This recipe makes delicious baked beans + ground beef nachos!

1 tbs of olive oil
1 can of Bush's® Baked Beans
1 small onion diced
1 lb ground beef
1/3 cup of taco seasoning
1/2 cup of water
1 jalapeño pepper sliced
1 bag of tortilla chips
1 handful of chopped cilantro
1 handful of chopped green onions
3 cups of shredded cheese
Sides: Salsa, sour cream.

Steps:

  • 1. Preheat oven to 350 degrees F. 2. Spread chips onto a baking sheet . 3. Heat oil on a large skillet, over medium heat, add onions and saute for about 3 minutes (until soft and transparent). 4. Add the ground beef and brown. 5. Heat chips in the oven for about 3 minutes, remove and set aside. 6. Add the taco seasoning and half a cup of water. Bring to a boil, then simmer for 5 minutes or until most of the liquid has been absorbed. ( You don't want soggy nachos!). 7. Add jalapeno pepper. 8. Add baked beans and mix gently until warm. 9. Spoon bean and beef mixture over the chips. 10. Top with shredded cheese. 11. Bake for 4 minutes, broil for 1 minute (watch closely). 12. Remove the nachos from the oven and sprinkle with cilantro, green onion. 13. Drizzle salsa and sour cream to taste over top. ENJOY

1 Tablespoon olive oil
1 medium onion (- diced)
2 cloves garlic (- diced)
1 pound lean ground beef
1 Tablespoon ground cumin
1 teaspoon red pepper flakes
kosher salt & freshly ground black pepper (- to taste)
1 15 oz. can black beans (- rinsed and drained)
1 8 oz. can Mexicorn (- drained)
1 15 oz. can fire-roasted tomatoes (- drained)
1 small can green chilies
12 oz. tortilla chips (- combination of blue chips and corn chips)
8 oz. sliced cheddar cheese
8 oz. shredded Mexican cheese
sliced cherry tomatoes, avocado slices, sour cream, cilantro (- to serve)

Steps:

  • Heat a medium saucepan on the stove and add olive oil. When hot, add onion and sauté until soft and translucent. Add garlic and cook for 30 more seconds.
  • Add ground beef, cumin, salt and pepper - and cook until brown and crumbled. Drain excess grease and return to pot.
  • Add beans, corn, tomatoes, salsa, and chilies. Stir and continue to cook for about 15 minutes, or until most of the liquid is absorbed. Set aside.
  • Preheat oven to 400 degrees.
  • Line a baking sheet with parchment paper. Layer chips, sliced cheese, meat and bean mixture. Repeat by adding more chips, sliced cheese, meat and bean mixture. Add shredded cheese to the top and bake for approximately 15-20 minutes.
  • To serve, top with cherry tomatoes, avocado slices, sour cream, jalapeno slices, and cilantro.

1 pound ground beef
1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
2 (16 ounce) cans refried beans
2 cups shredded Cheddar cheese
1 (15 ounce) jar salsa
1 (12 ounce) bag tortilla chips
¼ cup chopped iceberg lettuce
1 chopped green onions
1 tablespoon diced tomatoes
1 tablespoon shredded Cheddar cheese
¼ cup diced avocado
1 tablespoon sour cream
1 tablespoon taco sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan; set aside.
  • Heat a large skillet over medium-high heat and stir in the ground beef and onions. Cook and stir until the beef is crumbly and evenly browned. Drain fat. Mix in the taco seasoning, and set aside.
  • Spread the refried beans to cover the bottom of the prepared 9x13 inch pan. Layer the cooked ground beef and onions evenly over the refried beans. Pour the jar of salsa over the ground beef and spread 2 cups shredded Cheddar cheese over the salsa layer.
  • Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with tortilla chips and your choice of fresh toppings.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
¾ cup water
1 (18 ounce) package restaurant-style tortilla chips
1 cup shredded sharp Cheddar cheese, or more to taste
1 (15.5 ounce) can refried beans
1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.

If you're going to do nachos for a big event, they'd better live up to the hype. And so we give you a platter of double-layered nachos that combine ground beef and black beans with heaps of tomato, cheese, scallions, olives and jalapenos. Whatever recipe or toppings you use to build your nacho platter, be sure to assemble them in layer of chips and toppings. This minimizes the number of naked tortilla chips left on the bottom of the plate. This recipe alsp includes a bath of guacamole. To save time, you could substitute purchased guacamole, or leave it out entirely and spoon salsa over the finished nachos.

