SUMMERY CHICKEN-AND-RICE SOUP
When shoulder season hits and the weather starts to change, what about the glut of late-summer vegetables you still have in your fridge? A recipe like this chicken and rice soup that's packed with vegetables including summer squash and Swiss chard can really come in handy.

Steps:
- Heat oil in a medium saucepan over medium-high until shimmering. Add onion, garlic, and celery; season with salt and pepper. Cook, stirring occasionally, until onion is translucent, 4 minutes. Add rice and broth; bring to a boil. Add squashes and return to a boil, then reduce heat and simmer 10 minutes.
- Stir in greens; simmer until all vegetables are very tender, 4 to 5 minutes. Stir in chicken and heat through, about 2 minutes; season to taste. Serve, drizzled with oil and sprinkled with cheese and basil.

- Prepare Fast Chicken Soup Base. Bring to a simmer.
- Add these, then simmer until tender, 10-20 minutes: 3/4 cup long-grain white rice.
- Before removing from heat, stir in: 1 cup (5 ounces) frozen green peas and 1/2 cup chopped fresh parsley.
- Final touch: Add salt and pepper, to taste.

Steps:
- Heat olive oil in large skillet over medium-high heat.
- Add chicken strips and cook until they are just done (4 to 6 minutes).
- Add onion, red pepper slices, and fresh garlic.
- Continue cooking, stirring occasionally, until vegetables barely tender (4 to 5 minutes).
- Add water, tomatoes, and rice.
- Cover pan and continue cooking until mixture just comes to a boil.
- Reduce heat to medium low and continue cooking until rice is tender or liquid is absorbed (about 10 minutes).
- Remove cover; stir in basil leaves and Parmesan cheese. Refrigerate leftovers.

BASIL CHICKEN SOUP
Low fat and low calorie in this wonderful tasting soup. I have been making it in my slow cooker adding 2 chicken drumsticks on high for 4 hours. Remove the chicken to debone; omit the flour and it is excellent. I add my frozen bail last 1/2 hour.

Steps:
- In a 2 to 3 quart pan, combine butter, onion, and garlic.
- Stir occasionally over medium heat until onion is limp and slightly tinged with brown, about 10 minutes.
- Stir in flour to coat onion.
- Gradually stir in broth, and bring to a boil on high heat.
- Add potato and carrots; cover and simmer over low heat until potato is tender when pierced, 15 to 20 minutes.
- Add chicken; cover and simmer just until chicken is hot, 1 to 2 minutes.
- Stir in basil.
- Ladle into bowl and offer cheese to add to taste.

- Heat oil over medium heat and add garlic, celery, onion, carrot and basil.
- Cover and cook for approximately 5 minutes, stirring occasionally.
- Stir in rice and tomatoes and cook uncovered for 5 minutes, stirring occasionally.
- Stir in remaining ingredients and heat to a boil.
- Reduce heat and cover and simmer for 20 minutes or until rice is tender.

- 1. Combine the tomato soup, chicken, rice, basil, and 2.5 cups of water in a large soup pot. Bring the soup to boil over medium heat, reduce the heat to low and cook for 10 minutes. 2. Serve soup in bowls and top with fresh chopped tomato. Serve soup with French bread.

- Heat oil in large soup pot or dutch oven on medium heat. Add onion, garlic, lemongrass roots and shells, galangal, ginger, and chilies. Cook 3-5 minutes, or until onion starts to soften.
- Add stock, fish sauce, lime juice, kaffir leaves, salt, and chicken breasts.. Bring to boil for a few minutes to release flavors, then reduce heat to simmer for 30 minutes.
- Remove galangal and hard lemongrass shells. Remove cooked chicken, allow to cool, then shred with fork and return to soup.
- Add precooked forbidden rice prior to serving. Rice will release color and blacken soup if added before cooking.
