Easy and yummy! Veggies, beans, and cheese sandwiched in tortillas. You could add or substitute any vegetables that you'd like. Serve with sour cream and rice.

Steps:
- Heat 1 tablespoon oil in a skillet over medium heat, and saute the onion and garlic until soft. Mix in beans, bell pepper, tomatoes, and corn; cook until heated through.
- Spread 6 tortillas with equal amounts of the bean and vegetable mixture. Sprinkle with equal amounts of the Cheddar cheese, and top with the remaining tortillas to form quesadillas.
- Heat 1/4 cup oil in a large skillet over medium-high heat. Place quesadillas in the skillet and cook, turning once, until cheese is melted and both sides are lightly browned.

- In a small bowl, mix beans, tomatoes and green onions. Spread half the tortillas with bean mixture. Sprinkle with cheese; top with remaining tortillas., Heat a griddle over medium heat. Place tortillas on griddle in batches. Cook until golden brown and cheese is melted, 2-3 minutes on each side. If desired, serve with sour cream and salsa.

PORK, BLACK BEAN AND APRICOT QUESADILLA

- Heat a griddle over medium-high heat.
- To assemble the quesadillas: On each of 4 tortillas, layer some of the cheese and then one-quarter of the beans, pork, salsa and scallions. Finish with more of the cheese, then top with a remaining tortilla.
- Cook the quesadillas on the griddle until golden brown on each side. Serve immediately or keep in a warm oven until serving. Serve with sour cream, avocado and cilantro for topping.
- For the pork tenderloin: Mix the honey, balsamic vinegar, ancho chile and garlic together in a large resealable plastic bag. Season the tenderloin with salt and pepper. Place the tenderloin in the bag and squeeze out as much air as possible before sealing. Place the bag in the refrigerator and marinate for at least 1 hour and up to 24 hours.
- For the apricot-serrano salsa: In a bowl, combine the apricot, cilantro, lime juice, serrano and onion. Season the salsa with salt and pepper. Cover and refrigerate.
- Prepare a grill for medium-high heat.
- The key to grilling a pork tenderloin evenly is to roll it to each of its 4 sides while cooking. Grill the tenderloin on the first side for about 5 minutes (times vary per grill, so be careful not to over-char). Roll the tenderloin onto the next side and grill for another 5 minutes. Repeat on all 4 sides, 5 minutes per side, until an instant-read thermometer registers around 150 degrees F. Allow the tenderloin to rest on a platter for about 10 minutes before you slice it, to allow the juices to redistribute. Serve with the apricot-serrano salsa and enjoy!

- Spread cream cheese on one side of the tortilla, completely covering it.
- Top the cream cheese with the black beans and onion.
- Top the beans with the cheddar and fold over.
- Heat skillet to medium.

- While that side is cooking, brush butter on the other side.
- When lightly browned, flip.

- Take 1/2 tablespoon of butter and place in skillet on medium heat.
- Place tortilla in skillet and sprinkle with 1/4 cup grated cheese.
- Scatter with 1/4 cup bean sprouts and top with second tortilla.
- Cook 2 minutes, or until cheese begins to melt and quesadilla holds together.
- Remove quesadilla and quickly add remaining butter to skillet.
- Carefully replace quesadilla back into pan, on uncooked side, and cook 2 minutes more, or until slightly crisp on both sides. Transfer to plate.
- Repeat with remaining tortillas, grated cheese, and sprouts.
- Cool quesadillas 1 to 2 minutes, then cut into 8 wedges.
- Enjoy with hot sauce.
