SPICY PINEAPPLE SALSA

Steps:
- In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and chop., In a stockpot, combine remaining ingredients. Stir in tomatoes. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 15-20 minutes or to desired thickness., Carefully ladle hot mixture into seven hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

Steps:
- Combine all ingredients; cover and chill.
- Make 1/4-inch-deep cuts on both sides of steak, about 1 inch apart in a diamond pattern, with a sharp knife.
- Combine steak and teriyaki sauce in a heavy-duty zip-top plastic bag; seal and turn to coat.
- Chill 2 hours.
- Remove steak from marinade, reserving marinade.
- Bring reserved marinade to a boil in a small saucepan.
- Grill steak, covered with grill lid, over medium-high heat (350* to 400*F/ 175* to 205*C) 7 minutes on each side or to desired degree of doneness, basting with reserved marinade.
- Wrap tortillas in aluminum foil, and place on hot grill 10 minutes or until thoroughly heated.
- Cut steak across grain into thin slices, and place evenly down center of tortillas; top with cabbage and Spicy Pineapple Salsa.
- Roll up, and serve immediately.
SWEET & SPICY MANGO PINEAPPLE SALSA

Steps:
- Peel and cut mango into cubes, discard seed.
- Dice pineapple, saved juice.
- All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.
- Combine all ingredients and let sit for one hour or more before serving.
- Serve with tortilla chips.

- Use more or less of your favorite ingredients.
- Sometimes the jalapenos are not very spicy, feel free to add hot sauce (Tobasco) to spice it up if desired.

- Heat the grill to high and scatter the beef, onions and pepper pieces on a large baking tray. Mix the oil and seasoning in a small bowl, then rub over the meat and vegetables with your hands. Grill for 10 mins, turning halfway, until everything is cooked through and the peppers and onions are starting to blacken at the edges. Heat the tortillas in the microwave or under the grill according to pack instructions.
- Meanwhile, tip the tomatoes into a sieve and leave to drain from their juice for 5 mins. Discard the juice, mix the flesh with most of the chopped coriander and season to taste. Wrap the spicy beef and vegetables, salsa and a little of the remaining coriander in the tortillas, topping with a spoonful of soured cream or yogurt, if you like.

- Add the olive oil, garlic, lemon juice, coconut aminos, maple syrup, salt and pepper to a gallon freezer bag and shake it well to mix it. Add the flank steak and shake it or roll it around in your hands a few times to coat the steak in the marinade. Place it in the fridge for 6 hours or overnight.
- Once the steak is marinated, prepare the pineapple to be grilled as well. Place in a ziplock bag with 2 tablespoons of maple syrup and toss to coat.
- Preheat the grill to high (about 450°F). Place the flank steak on the grill and discard the marinade. Sear the steak for 1-2 minutes on each side with the grill open then transfer it to indirect heat. Add the pineapple and peppers directly on the grill grates then close the lid and cook the steak, pineapple and peppers for 3 minutes. Open the lid, flip the pineapple, peppers and steak then close the lid and cook for an additional 3 minutes or until the steak reaches your desired doneness. It should reach 130-135°F for medium rare.
- Once it’s done, transfer it to a clean cutting board with the pineapple and peppers. Allow the steak to rest for 5-7 minutes prior to cutting.
