The Banbury cake reigns in the Midlands. Try this quick recipe for a teatime treat, lovely with a cup of Earl Grey

50g unsalted butter , softened
1 tbsp English honey
½ tsp freshly grated nutmeg
½ tsp ground cinnamon
100g currants
50g candied orange peel
plain flour , for dusting
500g pack all-butter puff pastry
1 egg white , beaten
1-2 tbsp nibbed sugar or crushed rough-edged sugar cubes

Steps:

  • Cream the butter and honey together with the spices. Add the currants and the candied peel and mix well. On a lightly floured surface roll out the pastry to the thickness of a £1 coin and cut out 10 x 10cm circles, re-rolling any trimmings. Divide the filling between the circles.
  • Bring up the edges of the pastry to enclose the filling and crimp the edges of the pastry together to look like little purses. Turn the parcels over, with the folds underneath. Roll each parcel out gently to an oval shape, taking care not to expose the filling.
  • Heat the oven to 180C/160C fan/gas 4. Place the cakes on a baking sheet lined with non-stick paper. Brush with the egg white and sprinkle with sugar. Cook for 25-30 mins until cooked and crispy. Turn the oven down if the tops brown too quickly.
  • When cooked, transfer to a wire rack and allow to cool a little before eating. When cold, they're excellent spread with a little salted butter.

This recipe came from my son's mother-in-law, Trudy Rawls. My husband is a big time blueberry lover, so he made sure we got this recipe. You could use any other flavor pie filling. But around my house, it has got to be blueberry.

CRUST:
1 c flour
1 stick butter, melted
1 c pecans, finely chopped
FILLING AND TOPPING:
1 -8 oz. pkg cream cheese, room temperature
3/4 box confectioners' sugar
1- 12 oz tub of cool whip, thawed
1 can(s) blueberry pie filling

Steps:

  • 1. Preheat oven to 350 degrees. Mix the crust ingredients together and press into a greased 9 x 13 inch pan. Bake at 350 degrees until crisp, about 10-12 minutes.
  • 2. Mix together cream cheese, confectioner's sugar, and Cool Whip. Spread over the prepared crust
  • 3. Gently and evenly top with the blueberry pie filling. Refrigerate until set and ready to serve.

1 (18 ounce) box yellow cake mix
2 (3 ounce) packages strawberry gelatin
2 cups boiling water
1 cup strawberry soda
3 bananas
1 (5 1/2 ounce) box vanilla instant pudding mix
2 1/2 cups half-and-half
1 (9 ounce) container prepared whipped topping

Steps:

  • Mix and bake cake mix by package directions in 9x13 pan.
  • Dissolve gelatin in boiling water, add strawberry soda. Refrigerate until syrupy.
  • Punch holes in cake with something such as a potato peeler and pour strawberry syrup over it.
  • Cover with thickly sliced bananas.
  • Mix vanilla pudding with half and half. Fold in whipped toppng and spread over cake.
  • Refrigerate.
  • Note: Number of bananas are an estimate. Completely cover the cake with bananas.

The ingredients in this may sound strange together but it's actually a light and refreshing dessert. My Mom always made it to take to church potluck dinners and it was always a hit. I needed a quick dessert that would feed a crowd and this one was perfect. My husband is a choc-aholic even likes this one! Origination unknown.

Number Of Ingredients 9

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup margarine, melted
2 (15 ounce) cans blueberry pie filling (depending on brand the size may vary)
3 bananas
8 ounces cream cheese, softened
1 (2 5/8 ounce) box kraft Dream Whip (use 2 individual packages)
1 cup milk
1/2 cup sugar

Steps:

  • For crust: mix graham crackers crumbs, melted margarine and 1/4 cup sugar in a 9x13 glass pan. Press into the bottom of the pan to make a crust. Chill in the refrigerator while making the topping. (Note: You may need to add a little more melted margarine if the crumbs appear to be too dry, however, you don't want the crust to be greasy.).
  • In a deep bowl, mix cream cheese, Dream Whip, milk and 1/2 cup sugar with a hand mixer until smooth.
  • Pour cream cheese mixture over crust.
  • Slice bananas in 1/4 inch slices and cover cream cheese mixture. (You may need more than 3 bananas if they are small.).
  • Pour blueberry pie filling over bananas and spread evenly.
  • Chill until ready to serve.

Some folks use Craisins in place of raisins as done in the Banbury Tart recipe. It is also great as a filling for cinnamon rolls. I have included three filling combinations - and I will vouch for the Orange-Craisin combination. Hope these are useful.

1 cup raisins (aka Craisins) or 1 cup dried cranberries (aka Craisins)
1 cup sugar
1 egg, beaten
1 tablespoon butter, melted
3 tablespoons fine cracker crumbs or 3 tablespoons breadcrumbs
1 lemon, juice and zest of, grated
1 pie crust (for a single-crust pie)

Steps:

  • Preheat the oven to 350°F.
  • Combine raisins through lemon juice and rind.
  • Roll out the pastry dough to about 1/8-inch thickness.
  • Cut into 3-inch squares.
  • Place a scant tablespoon of raisin mixture in the centre of each square. Fold the square in half, forming a triangle. Seal the edges by brushing wi th water.
  • Cut a small X in the top with a sharp knife. Bake for 20 minutes or until browned.
  • Notes: Puff pastry can be used instead of pie crust. If so bake at 400 F for 15 minutes.

1 cup fresh cranberries, quartered
8 tablespoons sugar, divided
1-3/4 cups all-purpose flour
2-1/2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, room temperature
3/4 cup whole milk
1/3 cup vegetable oil
1 teaspoon grated lemon zest, optional
Cinnamon sugar

Steps:

  • Sprinkle cranberries with 2 tablespoons sugar; set aside. Sift remaining sugar, flour, baking powder and salt into large bowl. , In another bowl, beat egg, milk and oil. Make a hole in center of dry ingredients; pour in liquid ingredients. Stir just until moistened. Add berries and, if desired, lemon zest. Fill 12 greased standard or 6 greased jumbo muffin cups. Sprinkle with cinnamon sugar., Bake at 400° for 18 minutes for standard-size muffins or for 22 minutes for jumbo muffins.
