SIMPLE SPANISH RICE



Simple Spanish Rice image

This is something my grandmother used to make, but she never used a recipe. It took me a long time to figure out just what she did. I think this is as close to hers as it gets. It's just a simple rice side dish, but if you add a pound of cooked ground beef or chicken you can serve it as a meal. I hope you enjoy.

¼ cup vegetable oil
1 ½ cups instant rice
1 onion, chopped
1 green bell pepper, chopped
1 (16 ounce) can diced tomatoes
1 (11 ounce) can vegetable juice (such as V8®)
1 (8 ounce) can tomato sauce
½ cup water
1 tablespoon white sugar
1 teaspoon lemon juice
1 teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Heat oil in a skillet over medium heat. Cook and stir rice, onion, and bell pepper in hot oil until the vegetables are slightly tender and rice is lightly browned, 7 to 10 minutes.
  • Stir diced tomatoes, vegetable juice, tomato sauce, water, sugar, lemon juice, salt, and pepper into the rice mixture. Bring to a simmer, reduce heat to medium-low, and cook at a simmer until the liquid is absorbed, about 20 minutes more.

1/4 cup butter, cubed
2 cups uncooked instant rice
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup boiling water
2 beef bouillon cubes
1 medium onion, chopped
1 garlic clove, minced
1 bay leaf
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a saucepan, melt butter over medium heat. Add rice; cook and stir until lightly browned. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer until the liquid is absorbed and rice is tender, 10-15 minutes. Remove bay leaf before serving.

  • Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

1 cup uncooked regular long-grain white rice
2 1/2 cups water

Never before have they been measured, always a 'handful of this and equal parts of this' until it looked right. I hope you enjoy it. It has become a family favorite in our home. 2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.
