Banana Waffles (Easy Recipe) image

With their crispy edges and fluffy middle, these banana waffles are sure to coax the family out of bed. They smell amazing and are naturally, deliciously sweet.

1 1/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 pinch ground nutmeg
1 cup 1% milk
1 egg
2 ripe bananas, mashed

Steps:

  • Preheat the waffle iron.
  • In a large mixing bowl, sift together the flour, baking powder, salt, and nutmeg. Add the milk, eggs, and mashed bananas and whisk until well-combined.
  • Grease the preheated waffle iron with non-stick spray. Pour 4 tablespoons of waffle batter onto the waffle iron. Cook until golden brown, about 3-4 minutes. Place on a wire rack to cool. Repeat until all waffle batter is used up. Serve with your favorite waffle toppings and enjoy!

I love this waffles recipe! They are everything a waffle should be... light, fluffy and a little crisp on the outside. These are a great way to utilize overripe bananas. They are delicious and can be whipped up in no time. These are great with just syrup, but we added sweetened whipped cream, fresh bananas, and walnuts. So good!

2 large bananas (mashed)
2 large eggs
1/2 c milk
1/2 c sour cream
3 Tbsp coconut oil
1 1/2 c flour
3 tsp baking powder
2 tsp sugar
1/2 tsp salt
3/4 c walnuts ( crushed)

Steps:

  • 1. Mix the banana, eggs, milk, sour cream and coconut oil in a large bowl.
  • 2. Stir in flour, baking powder, sugar, and salt. Mix until well blended.
  • 3. Stir in walnuts.
  • 4. Heat waffle iron, spray, and pour in batter to fill. Close and bake until waffles are crisp, tender, and brown. Serve.

  • Heat waffle iron; grease with vegetable oil or shortening.
  • Stir ingredients until blended. Pour onto center of hot waffle iron. Close lid of waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle.

2 cups all-purpose flour
1/2 cup packed light-brown sugar
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 large eggs, separated
2 cups nonfat buttermilk
8 tablespoons (1 stick) unsalted butter, melted
1 teaspoon pure vanilla extract
3 very ripe bananas (about 1 1/4 pounds)
1 tablespoon freshly squeezed lemon juice
2/3 cup coarsely chopped walnuts

Steps:

  • Heat waffle iron. In a large bowl, sift together flour, brown sugar, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  • In a medium bowl, whisk together egg yolks, buttermilk, butter, and vanilla. Pour into dry ingredients; stir until just combined.
  • In an empty bowl, coarsely mash bananas and lemon juice; stir into batter along with the walnuts. In a medium bowl, beat egg whites with a hand-mixer until stiff but not dry. Fold into the batter.
  • Ladle about 1/3 cup batter onto each section of the waffle grid; spread batter almost to the edges. Close lid; bake until no steam emerges from waffle iron, 5 to 6 minutes.
  • Transfer cooked waffles to a baking sheet; place in an oven set to low heat, about 200 degrees, while using remaining batter. Serve.
