BANANA NUTELLA CREPES

- In a non-reactive bowl, whisk together the eggs and milk. In a separate bowl mix the flour and salt. In a small sauce pot or saute pan over low heat melt the butter and cook it until it is light brown.
- Add the egg and milk mix to the flour and salt and mix well so that there are no large clumps. Add the browned butter and mix to incorporate, being careful not to overwork batter. The batter should just coat the back of a spoon. If seems too thick, thin it out with a little more milk or water. Let the batter rest for 1 hour prior to cooking crepes.

Steps:
- Warm butter and sugar in a saute pan over medium heat until butter melts, 1 to 2 minutes. Add bananas, cinnamon, salt, nutmeg, and vanilla, and cook, stirring, for 1 to 2 minutes. Remove pan from heat. Add rum. Return to heat. If using a gas stove, tip pan away from you carefully until the vapors from the rum ignite. (Or light with a long match.) Cook until flames stop, about 1 minute. Divide bananas among crepes; reserve sauce in pan.
- Fold each crepe in half, then fold in half again. Drizzle crepes with reserved sauce, and top with creme fraiche or ice cream. Serve immediately.
NUTELLA BANANA CREPES
I had this just about everyday at a crepe stand (like a hot dog stand Frenchified) off the metro in Paris. I made up the recipe for purposes of posting, but could not get enough of these while I was there! I hope these end up being close to what I had there. Feel free to mess with the amounts to your liking. You can purchase the ready-made crepes at the store or find a good recipe here on zaar and use that. Whatever you feel comfortable with. Steps:
- Warm crepe in microwave.
- Spread Nutella over entire crepe. (use more or less to your taste).
- Slice banana onto crepe down the center making a row.
- Roll crepe up burrito-style and enjoy. (Alternatively, you could do as they did there and spread the nutella while the crepe is cooking, then place the bananas on 1/4 of it, then fold in 1/2 and 1/2 again).
- Repeat as necessary.

- In a large bowl, whisk the eggs, egg whites, water, milk and oil. Combine the flour, sugar and salt; add to egg mixture and mix well. Refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 1/4 cup batter into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., In a large skillet, melt butter over medium-low heat. Stir in brown sugar until blended. Add bananas; cook for 2-3 minutes or until bananas are glazed and slightly softened, stirring gently. Remove from the heat., Spread Nutella over each crepe; top with bananas. Roll up and serve.

- In large bowl, whisk together eggs, milk, melted butter, flour, sugar, and salt until smooth.
- Heat a medium-sized skillet or crepe pan over medium heat. Grease pan with a small amount of butter or oil applied with a brush or paper towel. (I sprayed with a little bit of cooking spray). Using a serving spoon or small ladle, spoon about 3 tablespoons crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. (I used half of a scoop of a ice cream scoop). Cook over medium heat, 1 to 2 minutes on a side, or until golden brown. Serve immediately.
- Thinly slice 4 slices of banana and 1 strawberry per crepe. Assemble with the slices of banana then strawberry. Spoon the nutella into a small zip top bag, cut a small hole in the corner and pipe the nutella on top of the fruit.
- Fold the sides of the crepe together and top with whipped topping.

- In a blender, combine the flour, milk, water, eggs, butter, vanilla and salt and pulse for 20 seconds. Place the crepe batter in fridge for 1 hour, which allows the bubbles to settle down. (If you don't have an extra hour, it's not a huge deal. I made these without waiting)
- Heat an eight inch non-stick pan over medium heat. Add butter to coat pan. Pour about 1/4 cup crepe mixture into center of pan and tilt/swirl the pan so the batter spreads evenly. Cook for about 1 minute, until the bottom is light brown. Use a spatula and flip and cook for another 30 seconds. Place on plate and repeat process until all batter is cooked.
- Once crepes are done, spread a thin layer of hazelnut spread (about 1 tbsp) across middle of crepe and add 4-5 sliced bananas. Roll crepe and place seam-side down. Repeat with remaining crepes. Top with some banana slices and granola.

- Place flour, sugar, salt, milk, mashed banana, eggs, melted butter, and vanilla in blender and process until smooth. If possible, let mixture rest for at least 30 minutes. Alternatively, you can make the batter the day before and keep it in fridge overnight.
- Place a 7- or 8-inch nonstick skillet (or crepe pan) over medium heat. Coat with a little bit of butter. Pour about ¼ cup batter in pan and gently tilt and swirl pan until batter evenly coats the bottom. If you're using a 7-inch pan, you may want to use slightly less than ¼ cup batter.
- Let cook for about 1-1 ½ minutes until crepe is turning golden on bottom and edges are pulling away from pan. You can either use your fingers or a spatula to pull edges up and when ready, flip. Cook for another minute before removing crepe from pan to a plate.
