Get out the chocolate syrup and SURE.JELL Fruit Pectin and get ready to knock their socks off with this 30-minute strawberry-banana split freezer jam.

Yield Makes about 6 (1-cup) containers or 96 servings, 1 Tbsp. each.

Steps:
- Rinse clean plastic containers and lids with boiling water. Dry thoroughly.
- Combine exactly 2 cups crushed strawberries and 1/2 cup mashed bananas in large bowl. Stir in sugar and lemon juice; let stand 10 min., stirring occasionally. Add chocolate syrup; mix well.
- Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
- Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

Sounds weird ........ but the kids will love it and its SO EASY!! The number of jars made will vary according to their size.

BANANA JAM
Your overripe bananas don't need to go to waste anymore. Everyone will go "bananas" for this sweet, delectable jam/sauce on everything from waffles to ice cream, crepes to cake filling. I've never done the full canning routine with this, since it's sealed in the jars while hot, but I suppose you could. Recipe from the Joy of Desserts website, adapted slightly for personal taste.

Steps:
- Thaw bananas if frozen. (I often store up my overripe bananas in a freezer bag in the freezer until I have enough to make something.).
- Peel bananas, and mash smooth.
- Mix water, lime juice, sugars, cinnamon, vanilla, ginger over medium heat and stir until thickened.
- Add mashed bananas and let cook 20 to 25 minutes, stirring occasionally.
- Add rum during the last few minutes of cooking.
- Place hot banana jam into sterilized jars. Place lids on and seal.

- Combine sugar and freezer jam pectin in small bowl, stirring to blend evenly.

BANANA SPLIT FREEZER DESSERT
This is so yummy.... a great dessert to make in the summer, but it is great in any season. I have made this for company as an after dinner dessert.

Steps:
- Prepare an 11" x 15" pan or a 13" x 9" pan.
- Reserve 1 cup cracker crumbs.
- Cover the bottom of the pan with the remaining 1-1/2 cups graham cracker crumbs Slice the bananas crosswise, and layer evenly over the crumbs in the pan.
- Slice the ice cream into 1/2-inch thick slices, and place over the bananas.
- Sprinkle with nuts; freeze until very firm.
- In a small saucepan, melt the chocolate chips and the 1/2 cup butter.
- Add in the powdered sugar and evaporated milk; cook this mixture, until combined and just heated (do not boil).
- Cool slightly; pour over the ice cream/bananas in the pan.
- Return to freezer, and freeze until very firm.
- Remove from the freezer, spread with thawed Cool Whip topping.
- Sprinkle with more cracker crumbs over top.
- Store in the freezer.

NO-COOK STRAWBERRY BANANA-SPLIT JAM

Steps:
- Mix fruit and sugar until well blended. Let stand 10 minutes.
- Bring water and pectin to boil in saucepan; boil 1 minute, stirring constantly. Add to fruit mixture; stir 3 minutes.
- Pour into clean jars or plastic containers. Cover with tight fitting lids. Let stand at room temperature until set. (This could take up to 24 hours). Store in freezer, or if jam will be used in 3 weeks, store in refrigerator.
- TIPS: Add 1/3 cup chocolate liqueur to jam mixture before pouring into jars.
- SERVING SUGGESTIONS: Warm jam, then use as a toppng for hot waffles, ice cream sundaes, or banana splits.
- For a quick and easy milk shake, add a spoonful jam to vanilla ice cream in a blender container. Add milk, then blend until thickened and smooth.
