Spicy Banana Bars image

1/4 cup margarine
3/4 cup sugar
1 egg
1 banana, mashed
1/4 cup milk
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon allspice
1/3 cup chopped walnuts (optional)
2 tablespoons margarine or 2 tablespoons butter
1 cup icing sugar
2 teaspoons lemon juice
2 -4 teaspoons water

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 13"X9" pan.
  • Cream together margarine and sugar.
  • Beat in the egg.
  • Stir in banana.
  • Stir in the milk.
  • Combine flour, baking powder, salt, baking soda, cinnamon, allspice, and nuts (if using).
  • Stir into creamed mixture.
  • Spread in the pan.
  • Bake 20-25 minutes at 350F.
  • until golden brown.
  • Frosting: Melt margarine.
  • Stir in icing sugar and lemon juice.
  • Stir in water, 1 tsp.
  • at a time, to get a good spreading consistency.
  • Spread over warm bars.
  • Cool completely.
  • Cut into bars.

1 cup granulated sugar
1 cup mashed very ripe bananas (2 medium)
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 package (3 ounces) cream cheese, softened
1/3 cup butter or margarine, softened
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350°F. Grease bottom and sides of rectangular pan, 13x9x2 inches, with shortening. In large bowl, mix granulated sugar, bananas, oil and eggs with spoon. Stir in flour, baking powder, baking soda, cinnamon and salt. Spread in pan.
  • Bake bars 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • Meanwhile, in medium bowl, mix cream cheese, butter and vanilla with electric mixer on medium speed until blended. Gradually beat in powdered sugar with spoon, scraping bowl occasionally, until smooth and spreadable.
  • Spread cooled bars with Cream Cheese Frosting. For bars, cut into 6 row by 4 rows. Store covered in refrigerator.

2 cups sugar
3 large eggs, room temperature
1-1/2 cups mashed ripe bananas (about 3 medium)

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended., Transfer to a greased 15x10x1-in. baking pan. 1 cup mashed ripe banana (about 3 medium bananas)
1/3 cup coconut sugar
3 tablespoons unsalted butter (melted and cooled to room temperature)
2 tablespoons unsweetened almond milk (or milk of choice)
1 large egg
1 teaspoon pure vanilla extract
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/3 cup plus 2 tablespoons dark or semi-sweet chocolate chips (divided)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper so that the parchment overhangs two opposite sides like handles. Lightly coat with nonstick spray and set aside.
  • Mash the bananas in a mixing bowl. Double check the measurement to ensure you have 1 cup (less will make the bars dry; more and they may not bake all the way through). Stir in the coconut sugar, butter, milk, egg, and vanilla until well blended.
  • In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, and salt. Add the dry ingredients to the bowl with the wet ingredients. With a wooden spoon or spatula, stir to combine, stopping as soon as the flour disappears. Fold in 1/3 cup chocolate chips.
  • Scrape the batter into the prepared baking pan and smooth the top. Sprinkle the remaining 2 tablespoons chocolate chips on top. EASY MOIST BANANA BARS



Easy Moist Banana Bars image

I found another version of this recipe online and changed it to match the ingredients I had on hand and what sounded good to me. This made a moist, tasty cookie bar that's a nice alternative to chocolate brownies. It is also another good use of those badly overripe bananas. I liked this because it had a mild banana flavor which didn't overwhelm the bars. These bars need no frosting...they are the perfect sweetness without it.

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Butter and flour a 13-inch x 9-inch baking pan.

  • In the bowl of a stand mixer fitted with the beater blade attachment or in a large bowl using an electric mixer, beat together the butter and sugar on medium speed until pale and fluffy, about 1 - 2 minutes. Turn the mixer to low and gradually add the powdered sugar. Once all the powdered sugar has been added, increase the speed to medium and beat for another 30 seconds. Add the vanilla and pinch salt; beat for another minute or so until smooth. Add a little milk (a couple of teaspoons at a time) if the frosting seems too stiff to spread.
  • Spread frosting onto completely cooled cake. Cut into 12 pieces and serve. Cover and store leftover cake in the refrigerator; it keeps well (and keeps getting better) for 3 - 4 days.
