Steps:
- In a mixing bowl, use a fork to smash the bananas.
- Add in pancake mix, cinnamon and milk. Whisk together until combined.
- Fry in oil. About 1 tablespoon per fritter.
- Cook for about 2-3 minutes until they are golden brown and cooked through the middle.
- Sprinkle powdered sugar.

Steps:
- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

BANANA FRITTERS WITH CHOCOLATE SAUCE
Steps:
- In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
- In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
- In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
- Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
- Drizzle with chocolate sauce. Garnish with mint leaves.
- In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.
EASY BANANA FRITTERS
I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

I found this recipe in my Mother's Recipe Box. It looks as though it was clipped from a magazine. The description to the recipe states as follows: " The Koran says that the fatal fruit in the Garden of Eden was a banana, not an apple. If Eve offered Adam banana fritters drenched in brandy sauce it's no wonder he succumbed to temptation." Enjoy ; )

Steps:
- Sift together the flour, baking powder, salt and sugar.
- Combine the egg, milk and melted shortening; add the liquids to the dry ingredients and mix until smooth.
- This will make a very stiff batter, but it will remain refreshingly crisp for some time after it's been cooked.
- Cut each of the bananas into 3 chunks, dust with flour and coat with the fritter batter.
- Fry in hot deep oil (375 F) until golden brown, turning often.
- Drain on paper towels.
- To Make Brandy Sauce:.
- Measure the sugar, cornstarch and salt into a saucepan.
- Gradually add the boiling water, stirring constantly.
- Simmer over low heat for about 5 minutes, or until clear and thickened.
- Remove from the heat and stir in butter, brandy and nutmeg.
- Serve warm over banana fritters.

TWO THUMBS UP BANANA FRITTERS WITH CARAMEL SAUCE
After subjecting my partner to several different recipes in search for the perfect one i finally came across this one. The preparation was easy, the batter light, the whole thing was perfect. I used Rice Bran oil for the frying as this is choleserol free and has a high heat point, with no smoking and no smell. I wanted to share this recipe here as i have used many recipes from this site and wanted to put this one back and hopefully will be the first of many.

Steps:
- Whisk water, egg and oil in a large bowl until well combined. Gradually whisk in yeast, flour and then milk until smooth. Cover and stand at room temperature for 1 1/2 hours or until mixture has doubled in size.
- Caramel Sauce;.
- Combine all ingredients in a medium saucepan. Stir over a low heat until butter melts. Bring to a boil, simmer uncovered for or 5 mins or until thickened. Set aside to cool slightly.
- Heat enough oil until hot in a deep fryer or large saucepan. Toss banana halves in batter to coat, add to hot oil in batches and cook, turning occasionally until golden brown.
- Remove from oil, toss in cinnamon sugar and repeat steps with remaining bananas.
- Serve with ice cream and drizzled with caramel sauce.
- Enjoy.

- Preheat oil in deep fryer to 375°. In a medium bowl, sift together flour, sugar and salt. In a separate bowl, combine the egg, milk, butter and baking powder stir into the dry ingredients. Dip banana halves into the batter and drop into the hot deep fat fry until golden brown. Serve with vanilla ice cream and Cinnamon Sauce (below).Heat water and cinnamon in a medium saucepan. In a separate bowl, mix the egg yolks with sugar and cornstarch. Add about one-third of the hot mixture to the egg yolk mixture slowly, then pour back into the saucepan, stirring to blend. Return sauce to a boil. Remove from heat and cool the sauce for 2 minutes. Slowly whisk or beat in the butter.Store cinnamon sauce in refrigerator.

- Peel the bananas and place in a large bowl. Mash with a wooden spoon or potato masher to form a paste (it will have lumps in it and that's okay).
- Add the rest of the ingredients into the bowl except the oil for frying. Mix until just combine to form a batter. The batter will be light and drippy.
- Place oil in a pan up to 3 inches then heat up on high heat to 365 degrees Fahrenheit. Reduce the heat to medium (this is important because very hot oil will result in the fritters burning on the outside without cooking through. Place tablespoonfuls of the batter into the pan (if you have a small cookie scoop, use it to drop the batter into the oil). Do not overcrowd the pan. Let the fritters cook until golden. Flip to the other side and let them cook until golden too. Remove and place on paper towel to absorb excess oil. Repeat process with the rest of the batter.
