BEEF AND GREEN CHILE ENCHILADAS



Beef and Green Chile Enchiladas image

Try these easy, cheesy ground-beef enchiladas, complete with sassy sauce and mild chiles.

1 lb. lean (at least 80%) ground beef
1/2 cup chopped onion (1 medium)
1 cup frozen corn
1/2 cup sour cream
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
8 oz. (2 cups) shredded colby-Monterey Jack cheese
1 (10-oz.) can Old El Paso™ Enchilada Sauce
6 (8-inch) flour tortillas
Shredded lettuce, chopped tomatoes and additional sour cream, if desired

Steps:

  • Heat oven to 350°F. In 10-inch nonstick skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain. Add corn; cook and stir about 3 minutes or until corn is thawed. Stir in sour cream, green chiles and 1 cup of the cheese.
  • Spread about 1/4 cup of the enchilada sauce in 13x9-inch (3-quart) glass baking dish. Spread about 2 teaspoons enchilada sauce on each tortilla. Top each with 2/3 cup beef mixture. Roll up tortillas; place seam side down over enchilada sauce in baking dish.
  • Drizzle remaining enchilada sauce evenly over filled tortillas. Sprinkle with remaining 1 cup cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.
  • Bake at 350°F. for 45 to 50 minutes or until thoroughly heated. Serve garnished with lettuce, tomato and additional sour cream.

These creamy, green chile chicken enchiladas are simple and delicious. Make them your own by topping with fresh tomatoes, cilantro and a dollop of yoghurt.

1 1/2 cups chicken broth (from 32-oz carton)
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon ground red pepper (cayenne)
3/4 cup Mountain High™ lowfat plain yoghurt
2 cups shredded deli rotisserie chicken
2 cups shredded reduced-fat Mexican cheese blend (8 oz)
1/2 cup sliced green onions
1/4 cup chopped fresh cilantro leaves
1 can (4.5 oz) Old El Paso™ chopped green chiles
2 teaspoons chili powder
8 corn tortillas (5- or 6-inch)
1 cup chopped tomatoes
Additional yoghurt and chopped cilantro, if desired

Steps:

  • Heat oven to 350°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray.
  • In 2-quart saucepan, stir broth, flour, cumin, garlic powder and red pepper with whisk until blended. Cook over medium-high heat about 5 minutes, stirring occasionally, until mixture boils and thickens slightly. Remove from heat; beat in yoghurt until mixed well.
  • In medium bowl, mix chicken, 1 cup of the cheese blend, the green onions, cilantro, green chiles, chili powder and 1/2 cup of the chicken broth mixture. On microwavable plate, cover tortillas with wet paper towel; microwave on High 30 to 45 seconds to soften. Spoon slightly less than 1/2 cup chicken mixture down center of each tortilla. Roll up tortillas; arrange seam side down in baking dish. Top with remaining chicken broth mixture. Spray foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 35 to 40 minutes or until heated through and sauce is bubbly. Uncover; sprinkle with remaining 1 cup cheese blend. Bake uncovered about 5 minutes longer or until cheese is melted. Serve with chopped tomatoes. Garnish with additional yoghurt and cilantro.

These are good beef enchiladas from The Once A Month Cookbook. I also substitute the beef with leftover chicken or turkey too. Nice to have some in the freezer for quick dinners.

1 1/2 lbs lean ground beef (3 3/4 cups browned meat)
1 1/4 cups onions, finely chopped (3/4 cup sauteed)
1 tablespoon chili powder
salt and pepper, to taste
2 cups monterey jack cheese, grated (1 cup)
8 flour tortillas
1 (10 3/4 ounce) can cream of chicken soup
1 1/2 cups sour cream or 1 1/2 cups plain low-fat yogurt
1 (4 ounce) can diced green chilies

Steps:

  • Cook the ground beef, and saute onions until the meat is brown, about 15 minutes. Drain the fat. Combine with chili powder, salt and pepper. Reserve 1 cup cheese in a 1-quart freezer bag to use when serving. Spoon enough meat mixture and cheese on each tortilla to cover a third of it. Roll tortilla beginning at the filled edge. Place seam side down in a 13x9x2-inch baking dish treated with nonstick spray. When tortillas are completed, combine soup, sour cream, and green chilies to make a sauce; pour over tortillas. Cover dish with foil and freeze with bag of cheese taped to it.
  • To prepare for serving, thaw enchiladas and cheese. Bake uncovered in a preheated 375ºF oven for 20 to 25 minutes. The last 10 minutes sprinkle the remaining cheese on top.

  • Cook the ground beef in a skillet on medium-high heat for 5 minutes. Stir frequently, and break up the beef. Then add the chopped green chiles, garlic, and onions. Cook for an additional 5 minutes, stirring frequently. Add the drained black beans, mix well, and remove from the heat.
  • Spray a large rectangular glass pan with cooking spray. Spread a half cup of enchilada sauce on the bottom of the pan. Warm the corn tortillas in the oven for one minute. Remove and then begin to create the enchiladas. One spoonful of filling per corn tortillas, carefully roll, making sure not to tear the tortillas. Place seam side down. Repeat until all the tortillas have been used/filled. Pour the remaining 1-1/2 cups of enchilada sauce over top of the enchiladas. Bake in the oven for 20 minutes.
  • Remove from the oven. Top with 1 cup shredded cheese. Serve immediately and top with green onions and cilantro if desired.
