MACARONI SALAD WITH BARBECUE CHICKEN



Macaroni Salad with Barbecue Chicken image

Kosher salt
8 ounces elbow macaroni
1/3 cup mayonnaise
1/3 cup sour cream
1/3 cup barbecue sauce
2 tablespoons relish
1 tablespoon yellow mustard
1 teaspoon sugar
2 cups cubed barbecue rotisserie chicken
1 red bell pepper, diced
3 stalks celery, chopped
1/2 red onion, diced
1/4 cup chopped fresh parsley
Freshly ground pepper

Steps:

  • Bring a medium pot of salted water to a boil. Add the macaroni and cook as the label directs. Drain and rinse under cold water; shake off the excess.
  • Whisk the mayonnaise, sour cream, barbecue sauce, relish, mustard and sugar in a large bowl. Add the macaroni, chicken, red bell pepper, celery, red onion and parsley. Season with salt and pepper and toss to coat. Chill before serving.

PORK BBQ MACARONI AND CHEESE

One 3- to 5-pound pork butt
BBQ Rub, recipe follows
4 cups apple cider vinegar
2 cups cooked macaroni
8 ounces Cheese Sauce, recipe follows
2 ounces BBQ Sauce, recipe follows
1 ounce smoked Cheddar, shredded
1/2 green onion, chopped
1/4 cup ancho chile powder
1/4 cup bourbon paprika
1/4 cup salt
1/4 cup granulated sugar
3 tablespoons brown sugar
1 1/2 tablespoons crushed red pepper
3/4 teaspoon ground cumin
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
2 pounds brown sugar
4 cups ketchup
1 cup red wine vinegar
1/4 cup dry mustard
1/4 cup hot sauce
4 teaspoons bourbon paprika
4 teaspoons ground black pepper
4 teaspoons salt
2 dashes Worcestershire sauce
1 stick (8 tablespoons) butter
1/4 cup all-purpose flour
4 cups milk
2 cups heavy cream
1 tablespoon salt
1/2 tablespoon black pepper
2 pounds shredded white Cheddar

Steps:

  • Preheat the oven to 250 degrees F.
  • Rub the pork with the BBQ Rub, then place in a pan with the vinegar. Cover with plastic and foil, then roast for 3 to 4 hours. Let cool, then remove the fat cap and bone and shred the pork.
  • Heat 3 ounces pulled pork. Place the macaroni and Cheese Sauce in a saucepan and cook on medium heat until hot. Place the macaroni and cheese in a bowl, then top with the pork, BBQ sauce, smoked Cheddar and green onion. (Reserve the remaining ingredients for more servings or another use.)
  • Combine the chile powder, paprika, salt, granulated sugar, brown sugar, crushed red pepper, cumin, garlic powder, onion powder, cinnamon and ginger in a bowl.
  • Place the brown sugar and ketchup in a bowl and mix well. Add the vinegar, mustard, hot sauce, paprika, pepper, salt, Worcestershire and 1 cup water and continue to mix until well blended and the sugar has dissolved.
  • Melt the butter in a pot, then add the flour, stirring until smooth. Cook for 3 minutes. Add the milk, cream, salt and pepper. Cook on medium heat, stirring often, until thickened. Turn off the heat and add the cheese. Stir until melted.

  • Cook 8 ounces elbow macaroni as the label directs; drain and rinse under cold water. Whisk 1/3 cup each mayonnaise, sour cream and barbecue sauce, 2 tablespoons relish, 1 tablespoon yellow mustard and 1 teaspoon sugar in a large bowl. Add the macaroni, 2 cups cubed barbecue-flavored rotisserie chicken, 1 diced red bell pepper, 3 chopped celery stalks, 1/2 diced red onion and 1/4 cup chopped parsley. Season with salt and pepper and toss. Refrigerate at least 1 hour.

This super easy but delicious dish was one of our favorites when we were kids. It was sometimes served as the main meal but is also good as a side dish. I sometimes make it when we barbecue outdoors and have used it as a casserole for covered dish dinners.

1 1/2 lb lean ground beef
28 oz barbecue sauce, we like traditional flavored sauce
28 oz water
12 oz elbow macaroni

Steps:

  • 1. In a large deep skillet, brown ground beef. Drain off any excess grease.
  • 2. Add barbecue sauce
  • 3. Add Water, mixing well.
  • 4. Bring mixture to a slow simmer
  • 5. Stir in Elbow macaroni and stir about every 10 minutes to prevent sticking.
  • 6. Cook until macaroni is cooked about 20 minutes.

1 teaspoon butter or 1 teaspoon extra virgin olive oil
1/2 cup chopped onion
8 ounces chicken, shredded
1/4-1/2 cup barbecue sauce
1/4 milk
1 (8 ounce) package sharp cheddar cheese
1 (8 ounce) package monterey jack cheese
1 (8 ounce) package cream cheese

Steps:

  • Boil water and cook pasta according to directions; set aside.
  • Heat a small skillet; place the pat of butter in it; melt it; add the onions and cook until translucent.
  • Add chicken and cook until chicken is hot.
  • Chop or shred the blocked cheese. Set aside.
  • Combine the chicken; add macaroni; toss the barbecue sauce in making sure that it covers all of it.
  • In a large pot add the milk and all the cheeses and melt it, folding the pasta in as it heats to a bubbling.
  • Add salt and pepper to taste.
  • Serve hot.
