BEETROOT AND BUTTER BEAN SOUP



Beetroot and Butter Bean Soup image

This soup freezes wonderfully for upto 3 months. It's also great with a handful of mixed seeds stirred in.

Number Of Ingredients 8

2 tablespoons olive oil
1 red onion, chopped
400 g beetroots, peeled and diced
800 ml vegetable stock
400 g butter beans, rinsed and drained
1 orange, juice and zest of
1 lemon, juice of
2 tablespoons yoghurt (optional)

Steps:

  • Heat oil and soften the onion for 5 minutes.
  • Add beetroot and stir for a couple of minutes.
  • Add stock and bring to boil. Simmer for 40 minutes until tender.
  • Add beans, orange juice and zest and cook for 10 minutes.
  • Blend until smooth and add the lemon juice.
  • Serve with the yoghurt swirled in (if using).

2 tablespoons sunflower oil
1 onion, peeled and finely chopped
1 clove garlic, peeled and crushed
1 teaspoon curry powder
1 tablespoon tomato puree
1 vegetable stock cube, dissolved in 850 ml warm water
14 ounces canned tomatoes, chopped
8 ounces potatoes, peeled and diced
1 carrot, peeled and diced
salt & freshly ground black pepper
15 ounces canned butter beans, drained
1 tablespoon parsley, chopped

Steps:

  • Heat the oil in a large, heavy-based pan.
  • Add the onion, garlic and curry powder, then cook for 1 minute.
  • Stir in the tomato puree, vegetable stock, tomatoes, potatoes and diced carrot.
  • Cover and simmer for 35 minutes.
  • Season to taste.
  • Add the butter beans and parsley, then simmer for 10 minutes.