2 tablespoons canola oil
1 medium yellow onion, diced
6 garlic cloves
1 lb ground beef
1 teaspoon paprika
1 teaspoon chili powder
2 teaspoons dried oregano
1 (398 ml) can black beans
1 (500 g) bag tortilla chips
3 cups tex-mex cheese, shredded
6 scallions, chopped
3 medium tomatoes, cored and diced
1 (398 ml) can pitted black olives, sliced
1/4 cup canned jalapeno slices (jarred)
3 avocados, pitted and skinned
1 lemon, juice of
1/4 cup olive oil
3 tablespoons sour cream
salt & fresh ground pepper
1/4 cup fresh cilantro, fresh

Steps:

  • Heat oven to 350°F.
  • In a large sauté pan over medium-high heat, heat oil. Add onion, then sauté until onion is translucent, about 5 minutes. Add garlic, beef, paprika, chili powder and oregano. Sauté for about 7 minutes, then add beans and set aside.
  • On a rimmed baking sheet, arrange half of the tortilla chips in a single layer. Top with half each of the cheese, scallions, tomatoes, olives, jalapenos, and beef mixture. Top with a second layer of tortilla chips, then repeat layering with remaining topping ingredients.
  • Bake for 10 minutes or until cheese has melted.
  • Meanwhile, in a medium bow, combine avocados, lemon juice, olive oil and sour cream. Use a potato masher to mash ingredients until chunky smooth. Season with salt and pepper.
  • When nachos are done sprinkle with cilantro , then serve guacamole.

1 lb ground beef (or use Italian pork sausages, casings removed)
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 medium green bell pepper, seeded and chopped
1 -2 jalapeno pepper (seeded and finely chopped) (optional)
1 1/2 cups salsa
1 cup corn kernel
1 cup sour cream
2 tablespoons taco seasoning mix (I use 1/2 package)
salt and pepper (to taste)
1 (19 ounce) can black beans (rinsed and drained)
4 cups coarsly crushed tortilla chips (can use more)
3 cups shredded cheddar cheese, divided (or use Monterey Jack cheese)

Steps:

  • Grease a 13 x 9-inch casserole dish or a 3-quart oval baking dish.
  • In a large skillet cook the ground beef with onions, garlic, green bell pepper and jalapeno pepper until completely cooked; drain fat then add in taco seasoning mix (you may add in more than 2 tablespoons if desired) cook stirring for 2 minutes, then season with salt and pepper to taste, remove from heat then mix in salsa, corn and sour cream.
  • Place HALF each of the ground beef mixture, black beans, 2 cups tortilla chips then 1-1/2 cups shredded cheese (or to taste).
  • Repeat with remaining ground beef, beans and then 2 cups crushed tortilla chips, leave the remaining 1-1/2 cups cheese to sprinkle on top the last 5 minutes of cooking.
  • Bake at 425 degrees for about 20 minutes or until just heated through.
  • After cooking sprinkle the remaining shredded cheese on top, you can return to oven to melt if desired.

1/3 cup milk
2 tablespoons butter, melted
1 egg
1 can (4.5 oz) Old El Paso™ chopped green chiles
2 cups shredded Mexican cheese blend (8 oz)
1 lb lean (at least 80%) ground beef
1/2 cup chopped red bell pepper
1/2 cup chopped onion
2 cloves garlic, finely chopped
2/3 cup water
1 package (1 oz) Old El Paso™ original taco seasoning mix
1 can (15 oz) pinto beans, drained, rinsed
1 can (10 oz) Old El Paso™ mild enchilada sauce
Fresh toppings, if desired (chopped tomatoes, cilantro, sour cream, salsa, diced avocado)

Steps:

  • Heat oven to 400°F. Grease bottom and side of 10-inch cast-iron skillet with oil. Heat skillet in oven about 10 minutes or until hot.
  • In medium bowl, stir muffin mix, milk, melted butter and egg just until moistened (batter will be lumpy). Stir in green chiles and 1 cup of the cheese. Spread in hot skillet. Bake 16 to 18 minutes or until light golden brown around edge. Remove from oven; reduce oven temperature to 350°F.
  • Meanwhile, in 10-inch nonstick skillet, cook beef, bell pepper, onion and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is no longer pink; drain. Add water and taco seasoning mix; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened. Add pinto beans; stir until combined.
  • Using the end of a wooden spoon, poke holes in cornbread (about 1 1/2 to 2 inches apart), and pour enchilada sauce over top, spreading sauce to fill holes. Top with beef and bean mixture and remaining 1 cup cheese. Cover with sheet of foil sprayed with cooking spray; bake 25 to 30 minutes or until bubbling around edge and cheese is melted.
  • Cool 10 to 15 minutes before serving. Serve with your favorite fresh toppings.
