1 pound ground beef
1 medium onion, chopped
1 can (8 ounces) tomato sauce
1 garlic clove, minced
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (2-1/4 ounces) sliced ripe olives, drained, optional
1 tablespoon butter
6 corn tortillas (6 inches)
2 cups shredded cheddar cheese
1/4 cup water

Steps:

  • In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato sauce, garlic, chili powder, salt, pepper and, if desired, olives. Bring to a boil. Reduce heat; simmer for 5 minutes or until thickened. , Lightly butter tortillas on one side; place one tortilla, buttered side down, in a 2-qt. round casserole. Top with about 1/2 cup meat mixture and 1/3 cup cheese. Repeat layers, ending with cheese., Pour water around the sides of casserole (not over top). Cover and bake at 400° for 20 minutes or until heated through. Let stand 5 minutes before cutting.

1 tbsp. extra-virgin olive oil
1 large onion, chopped
2 cloves garlic, minced
1 tsp. chili powder
1 tsp. ground cumin
1 lb. ground beef
2 tomatoes, chopped
2 tbsp. tomato paste
Kosher salt
Freshly ground black pepper
6 medium flour tortillas
1 c. shredded cheddar
1 c. shredded Monterey jack
Toppings
Pico de gallo
Sour cream
Fresh cilantro

Steps:

  • Preheat oven to 400° and grease an 8" or 9" springform pan with cooking spray. In a large skillet over medium heat, heat oil. Add onion and cook, stirring, until soft, about 5 minutes, then add garlic and spices and cook until fragrant, 1 minute. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes. Drain fat.
  • Return beef mixture to skillet over medium heat and stir in tomatoes and tomato paste. Cook 2 minutes more, then season with salt and pepper.
  • Build cake: Place a tortilla on bottom of prepared springform pan. Top with a layer of beef mixture and a handful of both cheeses. Repeat for five layers total, ending with cheese.
  • Bake until cheese is melty and tortillas are warmed through, 20 minutes. Let cool in pan 5 minutes.
  • Garnish with desired toppings before slicing and serving.

1 tablespoon olive oil
1 large white onion, diced
1 red bell pepper, diced
1 jalapeño, seeded, diced
1 lb ground beef
1 packet taco seasoning
1 lime, juice
10 flour tortillas
nonstick cooking oil spray
1 ½ cups shredded cheddar cheese
2 cups tortilla chips, crushed
1 ½ cups shredded monterey jack cheese
salsa, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a large skillet over medium heat, heat the olive oil. Add the onion and cook, stirring occasionally until caramelized, about 10 minutes. Add the red bell pepper and jalapeño. Cook until softened, about 3 minutes.
  • Add the ground beef, breaking apart with your spoon, and mix into the other ingredients. Add the taco seasoning and the lime juice. Mix thoroughly, cover, and refrigerate until ready to use.
  • On a cutting board, place the stack of tortillas. Cut off two round sides of the tortillas, leaving a 4-inch (10-cm) wide middle section. Cut the middle section in half vertically.
  • Generously spray a bundt pan with nonstick spray.
  • Place the middle strips of tortilla in the bundt pan in a fanning pattern. Each tortillas strip should slightly overlap the previous strip. Sprinkle half of the cheddar cheese on top of the tortillas.
  • Spread half of the ground beef mixture on top of the cheese.
  • Place a third of the round strips of tortilla on top of the ground beef mixture in a fanning pattern. Sprinkle half of the Monterey Jack on top of the tortillas. Sprinkle the tortilla chips on top of the cheese.
  • Place another third of the round strips of tortilla on top of the chips in a fanning pattern. Sprinkle the rest of the cheddar cheese on top of the tortillas. Spread the rest of the ground beef mixture on top of the cheese. Sprinkle the rest of the Monterey Jack on top of the ground beef mixture. Place the rest of the tortillas on top of the cheese in a fanning pattern.
  • Bake for 45 minutes until crispy and browned.
  • Let cool for 20 minutes.
  • Place a plate on top of the bundt pan, and invert the ring onto the plate.
  • Slice and serve with salsa.
  • Enjoy!

4 green onions, chopped
2 garlic cloves, chopped
3 tablespoons olive oil
1 lb lean ground beef
1 teaspoon dry oregano
1 tablespoon chili powder
8 ounces cream cheese, room temperature
1/4 cup chicken stock
2 tablespoons fresh chives, chopped
salt and pepper
5 tortillas
2 cups sharp cheddar cheese, grated
salt and pepper
sour cream, to garnish

Steps:

  • Preheat oven to 350°F In a saucepan, brown the green onion in oil. Add beef and cook at high heat, while breaking it. When it's cooked and liquid evaporated, add oregano, chili powder, cream cheese, stock and chives. Cook while stirring until creamy. Add salt and pepper. Set aside.
  • Put one tortilla in a large pie plate. Cover with 1/5 of beef mixture. Sprinkle with 1/5 of cheddar. Repeat, alternating with tortilla, meat and cheese until there is no leftover. End with the cheese.
  • Cover the tortilla cake with foil paper. Cook in oven for 20 minutes. Remove foil paper and keep cooking about 20 minutes. Let rest 5 minutes, then cut in slices. Serve with salsa and sour cream.

2 tbsp sunflower oil
1 onion, finely chopped
4 garlic cloves, very finely chopped
1 tbsp ground cumin
1 tbsp ground coriander
small pinch of cayenne pepper (more if you want it spicier)
1 tsp dried oregano
500g beef mince
pinch of golden caster sugar
1 tbsp wine vinegar or cider vinegar
400g can chopped tomatoes
400g can black beans or kidney beans, with the can water
8 flour or corn tortillas
500g cooked rice, or our Mexican tomato rice (see recipe below right)
a selection of sliced avocado or guacamole, chopped tomatoes, soured cream, shredded lettuce, sliced red onion, grated cheddar, sliced red chilli and lime halves, to serve

Steps:

  • Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
  • Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
  • To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

1/2 cup pickled jalapeno slices

  • Place roast and water in a 3-qt. slow cooker. Cover and cook on low for 8-9 hours or until meat is tender., Remove meat. When cool enough to handle, shred meat with 2 forks. Steps:

  • Heat oven to 400°F.
  • Brown meat in large skillet; drain. Add VELVEETA and water; mix well. Cook until VELVEETA is melted, stirring frequently. Remove from heat. Stir in corn and salsa.
