- Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
- In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
- Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
- Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.

Steps:
- Preheat oven to 350 degrees.
- Grease 12 muffin tins.
- Mix the mashed banana, sugar, egg and margarine.
- In a separate bowl, mix baking soda, baking powder, salt and flour. (I sift these together to make for a fluffier muffin, but it is not necessary).
- Mix wet and dry ingredients all together until just mixed. Being careful not to over-stir!
- Fold in walnuts or chocolate chips, if desired.
- Pour or scoop batter into greased muffin tins.
- Bake in 350 degrees oven for approximately 20 minutes.
- Let cool slightly in tins, then remove carefully to a rack to cool completely.

- Pre-heat oven to 350 and prepare muffin tin.
- Stir together bread flour, salt and baking soda. Set aside.
- Cream together butter, splenda and sugar.
- Add egg whites one at a time until thoroughly combined.
- Add banana's and mix until combined.
- Dumb flour mixture into banana's and stir slowly until just moistened.
- Divide into prepared muffin tins and bake for 25 minutes until toothpick comes out clean.
- Set pan on wire rack for 5 minutes to cool before moving muffins directly to rack to cool completely.

- Heat the oven to 190C/170C Fan/gas 5. Line a 12-hole muffin tin with paper cases. Sift together the flour, baking powder, bicarbonate of soda and caster sugar with a big pinch of salt. In a separate bowl mix the melted butter, vanilla extract, eggs, mashed bananas and buttermilk.
- Make a well in the centre of the dry ingredients and pour the wet ingredients in. Roughly mix together with a fork, being careful not to over-mix.
