GROUND BEEF CASSEROLE WITH RICE
This ground beef casserole with rice is the perfect casserole for using whatever you have lying around in your fridge.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.
- Stir diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into the ground beef mixture. Simmer until some of the liquid has reduced, about 10 minutes. Add rice and mix well. Transfer to a casserole dish and sprinkle Cheddar cheese on top.
- Bake in the preheated oven until filling is heated through and cheese is melted, about 45 minutes.

This is a quick and easy kid-friendly recipe I found years ago in a Better Homes & Garden cookbook. The kids never know they are eating their carrots.

Steps:
- In large saucepan, cook ground beef or pork and garlic until meat is browned.
- Drain off fat.
- Remove from pan and set aside.
- In same saucepan, cook uncooked rice in butter until golden brown, stirring frequently.
- Stir in water, carrot, bouillon, parsley, onion, salt and basil.
- Bring to boil.
- Reduce heat; cover and simmer for 5 minutes.
- Stir in meat mixture.
- Turn half into a 1 1/2 quart casserole.
- Sprinkle with a layer of cheese.
- Top with remaining meat mixture.
- Bake at 325°F oven for 45 minutes, stirring twice.
- Sprinkle with remaining cheese.
- Bake, uncovered, 5 minutes longer or until cheese melts.

BAKED BEEF AND RICE BAKE
This recipe goes back to the early 80's, I still make it once in a while, it's a really tasty and easy dish to throw together, if you have freezer ready beef all ready cooked and frozen in the freezer, just thaw on defrost in the microwave, and just throw in some cooked bacon with the other ingredients... freezer-ready ground beef makes this recipe even quicker!

- Grease a 1-1/2-quart casserole dish.
- In a large frypan, cook the bacon until crisp; set aside to a plate and crumble.
- To the bacon drippings add ground beef, with rice, onion, garlic and green pepper (if using) in the bacon drippings until beef is no longer pink; drain the fat/drippings.
- Add in the cooked bacon, Parmesan cheese (if using) seasoning salt and pepper to taste, paprika, stuffed olives, tomato juice and boiling water (do not add in the grated cheddar cheese); mix to combine well.
- Set oven to 300 degrees.
- Transfer the mixture to a prepared dish.
- Cover tightly, and bake for 1 hour.
- Uncover, sprinkle with grated cheddar cheese, and continue baking for another 10-15 minutes, or until cheese has melted, and the rice is done to desired tenderness.
