Beer Batter Fish Made Great image

This is a great beer batter fish recipe, and is very easy to do. We often fish all day with friends, and then cook the fish afterwards out on deck. Yummy and great!

2 quarts vegetable oil for frying
8 (4 ounce) fillets cod
salt and pepper to taste
1 cup all-purpose flour
2 tablespoons garlic powder
2 tablespoons paprika
2 teaspoons salt
2 teaspoons ground black pepper
1 egg, beaten
1 (12 fluid ounce) can or bottle beer

Steps:

  • Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
  • Dip fish fillets into the batter, then drop one at a time into hot oil. Fry fish, turning once, until both sides are golden brown. Drain on paper towels, and serve warm.

Vegetable oil
1 pound fish fillet or 1 pound uncooked peeled deveined large shrimp, thawed if frozen
3 to 4 tablespoons Original Bisquick™ mix
1 cup Original Bisquick™ mix
1/2 cup beer
1 egg
1/2 teaspoon salt

Steps:

  • Heat oil (1 1/2 inches) in heavy saucepan or deep fryer to 350°F. Lightly coat fish with 3 to 4 tablespoons Bisquick mix.
  • Mix remaining ingredients with hand beater until smooth. (If batter is too thick, stir in additional beer, 1 tablespoon at a time, until desired consistency.) Dip fish into batter, letting excess drip into bowl.
  • Fry fish about 2 minutes on each side or until golden brown; drain. Serve hot and, if desired, with tartar sauce.

Adapted from Betty Crocker with minor changes. Not the typical Louisiana cornmeal fry batter, but pretty good. I've had great success with copycat Bisquick recipes from Zaar. Double the recipe for a batch of onion rings on the side. If desired, season the batter to taste with Old Bay or Cajun Seasoning blends in place of salt and pepper.

I found this recipe on Food Network's website and couldn't believe it wasn't on Zaar! This is a super simple fried shrimp recipe from Paula Deen. I tried this on my shrimp the other night and it was delicious. I also fried some chicken tenders in the batter and they were delicious as well. Make sure you let the beer/flour mixture sit for a few hours before using it.

1 cup beer
1 cup all-purpose flour
1/2 teaspoon salt
21 -25 large shrimp, peeled and deveined with tails left on
oil, for frying

Steps:

  • Preheat a fryer or a deep pot halfway filled with oil to 350 degrees F.
  • In a bowl, combine the beer, flour, and salt, and allow to sit at room temperature for several hours.
  • Pat the shrimp dry with paper towels and dip the shrimp in the batter and fry for approximately 2 to 3 minutes.
  • Drain shrimp on paper towels.

In the late 1970s, I discovered Clyde's restaurant in Columbia, Maryland. The entire menu was fabulous, especially the Beer Battered Shrimp and their Victoria Spice Cake. Both recipes were creations of the chef, who passed away a few years later and took her recipes to her grave. The restaurant later became part of a chain and only the splendid decor remains today. The food is still good, but that's all - just "good". For months, I have been trying to replicate something approaching the taste of that wonderful shrimp dish. I am very pleased with the following recipe.

1 lb large or jumbo fresh shrimp, peeled and deveined
4 ounces self-rising flour
3/4 teaspoon shellfish spice mix
1 egg
1 tablespoon unsalted butter, melted
5 fluid ounces strong flavoured beer or 5 fluid ounces ale
oil, or melted fat to deep fry
lemon wedge, to garnish
prepared seafood cocktail sauce (optional)
1 tablespoon morton lite salt
1 tablespoon salt-free lemon pepper
1/2 teaspoon paprika
1/4 teaspoon Old Bay Seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cornstarch

Steps:

  • ----Shellfish Spice Mix----.
  • Combine all ingredients in a small bowl and mix well.
  • Store unused portion in an empty spice bottle and refrigerate for maximum flavour retention.
  • ----Fried Shrimp----.
  • Sift the flour and ¾ tsp (or more, if you like) shellfish spice mix into a bowl.
  • Beat to a smooth batter with unbeaten egg, butter and beer.
  • Dredge the shrimp in the batter to coat them and place them, a few at a time, in a frying basket and fry in hot oil or fat (350F/180C) for about a minute or two until the batter is golden brown.
  • Remove them from the oil and drain them.
  • Serve with lemon wedges and, if desired, cocktail sauce.
