FRUIT CARAMEL
One way to extend the life of fresh fruits is to incorporate them into caramel sauces. Any caramel sauce base can be enlivened by ripe or slightly overripe fruit, such as bananas, strawberries and stone fruit. This fruit caramel sauce is an excellent way to add a deeper sweetness and a hint of the season to your favorite desserts.

Steps:
- Heat a large skillet over medium heat. Add the sugar and cook, stirring frequently, until it all melts into a light gold syrup, 5 to 6 minutes. Continue to cook to a golden brown color, about 1 minute more. Carefully add the fruit all at once and reduce the heat to medium-low. The hot syrup may bubble and become foamy.
- Continue to cook, stirring constantly until any hard clumps of caramel dissolve and the fruit pieces soften and break down, about 4 minutes. Stir in the salt and heavy cream until there are no white streaks then remove from heat. Transfer to a bowl and use immediately, or cool and refrigerate in an airtight container for up to 1 week.
- Serve warm as a topping for ice cream, pies or tarts, or use as a caramel filling for layered cake or trifles. If cold, reheat gently in a small saucepan over low heat.
BANANAS WITH MANGO & PASSION FRUIT CARAMEL

- In a small pan, bring the orange juice and 140g/5oz of the sugar slowly to the boil. Cut the passion fruit in half and scoop the pulp into the pan. Stir in the mango slices and when the mixture has reached boiling point again, remove the pan from the heat.
- Peel the bananas and slice each one diagonally into five. Pour the lime juice over the banana slices and set aside. Sprinkle the remaining sugar evenly over the base of a large heavy-based frying pan. Place the pan over a medium heat until the sugar has dissolved and turned into a golden caramel. Toss the bananas into the pan and leave for 3-4 minutes, turning once.
- Turn the heat down and stir in the passion fruit and mango mixture. Heat for a further 2 minutes then spoon into bowls. Serve warm with a sprinkling of lime zest. Can be made up to a day ahead and chilled, then gently reheated before serving.

Fresh passion fruit is best for this punch; however, if that's hard to find, frozen purée or bottled nectar may be used instead. Mango purée also may be substituted for fresh mangoes. - Peel ripe mangoes and remove flesh from flat, oval seeds with a sharp knife.
- Cut flesh into cubes and transfer to a blender.
- Add passion-fruit purée or nectar, bananas and rum to blender and blend to a chunky purée, about 30 seconds.
- Pour into four 12-oz. glasses.
- Garnish each with an orange slice or lime slice or kiwifruit or sugar cane, if you like.
