CORNBREAD MUFFINS
Cornbread is the epitome of Southern food! Turn a skillet of hot cornbread into perfectly portioned muffins, and it's the perfect grab-and-go side at the BBQ. Make a batch of these to take to parties, potlucks, or as a side dish for a weeknight meal. It's the perfect accompaniment to a bowl of soup, stew, or chili.

- Preheat oven to 450ºF degrees. Grease a 12-muffin muffin tin and set aside.
- Add all dry ingredients to a bowl and whisk together. Set aside.
- Then, whisk an egg in a medium bowl, and add the remaining wet ingredients: vegetable oil, buttermilk, and cornmeal mix.
- Pour the dry ingredients into the wet ingredients and stir to combine.
- Evenly fill muffin tins ¾ of the way full with the cornbread batter.*
- Place in the preheated oven and bake 20 to 25 minutes or until golden brown.

RICH AND BUTTERY CORN MUFFINS
Made with plenty of melted butter and sour cream, these golden, lightly sweet corn muffins are moist, rich and delicately crumbly. If you can find coarsely ground cornmeal (as opposed the fine stuff that's on most supermarket shelves), you'll also get deep corn flavor and a pleasantly grainy texture. Serve these warm from the oven, slathered with even more butter, or halved and toasted under the broiler to crisp the surface. They'll even keep for a few days if you store them in the fridge, and freeze perfectly for up to a month.

Steps:
- Heat oven to 400 degrees, and generously butter the cups and tops of a muffin tin. (The muffins will overflow, and those crisp edges are delicious.)
- In a large bowl, whisk together cornmeal, flour, granulated sugar, baking powder, salt and baking soda.
- In a separate bowl, whisk together melted butter, sour cream, milk and eggs. Fold butter mixture into dry ingredients, then scoop batter into muffin tin (it will be very full). Sprinkle each muffin top with Demerara sugar.
- Bake until golden on the edges, 18 to 22 minutes. Cool on a wire rack for 10 minutes, then remove from muffin tin and cool to room temperature. Serve with even more butter.

I used to make these years ago when my children were small and they loved them. I recently ran across the recipe again and decided to make them as an appetizer and they were well received. Also great for lunch/dinner.

Steps:
- In a skillet, cook beef over medium heat until no longer pink; drain and place in a bowl.
- Add brown sugar, ketchup, Worcestershire sauce, mustard, salt, pepper and garlic powder.
- Prepare corn bread mix according to package directions. (The water & egg(s) in ingredients can vary from different mixes, so precise amounts are not indicated in list of ingredients.).
- Fill greased muffin cups with 2 tablespoons of batter.
- Top each with 2 tablespoons beef mixture; sprinkle with cheese.
- Top with remaining corn bread mix.
- Bake at 400°F for 12-15 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pan to a wire rack.
- Serve warm.
- Refrigerate leftovers.

- Preheat the oven to 350°F degrees. Line a muffin pan with paper liners or spray with non-stick cooking spray. (I prefer to use non-stick cooking spray so the muffins get nice and crisp on the edges.)
- In a medium bowl, break up the eggs with a whisk. Whisk in the honey, and then the milk. Set aside.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix; it's okay if there are a few lumps. Spoon the batter evenly into the prepared muffin pan, filling each cup about 3/4 full.
