2 cans (14-1/2 ounces each) stewed tomatoes
2 cups fresh broccoli florets
2 medium carrots, thinly sliced
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
4 bacon strips, diced
1/2 pound fresh mushrooms, sliced
1/3 cup chopped green pepper
1/4 cup chopped onion
2 garlic cloves, minced
16 ounces uncooked medium shell pasta
1/4 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until broccoli and carrots are tender., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. In the drippings, saute the mushrooms, green pepper, onion and garlic until tender; add to tomato mixture and heat through. , Meanwhile, cook the pasta according to package directions. Drain and place in a serving bowl; top with vegetable mixture. Sprinkle with bacon and Parmesan cheese.

3 strips thick-cut bacon, chopped
1 lb lean (at least 80%) ground beef
6 green onions, thinly sliced, greens and whites separated
1 teaspoon chili powder
2 cups milk
1 cup hot water
1 box Hamburger Helper™ cheeseburger macaroni
1 cup shredded pepper Jack cheese (4 oz)
1/4 cup ranch dressing
1 avocado, pitted, peeled and cubed
1/2 cup crushed tortilla chips
2 tablespoons chopped fresh cilantro leaves

Steps:

  • In 12-inch nonstick skillet, cook bacon over medium heat 5 to 7 minutes or until crisp. Remove bacon with slotted spoon; place in small bowl. Add beef and green onion whites to bacon drippings in skillet; cook over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain.
  • Stir in chili powder, milk, hot water, and uncooked pasta and sauce mix (from Hamburger Helper™ box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until pasta is tender.
  • Remove from heat. Sprinkle with cheese; cover and let stand 2 to 3 minutes or until cheese melts. Drizzle with ranch dressing. Sprinkle with bacon, green onion greens, avocado, tortilla chips and cilantro.

4 cups cut-up mixed fresh vegetables (broccoli florets, sliced carrots, red pepper strips)

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Add onions to drippings in skillet; cook and stir 5 min. or until crisp-tender.
  • Add chicken broth, water and macaroni to skillet; stir. Bring to boil; cover. Simmer on medium-low heat 10 min. or until macaroni is tender.
  • Add vegetables and cream cheese; cook 2 to 3 min. or until cream cheese is completely melted and mixture is well blended and heated through, stirring frequently. Sprinkle with bacon and Parmesan.

2 tablespoons extra-virgin olive oil
2 ounces bacon, preferably slab, chopped
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 small onion, thinly sliced
1/2 head cauliflower, trimmed into 1 1/2-inch florets (about 2 1/2 cups)
Coarse salt and freshly ground pepper
8 ounces orecchiette
3/4 cup finely grated Parmesan cheese (1 1/2 ounces), plus more, shaved, for garnish
1/2 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • Preheat oven to 400 degrees. Heat oil in a small skillet over medium heat. Cook bacon until crisp, about 8 minutes. Transfer to paper towels using a slotted spoon. Reserve drippings.
  • Toss sweet potato, onion, and cauliflower with reserved drippings. Season with 3/4 teaspoon salt and 1/4 teaspoon pepper. Roast on a rimmed baking sheet, tossing halfway through, until tender and caramelized, about 35 minutes.
  • Meanwhile, cook pasta in a large pot of salted water until al dente. Drain, reserving 1 cup cooking water. Return pasta to pot with cooking water, and toss with grated cheese and vegetables. Stir in parsley. Sprinkle bacon over top. Garnish with shaved cheese.

1 cup half-and-half
1 tablespoon chopped fresh sage
½ teaspoon salt
¼ teaspoon ground black pepper
fresh sage leaves for garnish

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat oil in a 10-inch, oven-safe skillet over medium heat. Add broccoli and onion. Cook, stirring occasionally, until broccoli is tender and onion is just translucent, about 5 minutes. 2 tablespoons olive oil or 2 tablespoons vegetable oil
2 medium potatoes, peeled and diced
1 medium sweet onion, chopped
1/2 cup green pepper, chopped
1/2 cup red bell pepper, chopped
1 cup mushroom, sliced
1/4 cup celery, finely diced
6 slices crisp bacon, cooked and crumbled
6 eggs
2 -3 tablespoons whipping cream
1/8 teaspoon baking soda
1/2 cup sharp cheddar cheese, shredded
salt, to taste
fresh ground black pepper, to taste
additional sharp cheddar cheese, for garnish

Steps:

  • Heat olive oil in skillet over medium heat.
  • Add potatoes and saute for 5 minutes.
  • Add in vegetables and saute for additional 20 minutes or until potatoes are browned and crispy (this will be less time if you used leftover cooked potatoes).
  • Meanwhile, whisk the eggs vigorously with the whipping cream, baking powder, salt and pepper until very well combined; let stand.
  • Add in cooked bacon.
  • Move vegetable and bacon mixture to cover only half of the skillet.
  • Whisk eggs again briefly and then add in 1/2 cup cheddar cheese.
  • Pour into the empty half of the skillet.
  • When the eggs start to set, start to scramble and stir entire mixture together until eggs reach the desired consistency.
  • Season with salt and pepper.
  • Sprinkle additional cheddar cheese on top, if using and allow to melt.
  • Delicious!

It's also a decent hot pot luck dish. My friend also puts cheese on the top and bakes it to brown the cheese. I'm posting it so I don't loose it, lol.
