GRANDMA BARBARA'S CHEESY POTATOES

This was my grandmother's recipe. No family event was complete without it! After she passed away, my Mother (her daughter-in-law) took over duties. You can't go wrong with cheesy potato goodness...

8 medium potatoes
1/2 lb extra sharp cheddar cheese
1 c milk
1 c whipping cream
1 tsp dry mustard
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees F. While oven is heating, cook potatoes in their skins in a large pot of boiling water just until cooked through. Peel and grate.
  • 2. Heat milk and cream in a saucepan and gently add cheese until it's thoroughly melted. Add mustard, salt and pepper.
  • 3. Spray a 9x13-inch pan with cooking spray. Add potatoes, and pour cheese sauce over top. Bake covered for about an hour. Toward the last 10 minutes uncover to slightly brown top.
  • 4. Please note, I divided this recipe into two batches, freezing half for later. That's why I used an 8x8-inch pan (the other is in the freezer, and has a bit less than half the recipe in it. FYI)

6 large potatoes, peeled and thinly sliced
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 cup whole milk
2 cups shredded cheddar cheese
Minced fresh parsley

Steps:

  • In a large nonstick skillet, cook potatoes in butter until crisp-tender and lightly browned. Sprinkle with salt and pepper. Pour milk over all; cover and cook until milk is absorbed. Sprinkle with cheese; stir until melted. Garnish with parsley.

Barbara's Panko Crusted Chicken With Potatoes Cheese and Onions image

I made this on a whim. I hope you enjoy it as much as we did. Make sure the potatoes and onions are sliced thin or they may not be cooked to your liking. Enjoy :) Prep time does not include refrigeration time.

4 boneless skinless chicken breasts
16 ounces light sour cream
1 (1 1/4 ounce) package onion soup mix
1 cup milk
4 large red potatoes, sliced 1/4-inch thick
1 small onion, sliced 1/4-inch thick
2 tablespoons olive oil
salt and pepper
2 cups cheese, shredded, I used a Mexican blend
1 1/2 cups panko breadcrumbs

Steps:

  • Rinse chicken breasts and set aside.
  • Combine sour cream and onion mix as indicated on package.
  • Combine 1 cup sour cream/onion mixture with 1 cup milk; stir until mixed well.
  • Pour mixture in a large zipper top baggie; add chicken.
  • Refrigerate overnight or at least 4 hours.
  • Take chicken out of refrigerator at least 1/2 hour before preparing recipe.
  • Preheat oven to 350 degrees Fahrenheit.
  • Slice potatoes and onion.
  • Place potatoes and onion in a medium sized bowl; toss with olive oil, salt, pepper, and shredded cheese.
  • Place the potato mixture in a large baking dish.
  • Put the Panko bread crumbs in a shallow bowl.
  • Take the chicken out of the sour cream mixture, wiping off the excess as you go.
  • Press into Panko bread crumbs until fully coated on both sides.
  • Place on top of the potato/onion mixture.
  • Bake for 1 hour at 350 degrees Fahrenheit.

I got this recipe out of the "Fix it and Forget it" cookbook. I never would have thought to use cheddar cheese soup but trust me, it works! This is such an easy way to use up leftover ham. This recipe is easily halved if needed.

  • Combine soup and water. Pour over layers in pot.

1 pkg (28-32 oz.) shredded hash browns
2 tablespoons dried minced onions
1 tsp salt
1/4 tsp pepper
1 can cream of chicken soup
16 oz sour cream
1 stick (1/2 cup) melted butter
8-10 oz shredded cheddar
2 cups crushed corn flakes
1/2 stick butter

Steps:

  • In a large casserole dish combine everything except for the corn flakes and 1/2 stick butter.
  • Bake at 350°F for 45 minutes.
  • Combine crushed corn flakes and 1/2 stick (1/4 cup) melted butter. Sprinkle on top and bake 10 more minutes.

Mom's Cheese Potatoes were a Sunday staple at our house. It's not hard to see why. They are so yummy, quick and easy to make, and are very inexpensive. You will love this recipe.

6 russet potatoes (peeled and cubed)
10.5 ounces cream of chicken soup (1 can)
¼ cup sour cream
¾ cup shredded cheddar cheese
2 Tablespoons butter (melted)
2 Tablespoons chopped onion

Steps:

  • Cut up potatoes into cubes and boil them until they are fork tender.
  • In a medium sized mixing bowl, mix together soup, sour cream, cheese, butter and onion.
  • Place cooked potatoes in a 9 x 9 inch glass pan.
  • Pour soup/cheese mix over cooked potatoes and mix in a little bit.
  • Bake uncovered for 35-40 minutes at 350 degrees.

1 (2 lb) bag frozen hash browns (shredds or cubes)
1 pint half-and-half cream
1/2 cup butter
3/4 lb Velveeta cheese, cubed
2 cups shredded sharp cheddar cheese

Steps:

  • Thaw hash browns for at least one hour.
  • Heat half& half, butter and cheeses over low heat until melted.
  • Pour over potatoes and mix lightly.
  • Pour into greased oblong baking dish, let stand 1 hour.
  • Bake at 350 degrees 1 hour or until browned and bubbly.
