TRIPLE BERRY MUFFINS

Fresh blueberries, raspberries and strawberries bring eye-catching color and fruity taste to these moist muffins nicely spiced with cinnamon. They come together in no time and bake up in a snap. -Michelle Turnis, Hopkinton, Iowa

Number Of Ingredients 12

Ingredients

3 cups all-purpose flour
1-1/2 cups sugar
4-1/2 teaspoons ground cinnamon
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1-1/4 cups whole milk
1 cup butter, melted
1 cup fresh blueberries
1/2 cup fresh raspberries
1/2 cup chopped fresh strawberries

Steps:

In a large bowl, combine the first six ingredients. In another bowl, beat the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in berries. , Fill greased or paper-lined muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

The ladies just love baked goods. I like to make this with whatever fresh fruit I have on hand, like blueberries and cherries. It also works great with frozen berries. I buy those little cups of applesauce, they're about 1/4 cup. I like to make these mini-muffins. I use 350 degrees F for 15 minutes in a convection oven.

Ingredients

1 cup rolled oats
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1 egg
3/4 cup buttermilk
1/4 cup applesauce
1 cup cherries, stoned and chopped or 1 cup blueberries

Steps:

Preheat oven to 400 degrees F; grease and flour muffin pan.
Combine oats, flour, baking powder, and cinnamon; in another bowl, slightly beat the egg, beat in milk and applesauce.
Slowly add dry ingredients to the wet ingredients; stir in berries.
Fill muffin cups 2/3 to 3/4 full; bake about 20 minutes for regular-sized muffins and 15 minutes for mini-muffins at 375 degrees.

This is a recipe from The Muffin Lady cookbook, that I changed a little bit. It makes a delicious, bakery style muffin. I use a frozen berry mix, and the combination is heavenly.

Ingredients

2 cups flour
3/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs
1/4 cup oil
4 tablespoons melted butter
3/4 cup milk
1 teaspoon vanilla extract
8 ounces berries, fresh or frozen

Steps:

Heat oven to 350 degrees.
Sift the dry ingredients together.
Mix in the eggs, oil, butter, milk and vanilla.
Fold in your choice of berries.
(I get a blend of frozen berries at my grocery store--raspberries, blackberries, strawberries and blueberries. These make a great mixed berry muffin,and they're much more economical than fresh. But use what you have) Pour into lightly greased, standard 12 muffin pan, or large 6 muffin pan.
(Tip-an ice cream scoop makes easy work of this task, and muffins are the same size.) Bake for 30-40 minutes, start checking at 30 minutes or so.
Cool in pan on rack for about 5 minutes, then turn on out on rack to cool.
