MULTIPURPOSE MEAT PASTE



Multipurpose Meat Paste image

A cornerstone of Vietnamese cooking, this smooth meat paste is the most important recipe in the charcuterie repertoire and forms the base of three sausages in this chapter. It is also used to make meatballs (page 86), acts as the binder for Stuffed Snails Steamed with Lemongrass (page 42), and may be shaped into dumplings similar to French quenelles and poached in a quick canh-style soup (page 61). This recipe, which calls for chicken rather than the traditional pork, is my mother's modern American approach to gio. Chicken, a luxury meat in Vietnam that is affordable here, is easier to work with and yields a particularly delicately flavored and textured paste. Additionally, chicken breasts and thighs are readily available at supermarkets, while pork leg, the cut typically used, isn't. A recipe for the pork paste appears in the Note that follows.

Yield makes about 2 1/2 pounds

Number Of Ingredients 7

1 pound boneless, skinless chicken breasts
1 1/4 pounds boneless, skinless chicken thighs
1 tablespoon baking powder
2 tablespoons tapioca starch
1 tablespoon sugar
5 tablespoons fish sauce
3 tablespoons canola or other neutral oil

Steps:

  • Slice each breast and thigh across the grain into 1/4-inch-thick strips. When cutting the breast tenders, remove and discard the silvery strip of tendon. Keep any visible fat for richness, but trim away any cartilage or sinewy bits, as they won't grind well.
  • To make the marinade, in a bowl large enough to fit the chicken, whisk together the baking powder, tapioca starch, sugar, fish sauce, and oil. Add the chicken and use a rubber spatula to mix well. Cover tightly with plastic wrap and refrigerate for at least 8 hours or up to overnight. The chicken will stiffen as it sits.
  • Remove the chicken from the refrigerator and use a spoon to break it apart. Working in batches, grind the chicken in a food processor until a smooth, stiff, light pink paste forms. (This step takes several minutes and the machine will get a good workout.) Stop the machine occasionally to scrape down the sides. When you are finished, there should be no visible bits of chicken and the paste should have a slight sheen. Using the rubber spatula, transfer each batch to another bowl, taking care to clean well under the blade.
  • The paste is ready to use, or it can be covered and refrigerated for up to 3 days. For long-term keeping, divide it into 1/2- and 1-pound portions (a scant 1 cup paste weighs 1/2 pound), wrap in a double layer of plastic wrap, and freeze for up to 2 months.
  • To make giò the old-fashioned way, you must first hand pound the meat and then add the marinade ingredients. Use a large Thai stone mortar and pestle, which can be found reasonably priced at Asian restaurant-supply and housewares shops. My 9-inch-wide mortar has a 5-cup capacity bowl that is 6 1/2 inches wide and 4 inches deep. The 8-inch-long pestle is about 2 inches wide at the base. Select a pestle that fits your hand comfortably. (Stone pestles, heavier than the wooden one mentioned in the chapter introduction, make pounding easier.)
  • To minimize physical strain, I sit on a low kitchen stool and put the mortar on a solid table or box, with the rim of the mortar slightly below my knee. You may also sit on the floor with the mortar between your legs. Place a thick towel under the mortar to protect the work surface. Regardless of your setup, you want to sit astride the mortar and efficiently use your upper body strength to work the pestle. It takes about 35 minutes to produce a full batch of paste, so you may want to halve the recipe. To yield giò that is close to the traditional version, pound pork (see Note, above), which works better than chicken. The beef mixture used for making Beef, Dill, and Peppercorn Sausage (page 161) is also a good candidate for hand pounding.
  • Cut the meat into 1/4-inch-thick strips as instructed in the recipe. Blot the meat dry with paper towels to prevent it from sliding around the mortar.
  • In a small bowl, whisk together the marinade ingredients. Set aside near the pounding station. (Hand-pounded giò doesn't traditionally call for leavener and starch, but I find that they guarantee a silkier result that is neither too dense nor too firm.)
  • Put about 1/2 pound of the meat (or a quantity you find manageable) in the mortar and start pounding with a steady rhythm, pausing only to remove any gristly bits that come loose. After about 4 minutes, the meat should have gathered into a mass and, perhaps, even stuck to the pestle, allowing you to use the pestle to lift the meat from the mortar and pound it down again. Keep pounding for another 2 minutes to make the meat cohere into a smooth mass that resembles a ball of dough. Use a rubber spatula or plastic dough scraper to transfer the meat to a bowl. Repeat with the remaining meat.
  • Add all the marinade ingredients to the meat, stirring with a fork until the marinade is no longer visible. In batches, pound the meat for about 3 minutes longer to combine all the ingredients well. You should hear a suction noise as air is mixed in. The finished paste will feel firm and look ragged, and small nuggets of meat will be suspended in the paste. Transfer the paste to a clean bowl and repeat with the remaining meat.

