These delicious muffins make a great grab-and-go breakfast or snack. You can jazz them up by adding chocolate chips, nuts, chia seeds, etc!

1 ½ cups rolled oats
2 ripe bananas, mashed
½ cup creamy natural peanut butter
2 eggs
¼ cup flax seed meal
¼ cup almond flour
¼ cup plain non-fat Greek-style yogurt
¼ cup agave nectar
2 tablespoons vanilla extract
1 tablespoon powdered stevia baking blend
1 tablespoon ground cinnamon
1 teaspoon maple-flavored extract
1 teaspoon baking powder
½ teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 15 muffin cups or line with aluminum foil liners.
  • Mix oats, bananas, peanut butter, eggs, flax meal, almond flour, yogurt, agave nectar, vanilla extract, stevia, cinnamon, maple-flavored extract, baking powder, and baking soda in a stand mixer or food processor until batter is smooth. Fill each muffin cup 3/4-full with batter.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 25 minutes. Cool muffins in the muffin cups for 5 minutes before transferring to a wire rack to cool completely.

I just made these thought I would try something and it turned out good. Even my husband who doesn't have special dietary needs said they tasted good. Even if sugar isn't not a worry for you just swap out the Spenda for regular sugar. I was impressed with the almond flour, I added extra baking soda because all of the reading on almond flour said it does not raise well and my muffins did well.

8 ounces bananas
1 egg
3/4 cup Splenda granular
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 cup all-purpose flour
1 cup almond flour

Steps:

  • Mash banana add egg, Splenda, unsweetened applesauce, vanilla, cinnamon, baking soda, baking powder, mix well.
  • Add in almond flour 1/2 a cup at a time mix well then add the all purpose flour.
  • Take muffin pan put in liners or spray with non stick spray spoon in 1/4 cup mixture into each muffin slot. Bake at 350°F for 25 to 30 minutes. Enjoy.

3 large eggs
3/4 cup butter, melted
4 tablespoons mayonnaise
2 teaspoons vanilla
1/2 cup davinci sugar-free banana syrup
1/2 cup water
1 cup flax seed meal
3/4 cup Atkins baking mix
1 1/2 teaspoons baking powder
1 cup walnuts (optional)

Steps:

  • Preheat oven to 350.
  • Prep the muffin pan by inserting foil cupcakes cups or spray with cooking spray.
  • DO NOT use paper cupcake liners, or they will become part of the muffin- inseparable!
  • Beat eggs and add the melted butter slowly while continuing to beat the eggs.
  • Then add in the Davinci syrup and water and mix.
  • In a separate bowl, combine Atkins Bake Mix, flax meal, baking powder, salt and mix to evenly distribute baking powder.
  • Stir in the wet ingredients and mix well, Divide the batter into 12 muffin cups, and bake for 30 minutes.
  • Done when toothpick comes out clean.
  • OR you could use a loaf pan.
  • They should be stored in the fridge, and they also freeze well.
  • You can also use any other flavors.
  • I've made cranberry and green apple.
