk in warm (not hot) melted butter until fully incorporated. The batter should be thin.
  • Heat a waffle iron according to the manufacturer's directions. Brush waffle iron on both sides with some of the remaining melted butter. Ladle enough batter to evenly cover the lower plate. Close the lid and cook until the waffles are brown and crispy, about 3-4 minutes. Repeat in batches with remaining batter; make 6-7 waffles.
  • Assembly: Place waffles on a serving platter, spoon berries on top, and serve.

Bring to a boil. Combine cornstarch and remaining orange juice until smooth; gradually stir into berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve warm with waffles.
