½ cup loosely packed fresh basil leaves
¼ cup extra-virgin olive oil
3 tablespoons red-wine vinegar
2 teaspoons honey or agave syrup
2 teaspoons Dijon mustard
½ teaspoon ground pepper
¼ teaspoon salt

Steps:

  • Combine shallot, basil, oil, vinegar, honey (or agave), mustard, pepper and salt in a blender. Puree until smooth.

  • Add everything except olive oil to a blender and blend while streaming in olive oil.

For a vegan version, substitute maple syrup for the honey.

2 garlic cloves, minced
1 1/2 tablespoons Dijon mustard
2 tablespoons honey
1/4 cup red wine vinegar

1 1/2 ounces fresh basil leaves (approx 1 cup chopped leaves)
1/2 teaspoon salt
1 1/2 teaspoons cracked pepper
1 cup olive oil

Steps:

  • Combine all of the ingredients, except oil, in a food processor and blend. Slowly add olive oil in a slow, thin, stream, until creamy.
  • Season to taste and serve, or refrigerate up to 3 days.

1/3 cup red wine vinegar
1/2 cup chopped fresh basil leaf
1 tablespoon minced garlic (4 to 6 cloves)
1 tablespoon minced fresh tarragon
2 -4 teaspoons chili paste with garlic
1/2 cup olive oil

Steps:

  • Combine vinegars, basil, garlic, tarragon, and chili paste in food processor or blender.
  • With machine running slowly add the olive oil.
  • Chill until ready to use or up to overnight.
