Sunday Supper Beef Roast - Traeger Grills image

Smoke this Sunday Supper Beef Roast low and slow until it's dripping with flavor. Circle up your family, you're about to be the hero of this Sunday meal.

(3 to 3-1/2 lb) beef top round, rump or sirloin tip roast
vegetable oil or extra-virgin olive oil
Traeger Prime Rib Rub
beef broth, plus more as needed
large russet potato, peeled and cut into 1 inch pieces
carrots, cut into 1-inch pieces
celery stalks, cut into 1 inch pieces
yellow onion, cut into 1-inch pieces
fresh thyme sprigs

Steps:

  • Rub the roast on all sides with the vegetable oil and place on a rack in a roasting pan or Dutch oven, fat-side up. Season well with Traeger Prime Rib Rub. Pour the beef broth into the bottom of the pan.
  • When ready to cook, set the Traeger temperature to 500℉ and preheat with the lid closed for 15 minutes.
  • Insert the probe into the thickest part of the roast. Place the Dutch oven on the grill grates, close the lid, and cook the roast for 25-30 minutes, or until the outside is seared.
  • Reduce the Traeger temperature to 225℉. Add the potato, carrots, celery, onion, and thyme to the Dutch oven around the roast. Cover the Dutch oven with foil and continue cooking with the lid closed until the internal temperature of the roast reaches 135℉ for medium-rare, 2-3 hours. Add more broth as needed.
  • Remove the Dutch oven from the grill and let the roast rest for 10 minutes before thinly slicing against the grain.
  • Serve the roast with the pan drippings and vegetables. Enjoy!

This beef sirloin tip roast is sweet and spicy, with simple seasonings and tangy BBQ sauce.

Traeger Beef Rub
Traeger 'Que BBQ Sauce

Steps:

  • Season the sirloin tip roast evenly with the Traeger Beef Rub on all sides. Let rest at room temperature for 30 minutes.
  • When ready to cook, set the Traeger temperature to 275°F and preheat with the lid closed for 15 minutes.
  • Insert the probe into the thickest part of the roast. Place the roast directly on the grill grates, close the lid, and cook until the internal temperature reaches 130°F, about 75 minutes.
  • In a small bowl, stir together the Traeger 'Que and chili sauce. Once the meat has reached 130°F, brush the roast with 1/4 cup of the sauce.
  • Continue cooking until internal temperature reaches 140°F.
  • Transfer the roast to a cutting board and tent with foil. Let rest until internal temperature reaches 145°F, about 10 minutes.
  • Thinly slice the roast against the grain and brush each slice with the remaining sauce. Enjoy!

This is a wonderful garlic-infused roast that has replaced my traditional pot roast recipe. Be sure to use a good-quality top sirloin roast for the most tenderness and flavor. I love using the traditional potatoes and carrots but also add the red pepper and mushrooms for more nutritional value. Use an amber beer or a medium slightly-darker beer, such as Yuengling® Black and Tan.

1 (3 pound) beef top-sirloin roast
3 cloves garlic, slivered, or to taste
3 cloves garlic, minced
1 teaspoon ground paprika, or to taste
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
6 Yukon Gold potatoes, quartered
5 carrots, cut into 2-inch pieces
2 large sweet onions, quartered
3 cubes beef bouillon
½ cup hot water
1 cup beef broth
½ cup beer
2 bay leaves, broken, or more to taste
2 large red bell peppers, cut into 2-inch pieces
½ cup mushrooms

Steps:

  • Make small slits in the roast using a sharp knife; tuck slivered garlic into each slit. Rub minced garlic, paprika, salt, and ground black pepper over the entire roast. Set aside until roast comes to room temperature, 15 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange potatoes, carrots, and onions in an even layer in a 9x12-inch roasting pan. Dissolve beef bouillon cubes in hot water in a small bowl and pour over vegetables. Pour in beef broth and beer.
  • Place roast on top of the vegetables, making sure it is not submerged in the broth mixture. Place bay leaf pieces around the roast.
  • Bake roast in the preheated oven until internal temperature reaches 150 degrees F (66 degrees C) for medium, 45 to 60 minutes. Transfer roast to a platter; cover with aluminum foil, and allow to rest until internal temperature reaches 155 degrees (68 degrees C), about 10 minutes.
  • Increase oven temperature to 425 degrees F (220 degrees C). Add red pepper and mushrooms to the roasting pan and return it to the oven. Bake until vegetables are tender and lightly browned, 15 to 20 minutes.
  • Thinly slice the roast crosswise. Serve with vegetables; spoon pan juices over meat and vegetables.

A quick sear and a long, slow cook on your Traeger will produce the tender, rosy roast beef you'll find at the local deli.

Traeger Prime Rib Rub or Traeger Beef Rub
(5-6 lb) top sirloin roast
vegetable oil

Steps:

  • When ready to cook, set the Traeger temperature to 450°F (or 500℉, if available) and preheat with the lid closed for 15 minutes.
  • If not already done, tie the roast at 1 1/2-inch intervals with butcher's twine. Season the roast generously on all sides, including the ends, with Traeger Prime Rib Rub.
  • Place a large cast iron skillet on the grill grates. Add the vegetable oil to the skillet. Once the pan is hot, place the roast in the skillet and sear on all sides, turning with tongs. Don't forget to sear the ends, too.
  • Transfer the roast directly to the grill grates and carefully remove the skillet from the grill. Insert the probe into the center of the roast. Reduce the grill temperature to 225℉, close the lid, and roast the meat until the internal temperature reaches 130℉ for medium-rare, or your desired temperature, 3-3 1/2 hours.
  • Remove the roast from the grill and let the meat cool to room temperature, then wrap tightly in aluminum foil or plastic wrap. Transfer to the refrigerator to chill for several hours, or overnight.
  • Remove the butcher's twine and very thinly slice the roast crosswise, preferably on a meat slicer. Use to build your favorite roast beef sandwich or serve as desired.

ROAST SIRLOIN OF BEEF

Gary Rhodes' delicious, succulent roast beef dish is perfect for a Boxing Day lunch or an alternative Christmas Day roast. And it only calls for four ingredients!

2 tbsp vegetable oil or beef fat
1-1.5kg/2lb 4-3lb 5oz sirloin of beef joint
1 glass red wine
400g can beef consommé

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil or fat in a large fl ameproof roasting tin in the oven for 5-10 mins. Season the beef all over.
  • Place the joint fat-side down in the roasting tin and put it on the hob. Sizzle to release some of the fat, then turn the beef in the fat to seal and colour it all over, about 5 mins. The joint can now be roasted, fat-side up, allowing 10-15 mins per 450g for medium-rare, 15-20 mins per 450g for medium, 20-25 mins for medium-well and 25-30 mins for well done. Turn the joint halfway through its cooking time for an even roast. Once roasted, remove the beef from the pan and leave to one side, loosely covered with foil, to rest for 15-20 mins.
  • Meanwhile, pour off any excess fat from the roasting tin, then put the tin on a medium heat on top of the stove. Once it begins to sizzle, pour in the red wine, allowing it to boil rapidly until almost completely evaporated. Tip in the consommé and allow to simmer for 4-5 mins. This will give a light sauce, rather than a gravy (see tip, below). Simmer for a few more mins before straining through a sieve for the smoothest of fi nishes. Carve the beef into thick slices, offering the gravy separately.
