3 pounds chuck roast, cut into 1-inch cubes
2 tablespoons all-purpose flour
Salt & pepper
1 sweet onion, diced
1 12-ounce can Guinness (or other stout beer)
2 cups beef broth
1 garlic clove, smashed
3 tablespoons tomato paste
1 celery stalk, cut into thirds
1 teaspoon balsamic vinegar

Steps:

  • Coat the chuck roast in flour and liberally season with salt & pepper.
  • In a dutch oven or large stockpot, heat olive oil to high.
  • Sear the beef for on all sides until golden brown, working in batches if needed.
  • Remove the beef from the pan, leaving any liquid in the pot, and reduce heat to medium.
  • Add onions and cook for about a minute - stirring frequently.
  • Return beef to the pot and add remaining ingredients.
  • Cover the pot and reduce heat to low. Simmer for 2 - 2 1/2 hours, or until beef is tender and liquids have thickened.
  • Remove celery from pot, and adjust seasoning to taste before serving.

Discover a classic recipe for beef short ribs made with Guinness® Draught beer. Our dark-roasted Irish stout lends a rich, deep flavour to these tender ribs.

7.5 litres beef stock
470ml tomato juice
2 cans Guinness® Draught
2 carrots, diced
4 celery stalks, diced
2 chopped onions
4 sprigs of fresh thyme
12 (680g) bone-in short ribs
Canola oil
Salt and pepper to taste

Steps:

  • Preheat oven to 350°F.
  • Season short ribs generously with salt and pepper. Coat your pot with canola oil and pan sear short ribs in batches. When the meat is seared to an amber brown colour, transfer to a roasting pan. In the same pot, sauté carrots, onions and celery for 5 to 8 minutes then transfer to the roasting pan. Add two cans of Guinness® Draught to deglaze the pot over medium heat. Pour this liquid over the short ribs in your roasting pan.
  • Add beef stock, tomato juice and fresh thyme to the roasting pan and cover tightly with foil. Place meat into preheated oven and braise for 2-2.5 hours. The short ribs will slightly pull away from the bone when cooked. Ribs vary in size so cook times may differ.
  • Remove short ribs from the roasting pan and transfer to a plate to rest. Strain the remaining liquid and divide in half. Pour one half of the liquid into a saucepan and reduce over medium/high heat and reduce to create a sauce.
  • When ready to serve, simmer short ribs in the second half of your liquid until tender, approximately 15 minutes. Spoon sauce reduction over the short ribs and serve.

1 tablespoon olive oil
2 pounds beef stew meat, such as beef chuck or round, cut into 1-inch cubes
Kosher salt
Freshly ground black pepper
2 slices bacon, cut into 1/2-inch pieces
1 tablespoon unsalted butter
1 medium yellow onion, large dice
2 tablespoons all-purpose flour
1 1/4 cups Guinness stout beer
2 medium carrots, peeled and sliced into 1/2-inch rounds
1 Bouquet Garni
1 1/4 cups low-sodium beef broth
1 pound steamed red potatoes, quartered (optional)

Steps:

  • Heat the oil in a Dutch oven or large heavy-bottomed saucepan over medium-high heat until shimmering. Meanwhile, season the beef all over with salt and pepper. Add half of the beef to the pan and sear until golden brown on all sides, about 5 minutes. Using a slotted spoon, transfer the meat to a plate; set aside. Repeat with the remaining meat. Add the bacon to the pan and cook until browned and crisp, about 3 minutes. Using a slotted spoon, transfer to the plate with the beef. Reduce the heat to medium, add the butter and onion, and season with salt and pepper. Cook, stirring occasionally, until the onion is soft, about 4 minutes. Add the flour and cook, stirring constantly with a wooden spoon, until no longer raw-tasting, about 2 minutes. Pour in the Guinness and stir to incorporate the flour, breaking up any lumps and scraping up any browned bits from the bottom of the pan. Let the mixture simmer until reduced by half. Return the beef and bacon to the pan along with any accumulated juices and add the carrots and bouquet garni. Add the beef broth and bring to a boil. Reduce the heat to low, cover with a tightfitting lid, and simmer until the beef is tender, stirring halfway through, about 1 hour and 45 minutes. Using a slotted spoon, transfer the beef, onion, bacon, and carrots to a large bowl. Raise the heat to medium-high and gently boil the braising liquid, uncovered, until thickened. Taste and season with salt and pepper as needed. Return the beef, onion, bacon, and carrots to the pan and stir. If you choose, serve with steamed red potatoes.

700 g braising steak, trimmed and cubed
2 tablespoons flour
salt & freshly ground black pepper
2 tablespoons vegetable oil
2 medium onions, thickly sliced
4 medium carrots, thickly sliced
300 ml Guinness stout (you can drink the rest!)

Steps:

  • Season flour with salt and pepper in shallow bowl or pan.
  • Coat beef pieces with flour mixture.
  • Heat oil in saucepan and fry meat and onions until lightly browned (about 4 or 5 minutes).
  • Add carrots to pan.
  • Pour in Guinness, and season to taste.
  • Bring to boil, then cover and simmer 1 hour 30 minutes or until meat is tender and gravy is thick and rich.
