8 -12 boneless skinless chicken thighs
3 tablespoons barbecue sauce
2 tablespoons Worcestershire sauce
2 tablespoons vinegar
2 tablespoons soy sauce
3 tablespoons brown sugar
1 teaspoon spicy brown mustard
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • In a mixing bowl, combine BBq sauce, worcestershire, vinegar, soy sauce, brown sugar, mustard, salt, and pepper. Blend well.
  • Lay chicken in 1 layer in a well greased baking dish.
  • Pour sauce evenly over top of chicken.
  • Bake at 350 degrees for 40 minutes.
  • Turn over and bake an additional 35 minutes.

This is easy and really good! This makes a great meal served with fries and coleslaw! If you are in a rush you can omit browning the chicken and increase the cooking time slightly, I find that the sauce will be thinner from the chicken juices if you do not brown the chicken first, browning also adds to the flavor of this dish --- if possible use only French's mustard for this, for some reason other brands of prepared mustard are just not as good. Adjust all ingredients to taste if you prefer a sweeter sauce add in more brown sugar.

2 lbs fresh chicken thighs
seasoning salt (can use white salt)
fresh ground black pepper
3 -6 tablespoons oil (or as needed)
1 -2 tablespoon fresh minced garlic
1 onion (sliced or coarsley chopped)
1 small green bell pepper, seeded and finely chopped (optional)
1/4-1/3 cup french's yellow mustard
1/4 cup ketchup
1/3 cup cider vinegar
1 tablespoon liquid smoke
1/3 cup dark brown sugar
1 tablespoon chili powder (or to taste)
1 pinch cayenne pepper (optional or adjust to suit heat level)
fresh ground black pepper (to taste)
1/4 teaspoon seasoning salt (optional or to taste) or 1/4 teaspoon white salt (optional or to taste)

Steps:

  • Grease a large casserole dish.
  • Sprinkle the onion slices and green pepper (if using) on the bottom of the baking dish.
  • Season the chicken with salt and pepper, then brown in oil on both sides.
  • Place into the casserole dish on top of the onion slices.
  • In a bowl whisk together the mustard, ketchup, cider vinegar, liquid smoke, brown sugar, chili powder, fresh garlic, cayenne (if using) and black pepper; mix well to combine, then season sauce with 1/4 teaspoon salt if desired.
  • Pour over the browned chicken thighs.
  • Using hands turn the chicken to coat well in the sauce.
  • Bake at 350 degrees F for about 40 minutes or until the chicken is completely cooked through and tender.

1-1/2 teaspoons salt
1 teaspoon paprika
1/2 teaspoon ground black pepper

8 bone-in chicken thighs (about 3 pounds)
1/2 cup Open Pit® Original Barbecue Sauce

Steps:

  • Preheat oven to 350°F. Line a rimmed baking sheet with aluminum foil. Stir together brown sugar, salt, paprika, pepper and garlic powder in small bowl.
  • Place chicken thighs on baking sheet. Season with spice mixture. Bake 20 minutes. Baste with barbecue sauce. Continue baking until chicken is cooked through (180°F), about 40 minutes, basting with sauce as desired.

1 ½ cups brown sugar
½ cup barbeque sauce
½ cup ketchup
½ cup honey
¼ cup soy sauce
8 (5 ounce) boneless, skinless chicken thighs

Steps:

  • Whisk together brown sugar, barbecue sauce, ketchup, honey, and soy sauce in a large glass or ceramic bowl. Set aside 1/2 cup of the mixture and refrigerate for basting. Add chicken thighs to the remaining marinade and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 2 to 6 hours.
  • When ready to cook, preheat the oven to 425 degrees F (220 degrees C).
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Place chicken in a glass baking dish.
  • Bake in the preheated oven, basting occasionally with the reserved 1/2 cup marinade, until chicken is no longer pink in the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

8 chicken thighs, about 3 pounds, skin-on, bone-in
2 teaspoons paprika
1 teaspoon kosher salt
1 1/2 teaspoons garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
3/4 cup barbecue sauce
1/4 teaspoon cayenne

Steps:

  • 1. Preheat your oven to 400 degrees Line a large rimmed baking sheet with nonstick foil or parchment paper and spray with nonstick cooking spray.
  • 2. In a small bowl, combine paprika, salt, garlic powder, onion powder and black pepper.
  • 3. Pat chicken dry with paper towels and rub in the seasoning blend, then arrange chicken skin side up on the prepared baking sheet. Pour about ¾ of a cup of bbq sauce into a small bowl and brush the chicken lightly with the sauce on both sides, finishing with the chicken skin side up. Set the remaining bbq sauce aside to use later (do not leave the brush in the sauce).
  • 4. Bake in the 400 degree oven for 20 minutes. Remove chicken from the oven and, using a clean brush, baste with the reserved sauce. Bake for 20 minutes more. Chicken should register 165 degrees F on a meat thermometer.
  • 5. Switch to the broiler and broil for 2-3 minutes or until the sauce caramelizes.
  • 6. Remove from the oven and let the chicken rest for 5-10 minutes before serving.

I love barbecue chicken and I love this way of baking it in the oven during the winter. I like to use chicken thighs, but you could use chicken breasts as well if you prefer those.

2 -3 lbs boneless skinless chicken thighs
3 tablespoons butter
1 medium sweet onion, finely chopped
1 tablespoon garlic powder or 1 tablespoon fresh minced garlic
3/4 cup ketchup
1/2 cup water
1 tablespoon apple cider vinegar
1 teaspoon lemon juice
4 tablespoons brown sugar
1 tablespoon buffalo wing sauce
1 1/2 tablespoons Worcestershire sauce
2 tablespoons prepared mustard

Steps:

  • Preheat oven to 375 degrees F.
  • In a large nonstick skillet, melt butter over medium heat being careful not to burn.
  • Add the chicken and lightly brown.
  • Remove chicken and place in a 9x13-inch baking dish.
  • Add onion (if using fresh garlic in place of garlic powder, also add) to the skillet and saute lightly for about 2-3 minutes.
  • Meanwhile, in a medium bowl, combine the remaining ingredients and mix well.
  • Pour the mixture into the skillet and stir to combine.
  • Simmer the sauce for about 15 minutes to allow the flavors to blend nicely.
  • Pour sauce over the chicken, then flip pieces so that both sides of the chicken are coated with the sauce.
  • Bake the chicken uncovered for about 30-40 minutes or until the chicken is no longer pink and the juices run clear.
