Everything Basting Sauce image

This versatile sauce can be used on any recipe that calls for a basting sauce or mop. Try it the next time you're grilling pork roast or chicken.

1-quart apple cider vinegar
1 teaspoon garlic powder
1 1/2 teaspoons poultry seasoning
6 bay leaves
1 teaspoon crushed red pepper
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon ​lemon pepper
1 teaspoon salt
1 teaspoon black pepper

Steps:

  • Gather the ingredients.
  • Place all ingredients in a medium saucepan and bring to a rolling boil.
  • Cover and allow to cool completely before applying to meat. This sauce can be used with any recipe that calls for a basting sauce .

HOLY SMOKE BASTING SAUCE



Holy Smoke Basting Sauce image

This Southern-style basting sauce recipe is excellent for large cuts of pork and chicken when smoking or grilling. It adds moisture and flavor.

1 gallon (3.8 liters) apple cider vinegar
1 quart (900 ml) Worcestershire sauce
10 ounces (300 ml) lemon juice
3 tablespoons (45 ml) black pepper

Steps:

  • Mix all ingredients in a large pot.
  • Bring to a hard boil for 10 minutes.
  • Use for basting meat while smoking or grilling. If you don't need this much basting sauce, you can cut the recipe down by half or even to one quarter.

Use this basting liquid to make Black Lacquered Turkey.

1 turkey gizzard, chopped
1 turkey neck, chopped
1 turkey heart, chopped
1 bay leaf
1 teaspoon paprika
1/2 teaspoon coriander
1 clove garlic
Coarse salt and freshly ground pepper
1 cup apple cider

Steps:

  • In a medium sauce pan, combine gizzard, neck, heart, bay leaf, paprika, coriander, garlic, salt, and pepper with 4 cups water. Bring to a simmer, and continue to simmer until the turkey pieces are cooked through, about 20 to 25 minutes. Add apple cider, stir, and remove from heat.

TAILGATOR'S BABY BACK RIBS



Tailgator's Baby Back Ribs image

1/2 cup Tailgator's Rib Rub, recipe follows
4 slabs back ribs, skin removed
1 hickory log
Basting Liquid, recipe follows
1 1/2 cup BBQ sauce, your favorite
1 cup brown sugar
1 cup kosher salt
1 cup paprika
3/4 cup garlic powder
1/2 cup onion powder
1/2 cup chili powder
1/2 cup cayenne pepper
1/4 cup dried oregano
1/4 cup ground black pepper
1/4 cup ground cumin
2 tablespoons lemon juice
2 tablespoons Worcestershire sauce
2 dashes hot sauce
Water

Steps:

  • Using 1 tablespoon of Tailgator's Rib Rub, evenly season the rack of ribs on both sides, Do not over-season; this may cause a crust on ribs. Allow seasoned ribs to rest covered in the refrigerator for at least 4 to 5 hours.
  • According to your smoker's manufacturer's instructions, smoke the ribs concave side down for 2 hours and 45 minutes at 220 degrees F, using hickory wood.
  • After the first hour of smoking, begin to spray ribs with basting liquid every half hour until cook cycle is finished.
  • After the cook cycle, remove ribs, mop them with BBQ sauce and allow to rest.
  • In a large foil pan place cooking racks on the bottom and fill with water just below the rack line. Place the ribs so the bones are vertical and layer them in the pan. Do not allow the meat side of the ribs to touch the walls of the pan.
  • Place foil pan over medium-high heat and cook for 7 minutes. Remove ribs from the pan and place ribs on a medium-high grill and mop with BBQ sauce, turning frequently in order to not allow the sauce to burn.
  • Mix all above ingredients by hand. Store in an air-tight container.
  • Place first 4 ingredients in a labeled spray bottle. Add water to fill the spray bottle and shake to mix thoroughly. Refrigerate until ready to use.

This is a recipe that was given to me by my next door neighbor who makes the most unbelievable smoked ribs....this is the sauce recipe that he uses to baste them..this makes the best tasting smoked ribs around!

1/3 cup flat beer
1/8 cup fresh lemon juice
1/8 teaspoon liquid smoke
2 tablespoons steak sauce
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 tablespoon brown sugar
1/2 teaspoon onion powder
1 tablespoon chopped fresh garlic
1 tablespoon chopped shallots or 1 tablespoon finely chopped green onion

Steps:

  • In a bowl, combine all ingredients.
  • Baste on ribs once every half hour while smoking.
