BEANS 'N' CARAMELIZED ONIONS

- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels, reserving 2 tablespoons drippings in pan., In drippings, saute onions over medium heat until softened. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in vinegar and brown sugar., In a pot of boiling water, cook green beans, uncovered, until crisp-tender, 4-7 minutes; drain. Add to onions; cook 1 minute, tossing to combine. Stir in bacon; sprinkle with salt and pepper.

CARAMELIZED ONION GREEN BEANS
This recipe came from a Woman's World magazine. It is very good and has a very pretty presentation. (**Updating to say that I made this recipe with canned cut green beans. I simply drained them and heated them in a little broth for about 3-5 minutes and added them to the recipe instead of fresh green beans. They were very good this way...a nice way to dress up canned green beans.)

Steps:
- In skillet, melt 1 Tbsp butter over medium heat. Add onion; cook, stirring occasionally, until starting to brown, 7-10 minutes. Add sugar, salt, and Cajun seasoning. Reduce heat to medium-low; cook, stirring often, until onion is soft and golden brown, 5 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add green beans; cook until tender, 4-5 minutes. (Next time, I will cook longer as mine were not as done as I would have liked them.) Drain well, then add to onion with remaining 1 Tbsp butter. Cook, stirring, until heated through, 1 minute.
GREEN BEANS AND CARAMELIZED ONIONS
This is one of my favorite ways to make green beans. I use canned beans for convenience, but you could substitute fresh or frozen with great results too.

Steps:
- In a large non-stick skillet, cook bacon over medium heat 8 to 10 minutes or until crisp, stirring occasionally. Remove with slotted spoon; drain on paper towels.
- Pour off all but 1-2 tablespoons bacon drippings.
- Add onions; cook over medium-low heat 35 to 40 minutes or until very soft, stirring occasionally.
- Meanwhile, warm green beans in microwave.
- Stir in vinegar and sugar into onions. Increase heat to medium-high; cook and stir 1 to 2 minutes or until liquid is evaporated.
- Stir in green beans and bacon; toss lightly.
- Season with salt and pepper, as desired.
- Serve immediately.

- 1. Heat margarine in large skillet, add onion, sprinkle with sugar. Cook over low heat until onions are golden and tender, about 20 minutes.
- 2. Cook green beans in boiling water for 10 - 13 minutes or until tender. Drain and place in bowl.
- 3. Spray hot beans with vegetable oil spray and sprinkle with Mrs. Dash® Lemon Pepper Seasoning Blend, toss.
- 4. Garnish with caramelized onions.

- Soak the beans: Place the beans in a large bowl and cover completely with cool water. Soak overnight (at least 8 hours). Drain the beans in a colander.
- Cook the beans: Transfer the beans to a medium pot and cover with 1½ inches of water. Add the quartered onion, garlic, rosemary, sage, bay leaf and cloves. Stir gently to combine.
