2 lb ground beef
2 large bell peppers (green, yellow or red (diced into cubes))
1 large onion ((chopped into small cubes))
8 oz provolone
1 tbsp salt ((adjust to taste))
1 tsp pepper ((adjust to taste))
8 large tortillas ((wheat or white))

Steps:

  • In a large skillet, cook ground beef while breaking it apart into small pieces. Season it with salt and pepper.
  • Add in onion and bell pepper. Cook until veggies soften.
  • Add cheese and stir until the cheese is fully melted. Turn off the heat.
  • Place all 8 tortillas flat on the work surface. Equally, divide the beef mixture and wrap each tortilla.
  • You can serve them immediately. Also, you can toast both sides of the wrap on a preheated skillet or a griddle to create that extra crust.

1 (8 ounce) package Philadelphia Cream Cheese, softened
1/2 cup onion, sliced
1/2 green bell pepper, chopped
1/2 red pepper, chopped
1 tablespoon Worcestershire sauce
1 cup mozzarella cheese, shredded
1/4 cup mayonnaise
6 large flour tortillas
1 lb low-sodium deli roast beef, thinly sliced

Steps:

  • Blend together cream cheese, sliced onions and peppers, Worcestershire sauce, Mozzarella cheese and mayonnaise.
  • Spread the cream cheese mixture over entire surface of flour tortilla.
  • Place five or six thin slices of beef on half of the tortilla, then roll up.
  • Refrigerate for 1 hour. Cut in half on the diagonal and serve cold.

1 lb. flank steak
1 tbsp. extra-virgin olive oil
kosher salt
Freshly ground black pepper
1 white or red onion, thinly sliced
1 green bell pepper, thinly sliced
8 slices provolone
4 large whole wheat tortilla wraps

Steps:

  • Preheat a large skillet over medium-high heat. Brush steak with oil and season with salt and pepper on both sides. Cook steak until pink just disappears in the middle, 6 to 8 minutes on each side. Transfer to a cutting board and let rest, 5 minutes.
  • Meanwhile, in the same skillet, cook onions and peppers until tender, 2 to 3 minutes. Reduce heat to medium-low. Thinly slice steak across the grain and transfer back to skillet. Top with provolone and cover until cheese is melty, 2 to 3 minutes.
  • Fill tortillas with steak mixture, wrap tightly, and serve.

I have not tried this recipe. I got it from Laura's Lean Beef. Inspired by the Philly cheese steak sandwich, this Philly Style Wrap is a great idea for dinner or lunch.

1 medium yellow onion, sliced
8 ounces fresh mushrooms, sliced
1 lb laura's 92% lean ground beef or 1 lb 96% lean ground beef
1/2 teaspoon salt
1 teaspoon pepper
1/4 teaspoon pepper sauce
6 ounces reduced-fat provolone cheese, sliced thin
6 98% fat free tortillas

Steps:

  • In a large nonstick skillet over medium heat, cook onions and mushrooms until onions are almost transparent. Stir frequently, and cover the skillet in between to retain moisture.
  • Add ground beef, salt, pepper and pepper sauce. Crumble ground beef as you brown.
  • Heat tortillas according to package instructions.
  • Divide beef mixture between tortilla shells. Top with cheese. Wrap and serve.
  • Cooking Tips: If your taste buds enjoy a little heat, add even more pepper sauce.
  • Diabetic Exchanges: 1 starch; 2 vegetable; 3 lean meat.
