This favorite recipe has been passed down through my husband's family. His grandmother wrote this out for me shortly after we were married. She copied it from a recipe that her mother had written out for her many years before. 1-1/2 cups sugar
1/2 cup shortening
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
3 mashed bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
FROSTING:
1/2 cup butter, softened
2-1/2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Dash of salt

Steps:

  • Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

This moist banana cake takes dessert to a new level. Plus, the cream cheese frosting is the best. You will enjoy this tasty cake for dessert.

3 Large Ripe Bananas (Mashed)
3 cups Flour
1 1/2 tsp Baking Soda
1/2 tsp Ground Cinnamon
1/2 tsp Salt
3/4 cup Butter (softened at room temperature)
1 cup Granulated Sugar
1/2 cup Brown Sugar
3 large Eggs
1 tsp Vanilla Extract
1 1/2 cups Milk
1 1/2 Tbsp Lemon Juice
Ingredients for Cream Cheese Icing:
1 8 oz Package of Cream Cheese, softened at room temperature
1/4 cup Butter (softened at room temperature)
3-4 cups Powdered Sugar (shifted)
1 tsp Vanilla Extract

Steps:

  • Preheat the oven to 350 degrees F and spray a 9X13 baking pan with non stick cooking spray or grease and flour the pan.
  • Mix the milik and lemon juice together and set aside.
  • With a hand held mixer or stand up mixer combine the butter and both of the sugars until well combined. Add in the eggs one at a time. Then add in the vanilla extract. Mix on high spreed until the mixture is light and fluffy.
  • Then mix in the flour, baking soda and salt in a medium size bowl. Gradually add the flour mixture and milk mixture to the butter mix. Alternate adding each one in until both are fully added.
  • Gently stir in the mashed bananas.
  • Pour the mixture into the 9X13 pan.
  • Baked for 40-45 minutes until a toothpick inserted into the center comes out clean. Watch closely as baking times vary.
  • Remove the oven and place the cake on a wire rack to cool completely.
  • While the cake is cooling, create the frosting. Beat together the cream cheese and butter until smooth. Gradually add in the powdered sugar 1 cup at a time and mix in between each cup until the frosting is the thickness that you desire. Stir in the vanilla extract.
  • Spread the cream cheese frosting over the cake, refrigerate for at least 30 minutes and then slice, serve and enjoy!

CAKE:
2/3 c shortening
1 1/2 c sugar
2 large eggs, separated
2 c mashed ripe bananas (about 4 medium bananas), use a little less banana for a lighter cake
1 c milk
3 c all purpose flour
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1/2 tsp salt
CREAM CHEESE FROSTING:
1 pkg (8 ounces) cream cheese, softened
1/4 c butter, softened
4 c powdered sugar, sifted
1 1/2 tsp vanilla extract
1 pinch salt

Steps:

  • 1. CAKE: Preheat oven to 350 degrees. Grease a 9 by 13 inch baking pan. In a large mixing bowl cream shortening and sugar until light and fluffy. Stir in egg yolks, one at a time. Beat together well. Add bananas and milk and stir just to combine. Set aside, briefly. In a separate bowl stir together the flour, baking powder, baking soda, and salt. Add this to the creamed mixture and beat for about 2 minutes. now set this aside.
  • 2. In a clean mixer bowl beat egg whites until soft peaks form. Gently fold egg whites into cake batter by hand. Pour into prepared pan and bake for 30-35 minutes or until cake passes the toothpick test.Remove from oven and cool completely.
  • 3. FROSTING: In mixer bowl beat the cream cheese and butter together until well blended and fluffy. Gradually beat in powdered sugar, vanilla, and salt. Beat until smooth. Spread on cooled cake. Store any leftovers in refrigerator.

2 eggs
1 teaspoon baking soda
4 tablespoons buttermilk
½ cup butter
1 ½ cups white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
3 ripe bananas, mashed
1 cup chopped pecans
3 tablespoons butter, softened
2 cups confectioners' sugar
3 tablespoons heavy whipping cream
¼ cup pecan halves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1/2 cup sour cream
1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.
