- In a serving bowl, combine the salad mix, nectarines, ham, cilantro, croutons and cheese. In a small bowl, whisk the dressing ingredients; drizzle over salad.

GRILLED CAESAR SALAD

- Preheat a grill to medium-high heat.
- In a bowl, add the mayonnaise, Worcestershire, lemon juice, mustard, vinegar and garlic and whisk until combined. Slowly whisk in the olive oil. Add the Parmesan and continue to whisk. Season the dressing with salt and pepper.
- Drizzle olive oil on the romaine hearts and season with salt and pepper. Place the romaine cut-side down on the grill and cook until nicely marked, 2 to 3 minutes. Brush the bread slices with olive oil and place on the grill. Cook until grill marks appear on both sides and the bread is crispy, about 5 minutes.
- Spread the sugar out on a small plate. Dip the cut sides of the lemons into the sugar. Place the lemon halves on the grill and cook until slightly charred and grill marked, 2 to 3 minutes.
- Cut the bread into bite-sized pieces. Place the romaine hearts, croutons and lemons on a wooden board and serve with the Caesar dressing.
BBQ HAM CAESAR SALAD
This is a great easy recipe for when you have all that left over ham at Christmas. The original recipe calls anchovies, but unfortunately our family does not like them, and so I use dried bacon bits. I also use garlic croutons when available.

- Heat oven to 400 degrees F.
- Put bread on an ungreased baking sheet, bake until crisp, 30 minutes.
- Baste bread with 1 1/2 tbsp of olive oil.
- return to oven to brown 15 minutes.
- Crush together the garlic and anchovy filets,gradually add 1 tbsp of oil.
- Spread this mixture on the toasted bread& cut into cubes, set aside.
- Cover the egg in boiling water and cook for 1 minute only.
- Tear the lettuces leaves into a salad bowl,worcestershire sauce and any remaining oil In the last minute toss in the bread crumbs and the parmesan cheese.
- Toss and serve- do not let the croutons get soggy.

- To make dressing: Crush peeled garlic through garlic press into a 2-cup glass jar with a lid. Add remaining dressing ingredients, 1 tablespoon cold water, 1/2 teaspoon salt and pepper. Cover tightly and shake well or stir to combine.
- Place sliced romaine in a large bowl. Drizzle on 1/4 cup of dressing. Sprinkle on cheese. Drizzle on a little more dressing if necessary and toss to combine. Divide onto salad plates. Sprinkle with croutons and serve. Refrigerate remaining dressing in a closed container for up to 2 weeks.
