5-Ingredient Fix Contest Entry. Very easy and quick recipe. Wanted something a little more hardy than nachos so I improvised, adapted,overcame. No special prep. This is my recipe born of extreme hunger and boredom with the same old same old.

1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
1 (15 ounce) can texas style chili with beans
1 (8 ounce) bag shredded cheddar cheese
1/4 cup diced red onion
1/2 cup sour cream, at room temperature

Steps:

  • Brown the hash browns in a large skillet on med-med high heat. When they are cooked through and crisp top with entire 8oz bag of cheese covering potatoes entirely. Cover and let melt. pour can of chili over the top of this and heat thoroughly. Turn heat off and sprinkle onion over the top of the chili. Using a teaspoon cover the dish with dollops of sour cream.

1 1/2 lbs lean ground beef
1 cup soft breadcrumbs
1/3 cup catsup
1 egg, beaten
1/2 cup onion
1/2 teaspoon salt
1/8 teaspoon pepper
4 cups mashed potatoes
additional ketchup, for topping (optional)

Steps:

  • Combine meat, bread crumbs, egg, onion, catsup, salt and pepper.
  • Pour into an 8-inch square baking dish.
  • Bake at 350 for 30 minutes.
  • Drain excess fat.
  • Pour 3 cups of hot mashed potatoes on top.
  • Drizzle with catsup, if desired.
  • Bake for another 20 minutes.

1 1/2 lbs lean ground beef
1 cup soft breadcrumbs
1 beaten egg
1/2 cup chopped onion
1/3 cup ketchup
1 teaspoon salt
1/8 teaspoon pepper
3 cups hot mashed potatoes
1 cup grated American cheese

Steps:

  • Combine first 7 ingredients.
  • Pat meat into a square 8" baking dish.
  • Bake 350 degrees for 30 minutes.
  • Remove from oven. Drain fat.
  • Combine 3 Cups hot mashed potatoes and 3/4 Cup grated American cheese. Spread over meat.
  • Top with 1/4 Cup grated American cheese.
  • Bake 20 minutes longer. Cut in squares.

5 Ingredient Fix Recipe Entry-I just can't get enough Corned Beef Hash, and Simply Potato Hash Browns make the preparation SO much easier. I use deli sliced corned beef as a shortcut as well.

1 -20 ounce Simply Potatoes® Shredded Hash Browns
1 large egg, beaten
4 tablespoons cornstarch
1/2 lb deli corned beef, cut in strips
1 1/2 cups swiss cheese, shredded

Steps:

  • Preheat oven to 375 degrees.
  • Place the hash browns in a large bowl and sprinkle half of the cornstarch on top. Toss until well-coated. Repeat with the remaining cornstarch. Mix in the beaten egg.
  • Divide the mixture evenly among 9 standard muffin tin cups that have been greased. Press the mixture to the bottom and sides of the cup. Bake 20-23 minutes or until golden brown.
  • Fill the baked hash brown cups with equally divided amounts of the corned beef strips. Top with equal amounts of the shredded cheese. Bake an additional 7-9 minutes.
  • Let cool 5 minutes. Carefully loosen the edges of cups using a knife. Use a fork to remove each tater cup.

3 lbs cut sirloin beef tips
2 lbs family size container Simply Potatoes Traditional Mashed Potatoes
1/3 cup flour
4 cups water
1/3 cup browning sauce

Steps:

  • Heat a large skillet with high sides on medium heat and add the beef tips inches Cook them until they are brown all over.
  • Turn off the heat on the tips and drain any liquids in the pan.
  • Add the Browning Seasoning Sauce to your tips while raising the heat to medium.
  • When the Tips start to sizzle a bit add in the water and wait until it starts to boil.
  • Immediately as it begins to boil turn the heat down to low and simmer for 20 minutes.
  • Add flour to tips and continue to simmer on low for another 10 minutes.
  • Begin cooking your Simply Potatoes: Traditional Mashed Potatoes as directed on packaging.
  • Turn heat off tips and allow to cool/thicken (Cook longer if you prefer more tender tips).
  • Serve hot over fresh Simply Potatoes: Traditional Mashed Potatoes.
