BANANA CHILLI CHICKEN
This recipe was created by my son. It's spicy, sweet and delicious! Please note that this fed the three of us, but I put '2' incase you're hearty eaters! It would be very simple to double up to feed more!

Steps:
- Chop chicken breasts into small cubes and brown in deep pan with olive oil, butter and chilli flakes.
- Slice the red pepper into thin strips. Thinly slice the chilli pepper and chop up the banana. Add them all to the pan.
- Pour in the salsa and the stock then finally simmer with a lid on for 15-60min.

Steps:
- In a mortar, pound the garlic and coriander to a paste.
- Combine with chicken mince, crabmeat and white pepper in a mixing bowl.
- Cut tops off the banana chillies and remove the seeds and ribs.
- Stuff the chillies with the chicken and crab mix.
- Skim thick cream from the top of the can of coconut milk and combine with vegetable oil in a wok. Heat until sizzling.
- Add curry paste and stir for 5 minutes.
- Add remaining coconut milk, fish sauce and palm sugar.
- Place the stuffed chillies in the simmering sauce and cook until the chillies are tender, about 15-20 minutes.
- Remove chillies from the sauce and place on a serving platter.
- Stir the basil into the sauce.
- Remove from heat and pour sauce over chillies.

- Wash chicken breasts and dip them in oil.
- Mash bananas.
- Arrange chicken on a baking sheet and cover each piece with banana.
- You can garnish this with almost any spice imaginable--popular ethnic ones are paprika, coriander, poppyseeds, or cinnamon.
- Bake at 350 degrees for 30 minutes or until chicken reaches internal temperature of 165 degrees.
