2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
4 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
2 cups sour cream
2 cups blueberry

Steps:

  • In a mixing bowl, beat eggs. Gradually add sugar. While beating slowly pour in oil. Add vanilla.
  • Combine the dry ingredients.
  • Add dry ingredients alternately with sour cream to the egg mixture.
  • Gently add blueberries.
  • Spoon into the greased muffin tin or paper liners
  • Bake at 400°F (200°C) for 20 minutes.
  • Enjoy!

1/2 teaspoon baking powder

1-1/2 cups fresh or frozen raspberries or blueberries
2 large eggs, lightly beaten
1 cup sour cream
1/2 cup canola oil
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; add berries and toss gently. In another bowl, combine the eggs, sour cream, oil and vanilla. Stir into dry ingredients just until moistened., Fill greased muffin cups two-thirds full. Bake until a toothpick inserted in the center comes out clean, 18-22 minutes. Cool for 5 minutes before removing from pan to a wire rack. 4 cups all-purpose flour
1 cup sugar
6 teaspoons baking powder
1 teaspoon salt
2 eggs
2 cups milk
1/2 cup butter, melted
2 cups fresh or frozen blueberries
FILLING:
1 package (8 ounces) cream cheese, softened
1 egg
1/3 cup sugar
Dash salt

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, beat the eggs, milk and butter; stir into dry ingredients just until moistened. Fold in the blueberries. Spoon about 2 round tablespoonfuls into greased muffin cups., In a small bowl, beat cream cheese, egg, sugar and salt; place about 1 tablespoon in the center of each muffin cup (do not spread). Top with remaining batter. , Bake at 375° for 18-20 minutes or until a toothpick inserted in muffin comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