1 tbsp vegetable oil
25g clarified butter (see Know-how, below)
2 fillet steaks (ideally beef matured for 3-5 weeks), about 140g/5oz each, at room temperature
knob of butter
2large shallots , finely chopped
6medium mushrooms , sliced
2 tsp green and pink peppercorn , crushed
3 tbsp brandy
100ml red wine
200ml good-quality beef stock
3 tbsp double cream

Steps:

  • Heat a frying pan over a medium-to-high heat, then pour in the oil and the clarified butter. Season the steaks with salt and plenty of freshly ground black pepper and cook to your liking (2 mins each side for medium-rare, 3 mins each side for medium, depending on the thickness of your steaks). Be sure to seal the rounded edges, too. Transfer to a plate.
  • Add the knob of butter to the pan, then fry the shallots, mushrooms and peppercorns over a medium heat for 5 mins, until the shallots have softened and the mushrooms browned. Return the steaks to the pan. Heat the brandy in a metal ladle, light with a match then carefully pour into the hot pan, standing as far back as you can. Once the pan has stopped flaming, remove the steaks again.
  • Pour the wine into the pan, turn up the heat and boil rapidly until reduced by half. This will take about 5 mins. Add the stock and reduce again, this time by two-thirds. Stir the cream in to the sauce and allow it to thicken slightly. Check the sauce for seasoning, then return the fillets to the pan to warm through, spooning the sauce over. Serve straight away.

COOKING THE MEAT
1,5 kg meat - veal, lamb or moose calf. for example: back, shoulder
1 large yellow onion
stalk(s) dill - from the dill used for the sauce
1 medium leek
2-3 medium carrots
1 medium parsnip
6-8 peppercorns, whole white
8-10 allspice, whole
4 cloves
4 bay leaves, dried
1 Tbsp thyme, dried
salt
DILL SAUCE
3 bunch dill, fresh
1 Tbsp flour
1 Tbsp butter
500 ml broth, from the cooking of the meat
1-2 veal stock cubes - if needed
200 ml milk, creamy ( 50-50 milk and cream)
2 Tbsp vinegar (12%) * see note!
4 Tbsp sugar
salt and pepper

Steps:

  • 1. Peel and cut the onion into coarse pieces. Clean and cut the leek in oblique pieces.
  • 2. Peel and cut carrots and parsnips in oblique pieces
  • 3. Place the meat in cold water in a large pot and bring to boil.
  • 4. Boil 1 minute maximum. Take up the meat with a slotted spoon and rinse it briefly.
  • 5. Clean the pot and cook the meat in fresh water (remember that there will be space for the vegetables too). Measure how much water you pour in.
  • 6. Add salt, start with 1 teaspoon per liter of water and taste of saltiness later.
  • 7. When the meat has begin to boil, add the onion, vegetables, dill stalks and spices and let simmer for a maximum of 1 hour.
  • 8. If you have bones in your meat, the meat is ready when it detaches from the bone, otherwise you can test it by poking with a fork or a knife.
  • 9. After half an hour, pick up the carrots and parsnip with a slotted spoon. Save them, they will be used again when serving.
  • 10. If the meat should be served the same day you can add 15 minutes of cooking time.
  • 11. If it is to be served the day after, you let it cool in its own juice.
  • 12. Take the meat out of the broth and skim the broth - it will be used for the sauce.
  • 13. Cold broth is easy to skim, if it is warm the fat will float around.
  • 14. But try anyway.
  • 15. If you have cooked the meat the day before, heat it in the broth that is not needed for the sauce.
  • 16. Cut the meat into pieces about 2-3 cm. (about 1 inch)
  • 17. Chop the dill to the sauce - quite nicely.
  • 18. Fry the flour into the butter in a saucepan.
  • 19. Dilute with sifted broth and creamy milk.
  • 20. Taste the broth, if it is not sufficiently strong in flavor, add 1 or 2 bouillon cubes. The sauce should be right on the border between well thickened and thick.
  • 21. Start the flavoring with 1 tablespoon vinegar and 2 tablespoons sugar. Taste so that it's just the right balance between sweet and sour.
  • 22. Season with salt and pepper.
  • 23. If you need more acidity insert very little vinegar. Be careful.
  • 24. When you find a good balance, turn/stir down the dill.
  • 25. It shall be plenty of dill.
  • 26. Now add the meat in to the sauce along with the saved vegetables (from the cocking of meat) and let everything be well heated.
  • 27. Serve steaming hot with potatoes (boiled potatoes).
  • 28. Tip Dill is practically the only spice that one can not take too much of. Dill sauce, for example, tastes dill whether you use one bundle or three, but the taste is much more marked if you are generous with the dill.
  • 29. Chef Leif Mannerström wrote: When it comes Dill-meat is actually the sauce that plays the main role. To cook the meat so that it becomes good is after all not so difficult. To the boiled veal or lamb with dill sauce, you can cook the meat the day before, so that you can concentrate on the sauce. I find it hard to think of drinking anything other than beer or mineral water to Dill-meat. / Leif
  • 30. The following tip are mine Serving tip: It is nice to eat a salad with tomato, cucumber, shredded carrots and chard leaves togheter with Dill-Meat. In this picture the meat is pork.
  • 31. If you have meat on the bone, calculate the double weight. The bone will give the broth more taste. If you cut the meat before cooking, cut a not too small pieces - they will shrink. If you cut the meat before cooking it will speed up the process a bit and the meat will easily absorbe more flavor from the spices.
  • 32. There are many different recipes for this dish. Some uses lemon togheter with the vinegar, some dont have vegetables in, some dont have all the spices. So, if you don like a spice or two - then dont use it. A little bit of lemon in the sauce will ad some freshness. You can take almoste any meat, beaf, veal, moose, lamb, chicken, deer ... you name it. But dont use the good and expensive part (for example fillet) that is overkill. A tough meat that cooks for a long time will be better - and cheaper. You can use tried dill, it is ok. Frozen dill is perfect if you dont have fresh. Good Luck
